Ingredients:
3 medium - large eggplants
3 potatoes
1 large onion
2 garlic cloves
700g (24.7 oz) minced beef
3 tablespoons olive oil
2 tablespoons tomato paste
260g (9.2 oz) tomato sauce
1 cup (240ml) beef broth or 1/2 cup (120ml) red wine
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cinnamon
1 teaspoon thyme
1L (4.2 cups) milk
120g (4.23 oz) butter (1 stick + 1 tsp)
120g (4.23 oz) flour (1 cup - 2 tsp)
85g (3 oz) parmesan cheese
1/2 teaspoon nutmeg
2 egg yolks
Vegetable oil for frying
Directions:
1. Prepare the vegetables: slice the eggplants into 1cm thick. Season with salt and set aside for 30 minutes. Meanwhile peel the potatoes and slice them.
2. Wash the eggplants well and pat them dry. Fry the eggplants and potatoes until golden. Transfer to a paper towel to get rid of access oil. For a lighter version place the eggplants and potatoes in a baking pan, drizzle with olive oil and bake and golden.
3. Prepare the meat mixture: heat olive oil in a large pan over medium heat. Add chopped onions and sauté for 3-4 minutes. Add crushed garlic and sauté for 2-3 minutes more.
4. Add the meat and cook, stirring, until the beef is no longer pink. And salt, pepper, cinnamon and thyme, stir well. Add tomato paste and stir. Add bay leaf, tomato sauce and stir well. Add beef broth, stir and bring to a boil. Reduce the heat to low and simmer until thickens. Remove from heat and set aside.
5. Prepare the béchamel sauce: heat 1 litter of milk. In a medium saucepan over low heat melt butter, when the butter is melted, add flour and whisk continuously, until smooth paste forms. Gradually add the warm milk while continually whisking to prevent lumps. Whisk until the sauce is smooth and thick. Remove from heat and add pinch salt, black pepper, nutmeg, parmesan and egg yolks, whisk until smooth.
6. Preheat oven to 180C (360F).
7. Assemble the moussaka: add 4-5 tablespoons of the béchamel sauce to the meat mixture and mix. Layer the potatoes in a 13"X8.5" (33X22cm) ovenproof dish, then layer half of the eggplants. Pour the meat mixture and spread evenly. Layer the remaining eggplants and pour the béchamel sauce. Grate some parmesan on top.
8. Bake for 40-50 minutes or until golden brown. Remove from oven and let cool for at least 45 minutes before cutting.

As a Greek who cooks nearly all the time, that's exactly how the recipe is made. Hint : fry a bit more potatoes and Eggplants cause I guarantee you that you will eat some of them while you wait for the rest of the ingredients to get cooked 😉

sometimes i make it like a day before and let sit in the fridge to really set all the flavors in and then bake it. i swear that's legitimate soo much better!! it works really with anything with this kind of concept like lasagna etc, but especially with things like stews. but only when cooked tho otherwise you got no flavor cause everything is raw.. but if its cooked and you set it for like minimal of 12 hours or even maybe a couple, the flavors increases soo incredibly much.

There is no accurate recipe for moussaka. You can add zucchini if you want. You can make a simple yoghurt and egg mixture instead of bechamel sauce, if you think it is too heavy. You can also choose not to fry potatoes first, but only cook them a little bit with the meat. It depends on your taste, there are no sacred scrolls for a moussaka recipe. Quit exaggerating.

This is pretty much correct but here are some tricks: In Greece we usually put the sliced aubergines in water with salt for 30 min before frying them, otherwise they get bitter, also in some places we add a layer of courgettes, but they must tasteful, we cut potatoes slightly thicker and do not fry all vegetables completely because they will also get baked in the oven with the whole thing, we use fresh tomato in the mince meat and half a tea spoon of sugar to remove the bitterness of fresh tomato, plus some pelte, we also add a little bit more of olive oil and water so the sauce is not so dry, we don't add thyme and nutmeg in the mince meat, but 2-3 cloves which we remove when the sauce is ready, cinnamon is not preferred by many (I personally like it) but you must not add too much because it gets bitter. We often add some red wine in the sauce when it's almost ready, and instead of parmesana we add graviera or kefalograviera (saulty greek cheeses). Kali orexi!

I made this last night. It was amazing but, Holy Moly, it took forever to prepare. Don't attempt this on a work night unless you get out of work early like I did. I started with the potatoes and eggplant at 2:00p and by the time I got all of the steps done and ready to assemble, it was 5:00p. Then you need to add the cooking time and the resting time. It's worth the effort but I don't thing I'll make this often because of the complexity. And don't forget all of the cleanup while it's cooking. That's another huge chore in itself.
@LGAussie
@LGAussie 3 жыл бұрын
I just bake the slices of eggplant and potatoes in beef broth the night before. U can also use ground turkey if u eat less beef. Just add extra thyme or oregano for extra flavor cause beef gives more flavor. Or u can mix beef and turkey. Or add a beef bouillon to the ground turkey mixture.

Hi 👋 I really wanted to say Thank You for sharing this recipe (and such a good simple clear video!) Due to lockdown, it’s been ages since my mom and I had Moussaka (our local Greek place closed down) and today we made this dish together and I turned and delicious (and so beautiful!!). We even took pictures 😅 She said I should send them to you but I explained to her that you can’t do that on YT, so we’re sending this thank you message instead and all our love for Chile. 🥰
