Comment below your go-to Chinese food order.
RECIPE
Ingredients:
1 lb boneless skinless chicken breasts, sliced
1 egg white
1 tbsp white wine
1 tbsp cornstarch
¼ tsp salt
Stir-fry sauce:
¼ cup low-sodium soy sauce
2 tbsp cornstarch
2 tbsp water
1 tbsp brown sugar
1 tbsp rice vinegar
For the rest:
3 cups broccoli florets
3 tbsp water
2 tsp ginger root, grated
3 garlic cloves, minced
Oil for pan
Steps:
1. In a bowl, combine egg white, wine, cornstarch, and salt. Add the sliced chicken and coat well. Cover and place in the fridge for at least 1 hour or preferably overnight.
2. Fill a medium pot with water and heat to a boil. Add marinated chicken and gently separate the slices to avoid clumping. After about 30 seconds, remove the chicken with a strainer and set aside.
3. In a small bowl, mix sauce ingredients together and set aside.
4. In a pan on medium-high heat, add oil, broccoli, and water. Stir and then cover for 2 minutes. Uncover and allow the water to evaporate. Drizzle a little more oil, then stir in garlic and ginger. After 2 minutes add the slightly poached chicken and allow to slightly brown. Add sauce, stir, and cook until thickened and is evenly distributed.

Amazing! I will never make stir fry any other way! I followed recipe to the T, aside from adding onion and carrot when sautéing the broccoli. I also used ginger powder vs fresh since that’s what I had. Fantastic! Velveting the chicken is worth the extra step!

The velveting is the way to go. You really do get glossy juicy strips of chicken. As opposed to only stir frying and getting chewy crispier strips.

I know this is a comment from a year ago, but I'll add, it is ok to cook with wine or rice wine if you're dry... The alcohol all cooks out.

What is the rice wine for ? Does the acid do anything..or is it JUST flavor??

I think it helps neutralize the cornstarch. So it's not a chalky taste after the marinade

After an hour of marinading, the cornstarch settles to the bottom of the bowl instead of coating the meat. Do i need to stir it back in to cover the meat before the pass through?

Yes toss it around. But I marinade 10 minutes and it still comes out the same as waiting and hour

Just tried the recipe just now. Here are some things I would do next time: - cut the chicken extremely thin - dont add the rice vinegar as it creates a weird sour sauce that doesnt fit the dish - add a little bit of oyster sauce Overall, this recipe was okay but I definitely wont follow it directly as it doesnt taste that great

Not all of Chinese restaurants are using the MSG and sometimes they're hesitated to say it publicly. So, if you hate the MSG, Why you buy Doritos, Cheetos, and some foods/condiments like mayonnaise, spaghetti sauce, etc that contain MSG? That's really double standard for it...........

there are no real risks to consuming MSG. it's nothing more than salt and umami flavors packed into a single seasoning. MSG itself would not tenderize the meat like what this ENTIRE video is trying to display

@@ryanphan9819 Yes, The MSG is just enhancing the foods or the dishes become more delicious or good flavour, not tenderizing the meat. The Umami flavour that found in the MSG is similar that you found in tomatoes, mushrooms, even Parmegiano regiano cheese, soy sauce, etc. I found the Italians add the Parmegiano regiano cheese in their dishes because of "umaminess" of this cheese. So, if you're disagree with my opinion, Italian-American chef Lidia Bastianich is giving you the recipes provided adding this cheese over her KZfaq channel. I put it down below..... kzfaq.info.
