I love this recipe as well. I sometimes use whey leftover from making cheese in place of the water. For the wheat I’ll use hard white with some spelt. The blend creates a very good flavor. This recipe makes the best hamburger rolls. I make 12 rolls. The best 😊

I have been making this recipe for about a month now and I can attest to how delicious it is. My husband would only eat store bought white bread even when I would make sourdough bread, I gave him a slice of this recipe right out of the oven and he was hooked. No more store bought bread in this house. Thanks for the video!

Sue Becker sells “USA Bread pans” through her store Bread Beckers that are exceptional for baking bread loaves!! They DO NOT need to be greased and the loaves slide out easily after baking. Highly recommend them! A little more expensive but worth every penny!

Great video as usual! At your suggestion, I bought Sue Becker's book and this was the first recipe I tried last week when it arrived in the mail. I didn't have any lecithin or gluten, but mine turned out perfectly, and tasted great. Like you, I'm now making about two loaves a week, and may need to start making more due to it's popularity with my husband :). Also at your suggestion, I gave my sourdough starter a vacation, but this bread is so good, I'm not sure how it's going to work out to try and switch back to sourdough again. I love, love the flavor of sourdough, but this bread from Sue Becker's book has such an incredible taste and texture. Thanks for telling us about her book, and thanks for your wonderfully easy to follow demonstration.

That's good to know it turned out great without the lecithin or gluten! I use the recipe from Felicia at Grains & Grit and I really like it. It doesn't take the lecithin or vital wheat gluten, but turns out great also.

I got to go to Bread Beckers and learn from Sue. I bought her cookbooks and have been making this bread every week. I use a smaller Pullman pan and find half of the recipe doesn’t quite fill the pans so I make rolls with the leftover dough. My husband says it’s the best bread he has ever tasted. Bonus the rolls freeze and thaw beautifully if you flash freeze them right after shaping before the 2nd rise.

I was so excited hearing you mention Breadbeckers. All my bread supplies come from there. Going to their store is awesome. Sometimes when I make my whole grain bread, I add a cup of sourdough starter and add less flour.

Love the Bread Beckers! I am fortunate to live somewhat near their shop and have taken classes from her. This is my go to recipe, as well! We make 1 loaf and one set of 6-8 hamburger buns each time.

@@TheRoseHomesteadmy husband’s company transferred us across the country to Georgia right before the pandemic. I was asking people at church where you could buy grains in large quantities. Everyone I asked said they order it in. I wanted to support local and not pay high shipping prices. Finally, a little over a year ago I ran into some that knew about the Bread Becker’s store. It’s my favorite shop in Georgia!!!! It’s also my daughters families favorite store in Georgia. I knew that my don in law would love it because he’s a foodie and lives great quality products, but my grandchildren love it just as much as their father does. They visited us earlier summer for several weeks. Every week that they were here the whole family went up to the Bread Beckers store several times a week. We live a little bit away but it is close enough to drive there. I am so grateful that God led me to go to the preparedness meeting at church the day the lady who knew about Bread Becker’s was there teaching the class on good storage. Absolutely love Sue Becker and all she has given to us!, so thankful for he4 sharing her knowledge about nutrition and her recipes!

Made this bread yesterday and tried it this morning, thank you thank you thank you!!! Best bread I’ve ever made and first time grinding my own wheat. Next thing is getting a new mixer, it’s a little hard with my mixer but can be done.

Hello, Mary. Thank you for providing us the link for the bread recipe. Your loaves look amazing so I can't wait the make this bread too. Thank you also for the info on the mixer. I had been on the fence about it. I didn't realize how much dough it can handle. You've cleared up a lot of my apprehension about spending that much on a brand I knew nothing about.

Hi Mary, I was searching for recipes for freshly milled grain and came across you and I’m so glad that I did. I made this recipe on my maiden voyage with my freshly ground wheat berries and both loaves turned out beautifully, and tasted so good. Probably the best bread I’ve ever had. I LOVE my NutriMill Artiste! I also have a Kitchen Aid mixer that I use for " 14:18 simple" things (cake, cookies, etc) but needed something that would do 2-3 loaves of bread. So happy I decided on the Artiste rather than an upgraded Kitchen Aid.

