Nice dish, made it and the puree is amazing, but I left out the Rosemary garnish. Why put something on the plate that's not for eating? Doesn't make sense to me😊

Croissant chocolatine العجينة:250غ فرينة T45 و 250 غ فرينة T55 و 50 غ كاكاو و 12 غ خميرة خبزو12 غ ملح و 60 غ سكر و 15 غ عسل و 80 غ زبدة و 425 غ (حليب +حبوب كاكاو نميسيهم و نصفيهم) و نعجنها جيدا حتى تولى لا تلتصق 10 دقائق و تغلفها و نخليها تخمر ساعتان.و نطرح زبدة التوريق على شكل مربع 15 سم .الحشو:😢سكر نكرملوه à secو نضيف البندق المحمص و نقلب حتى يتغلف و نحطو يبرد قليلا و نرحيه حتى يولى عجينة البرالني و نضيفلو 70 غ شوكولا سوداء ذائبة و نخلط و نفرغ في مول صغير مستطيل مغلف بوق فيلم و نحطو يبرد و نقطعو على 12 مستطيل ودير tour double و tour simple ونطرح 33 سم × 50 سم و نقطعها على 2 ثم الى14 قطعة نقلب و نخطط بالشفرة خطوط جانبية و نقلب و نضع عود شوكولا و نلف و نحط عود آخر و نلف و ندهن بالبيض و عليها تخمر و نطيبها

نخلط 14 غ خميرة خبز + 250 غ ماء(25⁰C)و من جهة اخرى نخلط الفرينة 500 غ + السكر 50 غ + 12 غ ملح و نضيف عليهم السوائل و نخلط ثم نضيف 100 غ زبدة طرية نعجن 5 دقائق و نخلفها 2ساعتين في (25⁰C)و نضعها على طاولة العمل و نطبقها على 3 ثم على 3 ( مستطيل)و نغلفها و نحطها في الثلاجة و نضع 250 غ زبدة توريق في كيس و نطرحها كي تأخذ الشكل المربع و نضعها في الثلاجة 45 دقيقة.نطرح العجينة على شكل مستطيل و نضع الزبدة و نغلق و نطرح و ندير un double toure و نطرح 24بوصة طول و 8 بوصة عرض و نزيد un simple toure و نغطيها و نحطها في الثلاجة 1ساعة .و نميكسي البيض الدهن و نطرح نصف القطعة على شكل مستطيل18بوعة على 9 بوصة و نقطعو على 6مثلثات و نكسلها قليلا ثم نلفها و ندهن للمرة الأولى و بعد 3 ساعات ندهن مرة اخرى و نطيب على 10دقيقة على …400f ثم12دقيقة الى 15 دقيقة على …375f

Is it important to let the cake cool before adding syrup? Also some other recipes wrap the cake in plastic wrap and store for a day before cutting into it. Is this recommended? Anyways, fantastic recipe!

I've made this for guests several times, and it never fails to impress and satisfy. Surprisingly easy and extremely tasty. I serve them in smaller segments, as in the second plating shown here, and never omit the caviar 😃 The velouté works beautifully. Obviously, what actually goes into the dish purée is up to you. The last time, I used flounder along with about 8 large raw shrimp. The combination was excellent.

Ah lala! Ce cake a l'air excellent (comme tout ce que vous faites, chef, merci encore pour vos recettes et astuces) J'adore le citron et les graines de pavot! J'aime en particulier la tarte au citron meringuée, mais là ça m'inspire un twist, en enrichissant la pâte à tarte avec les graines de pavot, vous en pensez quoi, chef?
