This is NOT an approved method.....well the onion soup broth isn't. And, you could argue the baby carrots as well. So, do your own research if you decide to give this exact recipe a try. Otherwise, just slice and dice your carrots and can it in water. You will be good to go!

When my children were growing up, we were struggling to live for awhile. My husband worked two jobs and I worked part time. I would go shopping at the local Kroger in the evening. Most days I would go in the morning when they opened and the elderly would be there waiting also. The doors would open and they would run to get the marked down food and bread and fresh veggies. I would let them get there first and usually I would miss out. Kroger would mark down veggies and fruit in bags when one went bad. One night I went there just before close and saw the young lady marking the produce down. She said it was her job to do this every night. After that I would shop in the evenings so I could take advantage of the discounts. I would take surplus home and can it up. You do what you need to make it in this world.

hello there. Im from michigan also. i was in a vehical accident 5 yrs ago causing an early retirement from EMS by 2 yrs. So i needed to figure out how to live a frugal life on a tight income. i came across your site and i have learned so much from you and verrrry thankful for that. I was laughed at by a couple of my family members because of my pantry that ive been working on for the last two and a half yrs. since the lockdown, they're not laughing any more, and yes i helped my family i would never turn my back on them. they have asked how i learned about what i have been doing, told them about your site, and some others that have taught me. i made my last trip to country view store in the thumb 2 wks before the lockdown, love that store! well, just wanted to say thank you!

I have to share something with you! I watched Stivers Homestead You Tube recently and was amazed at a cost savings they shared. They don’t eat beef. They had raised turkeys, but this could be done by purchasing turkeys from a farm or when on sale at a grocery. They butchered, cut all the meat off the bone and ground it, cooked it and canned it. I had never thought of doing this, but what a cost savings, and super quick meal prep item. Can make turkey tacos, chili with turkey, anything you would make with beef. I have two turkeys in the freezer and really anxious to find the time to do this. Happy canning!

Hi. I am a new canner but I just canned chicken (raw chunk and alreay cooked from my broken freezer), italian sausage links (cut in 1 in), cooked ground turkey and even some chopped up turkey lunch meat. We only eat chicken and turkey so it is super exciting to have all this on hand. And as you said cheaper too.

I make fake sausage using ground turkey. The recipe uses spices found in sausage but tastes just like spicy Sausage. I can't eat pork so for my family we can have sausage in recipes.

I don’t see the issue with the soup. You could easily say you can in water and add a ton of seasoning.

🤷 I don't get it either. I just did this and made my own mix: dried onion, no sodium beef boullion, onion powder, pepper and paprika. I've seen USDA recipes with those spices, except the onion, but those will rehydrate quickly.

I asked “living on a dime” if she changed her mind with what is going on now, she said no. She thinks canning is not worth the cost, which I don’t understand. I think you are right on, I have so much GOOD FOOD on my shelf. Including this! Thank you so much.

One day living on a dime will wish she had of canned food food shortages are coming we have already seen some empty shelves and it’s only going to get worse so learn everything you to prepare for what is coming I have never used a pressure canner much because I was scared of it but I’m going to learn everything I can and so keep doing what you can I am thankful for all the videos that people are doing I’ve learned a lot god bless you all prayers god strengthens you all and gives us all the wisdom to make it through what is coming!

I don't have the room to do much gardening at all, just a couple tomatoes and peppers but I still can and dehydrate all the time. I watch for sales, go to farmers markets and this year I am planning on attending some Amish produce auctions to really stock up a good pantry this year. I'm also a ingredient canner unless I run across something super spectacular and I just haven't yet. It just makes more sense to ingredient can for my family also. Why limit yourself to one type of thing when you could do it for 10 different ways. Thanks for showing us carrots. I've never done carrots because they are normally a inexpensive item to keep fresh on hand but with the world changing as fast as it is, I will be adding this to my pantry.

I have a freeze dryer ... and I love it♥️especially for like cream cheese and cheeses I freeze dry them then grind it to a powder and use like that

Thank you for sharing. I had just bought some Carrots 🥕 and I like the idea of canning them in onion soup and would also love to see a video of that as well. We don’t much room here for a garden but we are looking for a bigger property. When you were describing how you do you meal planning that sounds like me. My husband and I on the weekends go to several store like Aldis and Sams club and also food for less, and but stuff on sale so this is how I determine what I am cooking and canning up plus what our stock is getting low on.

What a joy your videos are. New canner here and blessed to have found your channel. I was scared I couldn't can. When I was a child my mom canned once and they all exploded peaches in our basement behind the stairs that took hours to clean. But I overcame my fear this year and bought a pressure canner. Just canned par cooked ground beef and all 4 jars are perfect. I'm doing carrots next and that is how I found your channel. Thank you.

I am a 98% ingredient canner. We love the Farmer soup from the Amish Canning cookbook. Also I can chili beans and a simple pasta sauce. But everything else is ingredients in a jar. I love having my home canned items. It gives me so much peace no matter the storm we are going through! I love canning potatoes and carrots together with the onion soup mix and adding a jar of canned roast beef. Absolutely amazing beef stew, just add a thicker and you are all set. Two jars and dinner is done. So many more ways to have a great and easy meal.

