Simple Fermented Glutinous Rice Made with Rice Cooker
Fermented Rice is one of my favorite foods, but so far, I’ve never tried making my own. Out of curiosity, I finally decided to try one of its simplest recipes, that is by cooking it using a RICE COOKER.
The Fermented Glutinous Rice I made is also only stored in a jar, no need to bother wrapping it in banana leaves one by one. But in order to keep its taste well, I covered it with water-apple leaves. Well, the result is surprisingly good with a nice texture and a right taste as well as sticky free texture. Its taste is probably the best part of it, sweet and addictive.
Ingredients
* 1 kg of Glutinous Rice;
* 3 pieces of ready-to-use Yeast;
* 3 tbsp Sugar, optional;
// Note: In fact, without using granulated sugar, the fermented rice can be sweet in taste by itself for the addition of yeast. Yeast plays a role in breaking down rice starch into glucose, resulting in a sweet tape even without sugar. However, if you want a faster and more effective fermentation process, please add about 2 to 3 tablespoons of sugar per 1 recipe.
* Enough Food flavoring or coloring,
^^ best to pick the Pandan coloring and flavoring but sure it’s up to your taste. You may also replace it with fresh Pandan Wangi juice or Pandan Suji juice, suit your taste.
