In this video I walk you through this delicious recipe for frying up green tomatoes.
After rinsing off the tomatoes it's time to slice them up. I cut off the ends and then make slices about a quarter inch or so. You can go thicker or you can go thinner.
The recipe that I'm using as my guide calls for :
2 - Eggs
½ Cup Milk
1 Cup All Purpose Flour
1/2 Cup Cornmeal
½ Cup Breadcrumbs
2 tsp Kosher Salt
¼ tsp Black Pepper
1 Qt Vegetable Oil for frying
I'll start with the ½ cup each of cornmeal and breadcrumbs and I'm using 2 tsp of Lowery's Seasoned Salt and ¼ tsp black pepper. Get that mixed up and then pour it into a larger container.
Put your All Purpose Flour in a separate container.
For the wash you can use buttermilk. If you're like me and you don't have buttermilk, then use whole milk with two eggs.
Today I'm using my cast iron skillet. Add enough oil to cover the bottom of the skillet, but we don't want to cover the tomatoes. Heat that oil to around 350-375F.
Here's the drill: dip the tomato slices in the flour. We want a thin layer on both sides. Now get it wet with the egg wash, and into the cornmeal/breadcrumbs.
Now fry em up. When it's golden brown turn the tomatoes over. Just get em Golden Brown. This is an assembly line process. You'll have to hustle to keep up. Remember to adjust your heat as needed.
