What is Spontaneous Fermentation? It is what happens when a brewer, winemaker, or distiller leaves the inoculation (the moment when yeast and bacteria come in contact with the liquid) up to whatever organisms happen to be in the air or on the fruit that they are fermenting.
It is an age-old practice, first by accident and then by intention, that truly puts Mother Nature at the helm of brewing magic.
➡️ It is no surprise that I was extremely interested in learning more about spontaneous fermentation of Iambic beers. I sought out a Iambic brewer and gueuzesteker (blender) who could teach me more about the sour styles from the Valley of the Senne and the Pajottenland in Belgium. This is, in fact, the birthplace of Lambic beers.
I was fortunate enough to spend the day with Armand De Belder of the 3 Fonteinen brewery, located in Beersel, Belgium. Over the years, Armand’s beers have been highly rated all around the world thanks to his attention to detail, use of natural ingredients, and passion for the craft.
Just to give some context to his team’s work ethic, Brouwerij 3 Fonteinen was named the best brewery in Belgium in 2015 by Ratebeer and the Third Best Brewery in the World.
➡️ When I first met Armand, I could sense the passion for Lambic that is in his blood. He drove me around the city of Beersel and showed me over 20 different gueuzesteker residences from the past. As we drove, he explained how the craft and the blenders of Lambic slowly vanished over time.
We had lunch at the original 3 Fonteinen property that his father purchased in 1961, which is now the Restaurant 3 Fonteinen run by his brother, Guido. We discussed his familial relationships and his obsession with preserving a tradition shrouded in mystery.
➡️ What I sensed during our meeting that day was a man who worked extremely hard and gave everything he had to keep the tradition of making and blending Lambic from dying.
He put his passion before himself, sacrificing his personal life to build 3 Fonteinen to the renowned brewery it is today.
I could relate his journey to my military service; I understand the dedication required to make sacrifices for something you believe in. Selfless service to a higher calling can often lead to regret on some level, but as I saw first-hand the spoils of his dedication, it was apparent what his dreams and aspirations were.

Yes, exactly! I love spontaneous fermentations and try to use that in all my collaboration distillations instead of commercial yeast.

Couldn’t agree more. 3F is absolutely amazing. When I first started beer, wine, and spirits i originally started blogging. 3F was one of the first breweries to say “Yes” for me to come tell their story. It eventually lead me back to film an episode with them. I’m grateful to Armand and the staff for believing in what I’m doing. Cheers, -Jeff

Quality pictures of Phase Contrast Micrographs and Scanning Electron Micrographs used, reminds me of my university classes. I love the contents. You could have caption individual micrographs to help viewers of non-biology educational background to understand better the food microbiology of Beer. 👍

I'm a home brewer. Watching the last episode, I commented to my wife, "I don't see how they avoid infection of the brew." I'm still wondering. Sanitization is such an absolute necessity while brewing, as many of us know from bad bathes where an errant microbe has found its way into our batch.

Timothy Phillips thanks so much for the comment. If you think about lambic it has bacteria that would spoil most beers. I will tell you that each barrel is different and barrels will be dumped because of contamination such as acetobacter takes over and the barrel literally tastes like vinegar. I will say everything is sanitized, on the hot side and cold.

Matthew Alexander Sayers it’s crazy to think that lambic was on the verge of extinction. Really put that in perspective. If it wasn’t for guys like Armand and 3 fonteinen holding on to traditions during its low point in 80-90s I don’t know if what we would have today. So glad they persevered. American Lager or not, every beer is unique. Since when did hating a company or corporation turn into automatically hating their product? If you genuinely dislike light lagers thats totally cool, but to say someone who drinks every style of beer including light lagers has no respect or appreciation for "good beer" is pretty narrow minded and clearly a thought based on emotion instead of experience.
