Today we are making the greatest Italian stuffed pasta: Tortellini, also called Venus Navel. This is the traditional Tortellini Bolognesi, from the authentic recipe filed at the Chamber of Commerce of Bologna. Traditionally, tortellini are served with a rich meat broth, but I love the cream version, so that’s what you’ll get today.
Tortellini making is a process, but it’s worth it and it’s a great way to relax and focus on simple things of our life. Let’s make them together:
Makes roughly 500 tortellini.
For the fresh Pasta dough:
500 g 00 Flour
5 Eggs
Water (if needed)
For the Filling:
150 g Pork Loin
150 g Parma Ham
150 g Mortadella Bologna
225 g Parmigiano Reggiano
1 Egg
1 Pinch of Nutmeg

Nice filling and dough. Sometimes, I use 1/3 semolina fin, 1/3 Durham flour and 1/3 HG flour Your dough is the same firm texture of my bagel gough.👍👍😘🥳

I've recreated multiple recipes from your channel.... but I don't think I've ever been more inspired to attempt to recreate one to such detail! I'm not sure when I'll have time... but I am going to try and find it sooner than later!!!! I've said it before and I'll say it again! The thing on your thumbnail is not a tortellino. A tortellino is folded first on the x-axis then on the z-axis. Yours is folded on x and y axis. The point of the tortellino must be on the same plane as the loop, and not parallel to the loop axis.
