On that note, I think Kotal's ending is also top shelf as he is offered the ability to manipulate time and have paradise, but he and his people cannot fathom messing with time. Every action, every event, every pain, every embarrassment, every joy, all of it very specifically crafts a person into a specific way and by altering or removing even one of those things, the person isn't the same, much less on a global or universal scale. So, he chooses to keep the past safe and prevent anyone in the future from going after the hourglass.

Funny that one of the villains that loses in the story all the time gets an ending that fits his character and a character that wasn’t even fully utilized in MK11’s story or MKX’s story gets a more interesting ending.

Dairou I feel you wouldn't have to change much just give him roughly the same backstory and just make him more relevance to the plot maybe he helps the characters a bit and maybe he started to change a bit and not care about money as much as he usually does and actually want to makes the Orderrealm a much better place to live in like he wanted for Outworld in his armageddon ending. Maybe also built a bit more backstory with Hotaru and how strong there relationship was before he was imprisoned.

Jax doesn’t want his daughter to be a soldier yes, but it would also be out of character for him to use destiny itself to strip her of her free will, forcefully making her not serve. That makes him super controlling, and it doesn’t fix anything.

Some of them do kinda set up certain stories and plot points that might be used in later games MK9's ending for Johnny Cage for example, but for the most part endings are completely pointless for the newer games.