Have u tried ordering seeds from MIGardener? It's awful I'm a neighbor in Indiana and I think it's terrible that in THIS PARTICULAR TIME some are told NO SEEDS FOR U! This event is awful but seriously this is as good as it's gonna get and it's PERFECT GARDEN TIMING like WHY NOT plant if getting out and food availability is all iffy?

Heather that is good advice not only about food security but canning staples. Meat was my first canning experience. Then soups stews and chili. Chili and my beef vegetable soup will be the only 'prepared' meals I will can. Sticking to the staples as you mentioned to get variety. Thanks for reiterating that, I know I've made the right decision.

My daughter just bought a freeze dryer. She has celiac and other underlying health issues that make it a solid choice for her. She travels a lot and has a difficult time trying to find food she can eat when she's not at home. She can take her freeze dried meals with her. I can and dehydrate, but am also thinking of getting a freeze dryer. I'll see how she gets along with hers, first...lol. I love this idea of canning your carrots with the onion soup base! I will be giving this a try the next time I can carrots.

Thank you Heather, this was very informative! I would love to see how you can meats. As I understand it they absolutely require a pressure canner which I'm seriously considering purchasing. Your videos have piqued my interest in canning and I think the pressure canner would be a worthwhile investment. I also like the electric one you have because of the spigot it has. Very convenient for making big batches of stock as well as for draining. I'm so glad I stumbled across your channel last year! 🥰

This is fantastic! My husband suffers with stomach ulcers so we don't cook with onions or garlic. But.... I need flavor! I now have the idea of using granulated beef or chicken bouillon to make a tasty broth to can the carrots in :)

I’ve always meal prepped like you described! I never knew how to explain it to others but definitely how I’ve done for the last 37 years of married life. Sales, bulk, & coupons. Has aided our budget beyond measure!

She has an old video about pantry Staples and TRY there's a greater fear rn if u don't! Every canner is differen & so is every stovetop too. U have to develop an ear for it. I pressure canned for the first time in February. If u have a tractor supply near u they sell jars 9.99-11.99, lids 12 for 2.99, and a Presto canner for 99.99. I think I've seen it at Walmart also may have been cheaper their jars are cheaper too but stick w Ball brand. Kerr isn't sold in my area but do not buy store brand cheap Mason jars or lids. I'm not going into Walmart so idk exactly the price of the canner. U gotta develop an EAR for pressure cooking and pressure canning. It's the sound I had to train myself on the most and then the steps, fill, debubble, wipe, tighten rings, etc. There's alot of excellent KZfaq tutorials but get a ball book of canning also. Some different canning cook books have actually given not the best advice on certain things. 2leelou preserves showed an example of that once from a newer book that looked beautiful vw rustic pictures but bad advice. If u have a printer and internet u can go to free websites on APPROVED canning methods and recipes and print for ur use.

I swore I would never own a pressure canner. I even took a 10 week class on food preservation and said right from the start I would never own one. Well i leaned alot and enjoy it so much. It is so rewarding to be able to open pantry and grab some healthy food that you prepared yourself. Take it slow and I bet you will love it.

Baby carrots is something I have been wanting to can. Thinking I might add some Beef Better than Bouillon in with the onion soup mix so I really get that pot roast flavor in the carrots.

I absolutely love your channel. I always learn something new. I'm not sure why you would not want to can carrots in onion soup mix. Truthfully it probably has way more sodium and preservatives than canning in water with salt. Just my thought. I am definitely planning in canning some onion broth. I can definitely see so many uses for this. Could you throw in a few more videos pulling from your pantry. Just literally what you plan to cook for dinner for the day and how you use what you have canned.

Love your canning, now a days, we need to do what it takes to survive, I think people are starting to see that. Hard to find canning supplies in my area.

Linda said it wasn’t worth it buy a freeze dryer. She does sell Thrive Life which is freeze dried. I agree that canning it cost effective when you find things at such a low price. I am going to keep an eye out for more low cost things to can and freeze, I did when my kids were growing up but I stopped once I was a lone but now I am married and I can share with others. Why would canning the baby carrots whole cause someone to be concerned? I am just learning about pressure canning, I have hit water bathed canned for many years but pressure canning has made me a little scared but no more.

I used baby carrots when I canned cinnamon brown sugar carrots. My grandkids and my dad LOVE them.

These look good to me Heather. BTW, if you gently tap/shake the jar back and forth on the counter after you fill it with your carrots they will self settle/pack. This is what I do with beets,etc. when I am pickling and it works great. Stay well and keep those videos coming.

I never would have thought of the onion soup mix with carrots, but sounds good! Canning is definitely worth it, after the initial investment of equipment. My husband will can potatoes and beef separately so you can grab a jar of beef chunks and a jar of potatoes, whip up the potatoes and have a meal in minutes. Carrots would be great with that. Love your videos and thank you for taking time to still share. Funny Story; I was watching a recipe video and I liked the video but I wondered "why corn nibbles" ( I don't like them, prefer corn on the cob but not the nibbles) The hate I got, I was only curious if other people felt like me. I don't like carrots, but I love your canning video's because even if it's something I wouldn't can, its so informative. (finally splurged for a canner - it will be for ever known as my "pandemic canner" P for short - and I hope to serve my grandkids pickles from it one day) Glad to see you looking well and wish you and your family well😃
