I’m loving these cooking in the kitchen videos. Would it be possible to get closeups of the final dish, in this case the jar of cheese in oil. It’s beautiful at a distance but it would be glorious to see up close.

I agree. More close ups of the pot while cooking and the preparations, and final product would be good. It would be nice to see the food. I really enjoy watching the process of Shaye's cooking. Though not much of a cook myself, I find it fascinating and also learn something.

You are a Master Educator! Your conversational style of teaching, choice of words, and attention to detail are so appreciated! I have been making mozzarella for quite some time now but it definitely needs improvement. I have watched many a "how to make mozzarella" videos and your take was so helpful. Never before have I seen the stretching explained so thoroughly. Thank you!

I love seeing how different people make cheese! I make Mozzarella regularly using only raw milk and white distilled vinegar rather than rennet and citric acid. I'll have to try packing it in oil with herbs like this! What a lovely idea! Thank you Shaye! ❤

I have seen that as well, that you can get the same results with vinegar. I had researched substitutions for rennet and saw what rennet actually comes from. 😮

Interesting! I've always wondered if there were alternative ways... I just don't like the idea of having to order rennet and other ingredients

@wideawake333 yea I'm not a fan of the source which is another reason why I was determined to find a different way. There is such thing as microbial rennet (grown from mushrooms I think...) but I'm very unfamiliar with it. Vinegar works for me!

This is by far the most accessible tutorial I've seen. I often make ricotta at home but I think mozzarella is my next endeavour. I love your excitement and joy when you cook it's inspiring! I usually use the left over weigh for making risotto when I make cheese. Thanks for a great video ❤

That looks so good , makes me want to try it! Maybe next time my daughter gives me an extra gallon of milk. She makes the real hard cheese I have one sealed and aging in my fridge from her right now.. She has 6 kids but doesn’t homeschool.

I would love if anyone could clarify what kind of milk you need to use for making cheese. Shaye, you say raw milk but it doesn’t have to be raw. So then what kind should I use? Can you use store bought, unpasteurized milk? I’m hesitant to try to find a stranger to buy pure raw milk

Raw Milk or Pasteurized Whole Milk. If you use "ultra-pasteurized" milk or "homogenized", the cheese won’t turn out correctly, it will wind up kind of like cottage cheese.

@amandagaudet1186 non-homogenized is what you need, which can be either unpasteurized or pasteurized. The reason is because homogenized milk doesn’t split as easily into curds and whey.

I'm not sure if its safe to handle hot food with those gloves, IA M NOT criticizing YOU AT ALL. I LOVE YOU! but if those gloves arent food grade it can cause contamination to the food. If they are ,my mistake. just looking out.
