I KNOW......not only is this man a top notch pastry chef, he's a master of mechanical engineering. He has to think up every single part as an engineer would have to do when drawing up blueprints, and then also BUILDING the items. EXQUISITE WORK. You Sir, are a Master of your Craft. I watch in awe. My father and grandfather were draftsman, who designed machines for the auto industries and more. I remember sitting at their drafting boards, trying to draw and do what they did. Mechanical Engineering ran through our family genetically, and many of us could simply "see" in our heads, solutions to problems. Mainly, if something needed to be fixed, or if something new had to be created. We can just "see" the whole design, then work backwards deconstructing what we saw. It's like FUN to us, because it comes naturally. So, yes, I am just in awe of what you're doing. Thank you for sharing it with us.

Right? I’ve always been amazed by realistic looking cakes, but the cake artists never focus on taste, and they usually just carve everything out of chocolate or fondant. His are incredibly complex, each piece carefully crafted out of something different, with rich and complimentary flavours, uniquely and precisely thought out. His cakes aren’t just good looking cakes that are dry and made out of mouldable chocolate or fondant. They are both culinary and visual works of art. It’s incredible. He always goes the extra mile and then some.
