How to Make Mozzarella I Good Times With Jen

Fresh mozzarella is the perfect gateway cheese into the world of cheese making.
INGREDIENTS:
1 gallon whole milk, not ultra high pasteurized (UHT)
1/2 cup cold water, divided
1 1/2 teaspoon citric acid
1 teaspoon vegetable rennet
2 teaspoons kosher salt
STEPS:
1.) In a medium bowl, combine 1/4 cup cold water and citric acid. In a small bowl, combine 1/4 cup water and rennet.
2.) In a large, non-reactive pot, combine the citric acid mixture and milk, then stir well. Place it on the stove on medium-low heat, and let the mixture warm up to 90 degrees, while gently stirring.
3.) Remove from heat, and slowly stir in the rennet mixture for a few seconds. Cover with a lid, walk away from the pot, and wait for 10 minutes.
4.) Check to see if the curd resembles a soft custard or silken tofu. If not, allow the mixture to sit covered for a few more minutes. Use a long knife or long offset spatula to cut through the curd to create large chunks.
5.) Heat the pot again on medium, while gently stirring, until the temperature reaches 105 degrees Use a mesh strainer to remove the curds from the whey, and place in a microwave safe bowl.
6.) Microwave for 1 minute, knead the curd 2 times, and drain excess whey. Microwave for 35 seconds and repeat the process 2 more times, or until the curds reach 135 degrees. Be sure to get rid of any whey each time.
7.) Sprinkle with salt, stretch, fold, and knead the cheese several times, until it appears more smooth and glossy. Fold into a ball.
8.) Serve immediately, or cover and store in the fridge in some salted whey liquid.

I would say a ricotta is the gateway cheese, just lemon juice or vinegar and milk heated and curds drained off. This is an awesome second step.

Girl is gorgeous, she’s so graceful with her cooking skills, and It’s so easy to follow her! Great video. I never thought I would be able to make mozzarella at home. I always just figured Italians made it with magic spells and hid their recipes in a secret vault.

I've seen raw milk at Natural Grocers and Sprouts. I bet Whole Foods carries​ it too. I've also seen little mozzarella making kits at Sprouts. I guess the kit comes with the two ingredients you used. Love your videos! You're so much fun!

Right. I forgot about that. Also, I don't know if its safe for pregnant women to consume raw milk products. I was thinking of making this for my supper club but one of my friends is pregnant. Not sure if she could eat it.

You need calcium chloride to set a better curds to begin with. The acidity of the curds was not enough to have a good stretch, you can clearly see the curds while you stretch it. Acidity of the curds should be between a ph of 5.1 and 5.3. You can still see some curds in your final product and it doesn't look stretchy at all.

I wondered about this. I made fresh mozz today and my curds looked identical to Jen's, grainy and loose. It came together OK while using the heated leftover whey to heat the curd, and then stretched OK actually. But my curd did not set all smooth and firm like others I've seen. I was able to pull a full pound from 1 gallon of milk and it set up nice and smooth, no grainy texture in the final product. I was worried when I saw the grainy mess in the pot after letting the rennet do its thing. I though maybe I had used too much rennet? But the CaCl2 is where it's at, eh?

Do this over and over, turning the curd mass occasionally until it begins to stretch.Takes about 5 minutes. Stretch the curd mass, folding it over itself, and dipping back into the hot whey as needed. This is also when you would add the salt. Keep stretching and folding, dipping as necessary, until the curd mass becomes smooth and glossy. You can then begin to form the smooth ball like Jen did, folding it into itself and tucking it in like you would for a pizza dough ball. Then dunk it into the ice bath the same way.