You did an amazing job with your bread. I am not an experienced bread maker, and mine did not have near the rise yours did. So, the next time, I threw it into my Zojirushi bread maker, and it turned out really nice (one big loaf). I agree. It is a wonderful recipe.

A couple of years ago I got the Nutrimill Artiste after watching the Biblical Nutritionist demonstrate it. I had a beautiful white Classic KA Mixer that I bought in 1991. Unless it was no more than 2 loaves worth of AP or bread flour it struggled and really churned at the end. The machine got very hot and that made me quite nervous. I had to keep the KA on the counter because it is so heavy to lug around and I really didn't have enough room to keep it in a lower cupboard. It took a bit of getting used to the Artiste. Not because it was hard to follow or figure out but I had been so conditioned to the shiny all metal KA mixer that I thought this looked like a cheaper machine. I love it so much now! It never gives me a bit of trouble and I appreciate the build quality so much.

So enjoy your channel! I use the same Sunflower lecithin. There's definitely a learning curve working with fresh milled flour. I have also saved the water from boiling potatoes and used that in the breadmaking. It too helps with a softer texture. Although yours looked perfect as is! 🍞 I don't have a stand mixer yet, seems the potato water makes a difference if you're just hand-kneading. Blessings! 😊

@@roannabeckwith232 Hi. Yes, the potato water replaced the full amount of regular water. Also, since I don't always have potato water hanging around, I tried adding 2 tablespoon of potato starch along with the regular water, as I had that in my cupboard. It worked pretty similar as the potato water. I've also heard of people adding instant potato flakes. I've yet to try that.

Oh my gosh, this looks like my kind of whole wheat bread! I've always had a kind of lukewarm feeling about whole wheat, but it's because of the heaviness of the bread, not the flavor. This bread looks so light and fexible, just delicious, Mary! Now, if I can only make it myself...

I've had a Bosch mixer since the 80's. It is head and shoulders better than a Kitchen Aid in my opinion. 😊😊

Love Mary’s sour dough methods but I also follow another lady homesteader with 8 children and I find that letting my sour dough rest in the fridge covered over night or several hours then let it rest at room temperature for more rise makes a softer bread too. But my house temp changes too. But I love Mary*s way too. Mary has lots of helpful ways .

This recipe is a great master recipe. I have made cinnamon rolls and dinner rolls with it. It just works for almost anything.

Yes, you can do that. Add 1 cup starter and decrease the flour by 1/2 cup and the water by 1/2 cup.

Love this video! Could I use my Bosch universal mixer for a long ferment style sourdough bread? Do you have or know of a recipe for something like that? Thanks for your content. I am learning so much.

I'm sure you can. I'd just mix the ingredients, knead it, and let it rise for a few hours then put it in the fridge for up to a week. After that just shape and let rise for an hour or so and bake.

I admit that I love my Kitchen Aid, partly because I use a lot of the attachments like making pasta, grinding meat and making sausages, and grating cheese. However, even if I’m using sourdough with unbleached white flour I have to watch it. If you only used white flour, would you think the Nutrimill would be worth own for making bread (I would still use my Kitchen Aid with the other attachments). Also, can you use the Nutrimill for mixing cakes and cookies? Thanks for all you do. I so appreciate you and all your videos. I’m looking forward to watching some videos with you and Casey singing Christmas songs this year.

Having had both mixers, I would say the Nutrimill handles dough so much better, and, yes, you can make batters and cookie dough as well. It comes with the whisk attachment and you can purchase the cookie paddles. They are very inexpensive. Thanks so much!

I have "active" yeast and want to get "instant" yeast but want to use up the active yeast first. How would I incorporate the active yeast in this recipe? Thank you for your demonstrations! I am SO excited as I will be getting a Nutrimill Artiste (emptied my bank account for a Black Friday sale!) as I am so weary of hand kneading.

To use active dry yeast, just warm up the water to very warm but not hot. Sprinkle the same amount of yeast as the recipe calls for, 1 tbsp over the water. Mix in and cover for 5-10 minutes. Once it blooms (it will be foamy looking) you can add the honey, oil, salt, and the flour until you get to the soft dough stage and continue kneading as normal. I got so tired of hand kneading. Having a mixer sure has made me more productive in keeping fresh baked bread available.

