How you chop/dice an onion affects the fibers which affects moisture, and how crispy/soft you want your onions. Doing it roughly is going to give you an inconsistent texture. But its all preference

No wrong way yes, but there is a better way. Consistent cuts mean consistent cooling times which means less bitterness. “Big cut” means uneven sized pieces which matters at a higher level.
