The Pot of Ice-cream!

This frozen dessert is my first ice cream creation captured on video. I like the concept of having ice cream in a pot! It's composed of a layer of crunchy pineapple meringue, a coconut sorbet, a pineapple sorbet, a coconut/vanilla frozen parfait, slow cooked caramelized pineapple, and a caramel syrup on top! All of the other elements are crafted out of dark chocolate!

For anyone wondering what that device he's using at 1:34, I believe it's a refractometer. I'm guessing for checking the concentration of sugar dissolved in the liquid. Can a pastry chef shed some light on what he's actually looking for though?

Pastry chef here! It's a brixometer and it measures the sugar content of sorbets. If the sugar is too high, the sorbet won't freeze properly. I use one at my restaurant for the same reason.

I think the quick edits probably cater to TikTok users? Not sure. I love watching his videos, but personally find the transitions jarring. Would love to see longer form content that speaks more to the actual creation process.

Sometimes he puts how long it took to create something (usually the chocolate sculptures) and it's always days, and I would imagine he works several hours a day and sometimes he has help, there is a lot of work behind those pieces!

It looks real! If someone saw that master piece sitting on the counter, they would think it was an actual pot of ice cream. If anything … the trickiest part would be guessing there’s ice cream on the inside, since it has the glazed mangoes on top!

It's to check the sugar content. If there's too much sugar, the sorbet won't freeze right and it'll never harden.