It's so funny because right when I have been realizing I want to eat whole grain bread close to EVERY day, at the same time I was feeling so tired of the WORK involved (esp. because I wanted to stick with the sourdough). That mixer is going to make a HUGE difference for me, and your demonstration is what I really needed as all the others I saw were a LOT larger batches and I read a review on Amazon saying the mixer couldn't do just one loaf well. Thanks again -- and hope you had or are having a GREAT Thanksgiving! -- Michele P.S. Oh that's right! You demo showed how to do 2 loaves -- but that's fine with me. I usually use 3 cups flour plus about a cup of sourdough starter for one (DENSE) loaf when doing by hand.@@TheRoseHomestead

Thank you for your wonderful channel. I just got my Artiste. I am ending up with a really sloppy dough and not sure what I am doing wrong. I am using my regular sourdough/fresh milled recipe that has worked great with the stretch & fold method. Do I need to lower my water? I use 550g flour; 400g water; 100g of 100% rye starter. Help!! I want to love this but right now it is a mess to work with.

I would just add enough flour to get a workable dough. It won't take a lot more so only add a tablespoon of flour at a time until the dough cleans from the side of the bowl.

Thank you so so much for this recipe. I made this for the first time today and I kept adding flour because I thought it wasn't suppose to be sticky. It's rising right now so we'll see how it turns out. The recipe I used of the Becker's website called for up to 7.5 cups of flour. Is the mixer you have big enough for that?

It will hold up to 6 pounds of dough. So, it should be able to handle that. It makes easy work with a 5 cup recipe.

Ok wait, really? I let it rise in a bowl then split it half to put in my bread pans then let it rise again then I baked it. Are you saying that I only need to just mix it, put it in the bread pans, let it rise and then bake it?

I've noticed Sue's online bread recipe using the lecithin is two tablespoon, verses the recipe in her book, one tablespoon. Will it make much of a difference using the one tablespoon? Mary, I'm new to your channel. I am so enjoying your videos. I also have one of those little dough rollers. It works great!

It's on page 128. Oh, no, I grind my flax in a coffee grinder. I used 1/2 hard white wheat and 1/2 hard red wheat. I should have stated that about the flax. I will make a note of stating that in a video coming next week. Thanks!

When I make bread, I put in as much flour as I want for my loaf, and then I slowly begin adding water. Until I have my water exactly to the right ratio of flour. I add a little at a time until I see it’s right where I want it to be. That way I don’t have to go grind more flour or have leftover flour. We all follow recipes and then end up having to either add more flour or add more water anyway so it works better for me if I add the flour first, and then slowly add the water rather than adding the water, and slowly adding the flour.

I just store mine in bread bags. You can slice the loaf and put it in the bread bag, seal it and it keeps great in the freezer. I always freeze one loaf every time I make bread.

Does this mixer heat your dough as it kneads? The dough gets pretty hot in my 16-year-old Bosch Universal. Much warmer than it should be.

I have a kitchenaid stand mixer and it not doing a good job, it straggle a lot with 4 cups of flour and I wish I knew about this mixer you have. So I was thinking in buying a bread machine because the one I have is not working anymore! The bread machine is very convenient but I am so confused now, I don't know what to do! I am not into bread making because it's carbs and it turns into sugar and I have diabetes that I need to conquer! Anyone help! Blessings 💕🤗

There is research to suggest that bread made with 100 percent freshly milled flour is much easier on diabetics. Whole grains have such a high fiber count and are full of nutrients. As far as a bread machine, I would say that is a great option for bread baking. I have never used one, but, am sure it would be so convenient.

Hi Mary - I'm hoping you can lend some advice. I've made this twice now - once with UB bread flour while my berries were in transit - the mix was quite wet, and I continued to add flour until I felt it was dry enough to work with. It baked up and tasted fine. Today I used your ratio of fresh milled hard red/white berries but did not include any of the optional ingredients. I had the same result with wet dough that wouldn't form; I'm using a Kitchenaid mixer. I added several tbs of flour and hand kneaded until it wasn't a wet pile of goo. Is not adding the optional dry goods the issue here? Thanks!

