@@bringyourempties Haha awesome, Flora just released a barrel aged sour with apricot, going to pick up a bottle or two today. Im a few days into a Saison brewing, i might toss the dreggs in there it has lacto and brett. Do you think it would sour? Planning on aging it for 4-5 months after pitching the dregs.

I would say it depends on the state of the actual dregs. As the beer been bottled it canned? I know of homebrewers using the dregs from 3F and Cantillon per say. I guess if you give it enough time, keep an eye on how the pelicile evolve over your beer (white silky mushroomish stuff) will grow over your beer. After that some bottle conditioning would help too. You can easily count 5-6 months of development depending on your tastings and see how well the beer is evolving.

It's worth experimenting with definitely pay a close attention to the pH levels and you should be fine!

Hello! The video helped me a lot to understand the symbiotic relationship of bacteria and yeast in kombucha. Do you mind sharing any reads to understand better the way to control the fermentation? I liked the idea of mixed fermentation where you dont kill the bacteria but supress it...

Heyy there! Thanks for the great video! You talked there that hops are used to kill/ Suppress bacterias and would love to understand a bit more about it, quantities, when to put it etc. I can't really find info about it. Any link, idea where I could find some more information about it? All the best!

I'll try to find a proper article for you, usually any amounts of hops in beer will drastically suppress the acidification of the lactobacillus.
