It begins with a crystalized ginger flavored butter and ends up loaded with fruits: golden raisins soaked in flambéed rum, candied orange peel, lemon, red cherry berry and tutti frutti dices.. OMG!

Agreed but so glad we get to enjoy his cooking on KZfaq where he has the freedom to do his own thing. If he was on telly, most likely he would be on one of the many scripted food network shows. Cringeworthy and designed with conflict and drama. I honestly don’t feel that chef Albouze needs those gimmicks to be entertaining. Plus, I think his own brand of humour might be lost on tv executives. But then again. What do I know? I love watching some (SOME) of those shows too. 😂

In Australia, fruit cake is a Christmas tradition. It always makes me think of the holidays, the beaches, heat and cicadas. So nostalgic! Gotta say, I am very impressed with that loaf tin. I’m thinking perhaps you have a spare room in your house needed to store all your kitchen kit goodies?

Genius, Artist, Chef Superior, Bruno makes creations not just meals or recipes. I've watched dozens of people (Ramsey, Puck, Lagasse, Trotter, Bourdain and others) who call themselves a Chef on KZfaq but none of them compares to "THE REAL DEAL" they may have the names but I dont see the level of precision in them versus Chef Albouze. Period. Well done again, Chef!

Omgosh, I cannot wait to make this. I can't WAIT! I have a two pound Pullman I'm going to use, and it will be perfect! I have wanted a recipe like this for so long.. My parents will love this too. That is the most beautiful fruitcake I have ever seen. I'm going to try this recipe but will use regular-sized loaf pans. Sadly, I have no 20-inch molds. :-(

You're right, but I know in Victorian England fruitcakes were used for weddings. :)

@@teresabrockett7525 Yes, but not this type. Spiced plum cake covered in royal icing. Slices of Queen Victoria's wedding cake still occasionally turn up at auction in presentation boxes! So placing it under your pillow would not have stained your linen 😋

this gave me an idea. basically i could mix butter with whatever i want, right? so, if i use sugar and fruit. it would give me a mix of jam and butter? 2 in 1 butter spread, it might save some calories.

Oh ! Un cake anglais! Delicious with a cup of tea of course. Thanks for reminding us to mix the candied fruits in the flour so that they don’t drop on the bottom of the cake. T is also valid for blueberries cupcakes etc. Considering the size of your fruit cake I would think you could make a huge round of elderly ladies happy for tea time!
