French Breakfast Puff Recipe:
* 1 1/2 c flour
* 1 1/2 tsp baking powder
* 1/2 tsp salt
* 1/4 tsp nutmeg
* 1/2 c sugar
* 1/3 c shortening
* 1 egg
* 1/2 c milk
Topping:
* 1/2 c sugar
* 1 tsp cinnamon
* 6 tbsp butter, melted
*Instructions:*
1) Preheat oven to 350°F/176°C
2) Lightly grease muffin cups
3) Sift together flour, baking powder, salt, and nutmeg. set aside.
4) Cream together sugar, shortening, and egg.
5) To the cream mixture add flour and milk, alternating until well combined.
6) Fill muffin cups to 2/3 full.
7) Bake for 20 to 25 mins or until golden. Let cool enough to handle.
8) While muffins or puffs are baking. Combine sugar and cinnamon.
9) Remove muffins from muffin cups and dip in melted butter, then the cinnamon sugar.
10) Serve Warm!!
Sweet Muffin Recipe:
*1 cup all-purpose flour
* 1/2 cup sugar
* 1/4 teaspoon salt
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 cup milk
* 1 egg
* 1/4 cup vegetable oil
* 1 teaspoon vanilla extract
*Instructions:*
1. Preheat oven to 375°F/190°C and grease muffin tin
2. To make the muffins, whisk together the flour, sugar, salt, baking powder, and baking soda in a large bowl.
3. Whisk the milk, egg, oil, and vanilla extract together in a separate bowl.
4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
5. Fill the prepared muffin tin to the top.
6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
7. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
