Goko Knife Manufacturing, which has been designated as a traditional craft by Chiba Prefecture, continues to inherit ancient techniques and strive to cultivate craftsmen. Each piece is made by hand and takes three months to complete.
Knives and other cutlery are made from steel. There are different types of steel such as white paper, yellow paper, blue paper, and silver paper.
The ``Shimosa Kunikozuki Gyuto'' uses solid wood, ``Shirogami,'' which is the same material used in high-quality knives.
Shirogami is said to be difficult to handle because it does not contain any alloying elements, and it is said that the skill and skill of the blacksmith determines the quality of the finished product.
At Goko Knives Manufacturing Co., Ltd., he worked as a master for Mr. Eishi Sekimori, one of the most skilled blacksmiths during the prosperous period, and was in charge of production and provided technical guidance to Mr. Eishi Sekimori.

Goko Hamono is one of my fav Kanto Style Maker, the mono steel White 1 is one of my fav and their Grind is just really good. I really like their Kogetsu line.

I have two knives from you. A 180mm gyuto and a 240mm sujihiki. My two favorite knives. Love being able to see the process!

Blödsinn. Erstens benutzt er modernen Stahl, den er nicht selbst schmiedet, sondern aus fertig gelieferten Platten ausschneidet, zweitens lauter Maschinen, die es zu Samurai-Zeiten noch nicht gab.

白紙ではなかったと思いますが、ここの包丁はよく切れるので気に入って使っています。 ただ濡れたままにしておくと誇張抜きにあっという間に錆び始めるので気を使います。

壁に掛かった型紙にマチェットみたいなのもあったがいろいろ特注も作ってくれるのだろうか?

Sure, they're good knives, but almost nothing traditional about them. He uses industrially-made steel that gets delivered to him in prefabricated sheets and cuts the blades from them. He does not forge the steel himself. He welds a bolster to the blade with a blow torch and uses all sorts of modern machinery, and the handle is a Western style. The result still looks pretty.

일본은 우리나라처럼 무쇠를 달구고 펴서 만드는게 아니고 주로 철판을 칼 모양으로 잘라 칼을 만드는건가요?
