I’m a bartender and when I started up at Asian restaurant and needed ginger for a cocktail I was doing the spoon trick and my head chef was like what the helll hahaha😂

Henry is the man and has an awesome story too. Opened up a pop up Chinese restaurant during Covid with no restaurant experience and now has one of the top Chinese spots in Chicago. Awesome content and hope we see more of you two together! Also, that fried rice looks insane.

Henry hasn't warched tv much, that ginger scraping technique has been around for awhile. To his defense, asian chefs will peel ginger by cutting it with a asian cleaver.

Your fried rice ingredients should be cut close in size to the rice, not in chunks intended for a stir fry.
