The diversity of "weeds" we are provided is fascinating. As a boy growing up on a large dairy we got rid of all those weeds. As an adult I learned they often have value in the form of herbal concoctions. The native American cultures knew this. Many of our forefathers knew this. In part it was learned from the native Americans. In part they brought some with them from their countries...the seeds sown into the lining of clothing, etc. We must relearn those lessons if we want to do well.

I planted elderberry three years ago and each year the deer came and ate all the leaves off 😮😮😮 so this year we have them covered in a net tent ⛺️ and they are beautiful 🤩

I discovered in February that those annoying bushes that won't go away by my barn are American Elderberry! I changed my tune quickly and am ready to harvest flowers soon and berries soon after that. Thanks for sharing Kaylee!

We learned how to recognize these beautiful flowers last year at our 1st foraging event and learned about oxamels at the same event. So now I stop at my neighbors houses that have where I see them growing and ask permission to forage their Elderberries. 😊. This years I've managed to get 4 quarts of the Elderberry oxamel started and I have a quart of wild strawberry and Elderberry mix.😂 I also have managed to freeze dry a tray of them. There are so many all around and I never knew them until last year. What a blessing 😊. I love what you're doing here! This honey is definitely next on my list.

The wild lettuce you were referring to is call "Puha" and the prickly variety is called tiotio, we eat it with boiled pork bones.

This is such an abundant time of year. So many flowers and aliums and if you have the right recipes it's a great time for garlic mustard and you never have to worry about picking too much of that

Elder berry is also loved by birds that eat the ripe berries. Every morning the bees are on the flowers, and the birds fly in for breakfast.

Cool, one of my goals is to propagate Elder berry trees around my place. I didn't know about that wild lettuce, think we might have some of that here

I have also seen where the flowers can be used as a hydrosol solutions for skin issues…love your place and what you do…reminds me of growing up in Bavaria with my grandmother …precious memories

Anyways, I wanted to say thank you for sharing your journey with us. It's motivational, educational and beautifully produced. Interesting about the amount of pollen elderberries produce; I had no idea! Earlier this spring I attempted to root a handful of wild cuttings but it was so dry this spring that many didn't take.

Elderberry flower seem more blousey here in the UK (more like a baby cauliflowers ! Big deep tufts of flowers.) They make great Elderberry Champagne (Soft Drink) Concentrate... You add to water. (Flowers, Sugar, Lemon Rind, Water, simmered down to a thick Syrup. Strained then Bottled. Also have you tried Elderberry Flower Ice-cream ??? Take the Thickest Cream you can get. Warm if very slowly in a Pan (until blood temperature) aka you can dunk finger tip into it without going ouch (!) Don't scald or burn cream... It taints !?! Take off Stove, stir in lots and lots Elderberry Flowers (which have been lightly shaken over a Tea Towel)... To remove little bugs, crawlies etc... (There will be loads on these flowers when picked as they attract insects !) 😏 Don't wash flowers... They will brown ! Cover Pan and let the content steep... To get the essence from the flowers into the Cream. (Refrigerate for several hours, or overnight.) Take some more thick cream and whip it so it become 'really fluffy'. And carefully add some Honey, stirring it in slowly in a circular wave motion. (Or Icing Sugar (Powdered Sugar) as an alternative.) Keep the Volume ! Take a Food Blender, that can take and Crush Ice. # Make a whole lot of Crushed Ice. (You may need to remove some to make room for the next stage.) Take infused Elderberry Cream, and strain this into a jug. You want the cream but not the flowers (discard these.) Put your Blender on... With some Crushed Ice in it. Pour the Infused Cream into the top, through the aperture lid. Blend until all thick and Creamy. Pour into a Deep Ice Cream Container, and then stir in the Whipped/Honeyed Cream. You are kind of making a Marble effect of Iced Crush, and Whipped Cream together. Freeze overnight... And enjoy ! It's so refreshing. 😉 # If you have a Vitamix, then you can add Ice Cubes, the Infused Cream and blitz as is... You get instant Ice-cream. Add this to a glass bowl, stir in the Whipped Cream carefully... And serve up right away... And enjoy. (My Grandmother also poured the Infused Cream onto a baking Sheet, froze this. Then turned it out into a good grade plastic bag... And bashed it with a rolling pin. To get it all crushed up. Added this to the Whipped Cream in her Cake Mixer Bowl (with Creaming Paddle attachment.) A bit more work, but she didn't have a fancy blender... Ice-cream made the old way... Stir, freeze, stir, freeze... Eat. 🤗 Happy Eating. Happy Beekeeping 2021. 🐝🐝🐝🐝🐝🐝🐝🐝🐝🐝 Elderberries (the tiny fruit) really stain... When you pick, prep and cook them ! Have lemons to hand (literally) to use juice to bleach your stained fingers, Safely and naturally (!) 🍋 Old Wives trick... 👍

FYI to all: Wineberry is massively invasive and displaces native raspberries, strawberries and many other native shrubs that would otherwise feed insects, birds and mammals.

Maybe try propagating your wild elderberry by layering! Create many clone plants out of one! Easy to do and much quicker than waiting on nature.

That looks so good! We planted three elderberries this year. I saw a video of someone {can't remember who} that battered the flowers with tempura batter and fried them. Have you ever tried that? Sounds delicious!

Yes I've had those - they're pretty good drizzled with a bit of honey and some ice cream. Elderflower is very popular in the UK, particularly turned into cordial. If you pick the flower heads you must use them very quickly i.e. within an hour or so as they start smelling really bad, like cat pee!

1. We are so fortunate to have black raspberries, blackberries, and wine berries growing wild on our property and my husband knows when the berries come out he better leave me to pick because free delicious food! 2. We had your honey for the first time last year and it was so incredible we sent a bottle to my parents. When I tasted it I found it had a very distinct flavor, and when my mom tasted hers I asked what she thought, and we agreed it tasted like elderflower liqueur! My husband and I have been stalking your channel and page for honey updates because we can't wait to try this years' batch! Ps- Watching your videos on beekeeping is getting me interested/pumped to try it out for myself. Thank you for inspiring me!

If you live anywhere but Eastern Asia, wineberry is crazy invasive. I highly recommend you eradicate it as soon as possible. It will crowd out your native fruit plants

Do you have some video's of your apothecary that you go through herbs for your family( kids) and what to have always on hand? Did you start with mostly tinctures and then started mixing them up later for more potent medication? My herbalism journey just started and I need to start building up, so something for cold and flu, tummy upset, fever, first aid, virus infection etc. Any guidance will be much appreciated! As a first year beekeeper, is it possible to have only one colony/hive or will I need to do splits? Haven't been able to find the answer. Thank you for your time & for the great content on your channel! Love the information!

@QueenOfOz85 You can keep one colony or you can do splits from it. Find a local bee club & use them as a resource. Every beekeeper you meet will be glad to tell you everything he/she knows about bees.

Be sure to correctly identify your elderberries. My husband gets so excited for every fan of white flowers and I have to say, nope, that's hemlock.
