SAME DAY SOURDOUGH LOAF 1 cup active fed sourdough starter 1 cup luke warm water 1/4 cup olive oil 11/2 tsf salt 3 3/4 cups whole wheat flour Dough has to be slack. and moist, stretchy and soft. Put in a greased loaf pan. Cover with cling film. Let rise for 4-8 hours at warm room temperature. Preheat oven to 350°F/180°C. Give an egg wash and put sesame and poppy seeds on top. Bake at 350°F/180°C for 40 minutes uncovered. Unmould and allow to cool on rack.

Mary ! I baked this same day loaf of bread yesterday with my all purpose flour sourdough starter that this time it did doubled in size 😅. I ended up adding 4 quarters of flour at the end because it wouldn’t get picked up like you say, but luckily It turned out soft and really good. My husband and I loved it. Thank you Mary. So nice to see someone simplify this whole otherwise confusing process. You've given me the faith that it's the baker, not the dough that is the boss, LOL. All the night before feeding, next day mixing & stretch and fold, pre-shaping, bench resting, overnight cold proofing has turned me right off. That involves 3 days! This method is for me. Thank you!

I made this bread and it is wonderful!! I am 76, and lazy.....Mixed it and let it do a rise in my bread machine...formed the loaf and let it rise for four hours.

This is a promising process. I'm all for simplifying otherwise complicated recipes, so long as they turn out, and I'm wanting to get back into sourdough without losing my mind or hours of my life in the process.

Omg i had to come back here to thank you for your amazing incredibly easy and best ever sourdough sandwich bread. I used all purpose unbleached flour and replaced the oil for butter and I added 1/4 cup honey….it was light, airy, fluffy and really good…thank you for sharing this recipe. 🥰

I’ve made this recipe several times. Perfect except when I add whole wheat flour, like 1/3 of the flour is whole wheat. The top crust pulls away from the loaf. When I use all white it is perfect every time. It still tastes great but the crust puzzles me!😁

I tried it again today, and it came out perfect. I added 1 cup whole wheat, 2 cups white bread flour and I let it rise in the fridge overnight. It's just right not too tangy, not too soft, but delicious.

Just made my first loaf of same day sourdough bread and it is DELICIOUS!!! Now I know that, when I want the "sour" taste, I need to start the day before. But if I need sandwich bread quickly, I can still make it from sourdough. Thank you for sharing this recipe. It was super easy to follow and I love the bread.

I finally got my starter strong enough to make this recipe today. It's in the oven right now, and I can't wait!!! It smells heavenly!! 😋 My dough was very sticky when I took it out of the kitchen aid mixi g bowl, so I'm not sure if I should've kneaded it longer or what. I'm new to bread making and new to using my kitchen aid, so maybe I didn't have the mixer on fast enough? I probably had it on the 2 or 4 setting. Any ideas? I used a little over 3 cups of AP bread flour, maybe 3-1/4 cups. I was afraid to add too much or to knead too long....

Hello and thank you for the great recipe - i made it for my husband and daughter since they like it more plain. I prefer seeds and mixed flour. Came out great - will try out a few more times and learning the dough / proofing time better since i was guessing and poke test. Took about 8 hours in oven / light on mostly to proof in cool kitchen 68.

So easy to follow and no fuss whatsoever but still delicious, you can't get much better than that, I just made it again last night and this time I used a bit more flour until it pulled away from the sides of the bowl to clump on to the dough hook and this was perfect. I will be sharing this recipie with my soon to be Daughter in Law who wants to make more homemade foods.

I'm so sorry! I totally forgot that when I was recording. I always show the crumb and was absent minded that day. Someone pointed it out later on and I said to myself, why would I leave that out. Age is getting to me I guess ha ha!

Just mixed this up with half Unbleached bread flour and half organic AP flour. Added 1/4 cup honey. I used salted butter in place of olive oil, so I only added 1/2 tsp of salt. I’m still without a stand mixer, so kneaded it by hand. I’ll come back after 5-6 pm and leave an update!! 😄🙏

Oh my goodness! Absolutely amazing!! I was nervous that I didn’t knead enough ( I prob kneaded between 5-10 min), but this is such a beautiful sandwich loaf! The honey made it so it’s sweet and tangy. I will absolutely be making this again and again! So thrilled to find an easy sourdough loaf that I can tackle without a mixer and without planning two days around baking!

Also, my starter is probably 10-12 days old. I keep letting mine die 🤦🏻‍♀️ But it was at the point where it would double in volume after feeding. ☺️ hope this helps another newbie!

Hi Mary I made this bread recipe today using my whole wheat all-Purpose flour from azure. Turned out fantastic!! Will try using some freshly milled grain tomorrow!! Thx. Oh by the way I have been using your method for starting my sourdough and it has been a game changer from when I started doing sourdough last year!! Thx. Blessings and Shalom

I love when I can use my "discard" started. No waste. And if I don't have a way to use it at the time, I put it in a bag and put it in the fridge

i found your chanel and this recipe for the same day sourdough bread, you made it sound so simple that your recipe is the one i've used, my first one wasn't so much my second was better and now with my third i think i have it, thank you so much for all your help with my sourdough learning.

Thanks, Mary. I was using 1/2 cup starter, and I wasn’t getting the rise, so I’ll try the full cup starter next time. I threw some active dry yeast in the dough when I noticed it wasn’t rising after 9 hours, and it puffed up more, but I’ll use a full cup starter next time. I love this bread. It is the best tasting I’ve ever made or bought using my hard white wheat. Thank you for the recipes you provide to us all. Merry Christmas.