How long are you kneading the dough? Usually an amount of flour for a bread recipe can be relative to your environment so sometimes you have to add more or less. I find that kneading for a long time brings the dough together by developing the gluten. This usually takes at least 10 minutes in my nutrimill mixer. I don't think leaving the optional ingredients should have the big of an effect on the outcome.

Thanks, Mary. I'm in Tucson which is considered desert but is higher altitude. The bread turned out quite tasty and seemed very forgiving of any mistakes on my part. I'll knead longer next time; I might've hit 8 minutes. And I'm gonna get the Bosch Universal or Artiste now. Well, THIS is crazy: as I told you, when I made this bread I FORGOT the salt. On top of that, I had only two loaf pans -- and both are for 1.5 lbs -- so I used the two pans and between that and the dough just sort of spreading flat I got two loaves that are about 2 INCHES high. My housemate has had it a couple times now and today she kept repeating, "This is the best bread you have made so far!" LOL. The recipe IS a real winner! I don't know if I made the right choice, but I ordered a USA large Pullman loafpan which actually holds up to 2.5 lbs. That a little more than this recipe calls for, but I really like the "sandwich bread" shape of bread it makes. Do you have any idea how I might (safely) make this loaf be just a little bit MORE? Well, probably not. If I get a rise ANYWHERE near what you got here I'll never know the difference! There was a point I was CERTAIN I wanted the USA pan for 1 lb. loaves, but then I went back to wanting that really long one. I got the one without cover. I didn't see any need for that and as far as any problems with the USA Pullman pans I saw too many reviews unhappy with the cover. Thank you for turning us on to this particular recipe! For YEARS I have been unable to find just ONE recipe I want to have as a staple -- and now I've got it! (My copy of Sue Becker's book will be here by next week.)

That mixer is out of stock. How long have you had yours? One review said they had motor issues on two units. I don't like my kitchen aid mixer. I have considered buying a zojirushi bread machine, but they cost so much. I buy wheat from Bread Beckers.

I've had mine for 2-3 years and never had an issue so far. My KitchenAid kept overheating making freshly milled bread. This one doesn't seem to have any issues doing what I need it to do. Hope that helps!

If you are wanting to do freshly milled, the main things you need is something to mill the wheat berries. When I first started this was a vitamix blender until I proved to myself that I would stick with it. Other than that, you will need a supply of wheat berries. A nice thing to have is a stand mixer, but, totally not necessary. I made bread for many years without one. So, to break it down 1. Wheat Berries (I suggest starting with hard white wheat) 2. Something to grind the berries with. 3. Mixing bowl You can get started right away with these few things.

I noticed most of Sue’s recipes call for 8x4” pans. I’m going to need new pans. Lol. QUESTION please: need new Grain Mill but chatting with PleasantHill today (thanks for link) they were fairly adamant about recommending a Stone Burr mill. The research I did about yours looks pretty good to me. Today’s interaction, however, has me wavering. Any suggestions or would you consider a Video about your Mill? TIA. Really love your Channel. BTW, back in the day, I had a stone burr mill hand/electric capability. I found it difficult to get the grind consistency I was shooting for b/c after every milling episode we took stones apart to brush clean - this was recommended. Honestly, I can’t afford to make a mistake here. Looking forward to your response. Thank you.

I have heard great things about the stone mills, however, you will have to clean the stones regularly. The mills like mine are self cleaning and don't require you to take them apart. Also, there is a learning curve with stone mills. You have to twist the top until you get the consistency you want. A positive to them though is that they can crack grains, which mine can not do. I would say that if you want to use Einkorn, you would want to adjust the amount of flour. It may take a bit more. Also, I wouldn't knead it very long at all as this will make it even stickier. One other point, I would only do the rise in the loaf pan and then bake. Einkorn is so different but with these few tweaks it should turn out good.

Hi Mary, This may sound like a foolish question, but how do you clean and dry your silicone mat. Especially when you use it with something with eggs in it. I can't seem to figure out how to clean and dry it properly. I'm always worried that I've left some egg residue and I will cause may family to get sick. Any insight would be helpful. Thanks.

I wash it off while it is flat with a damp soapy dishcloth and then wipe it again with a damp clean cloth a couple of times to make sure the soap gets wiped off. Then I take a clean towel and wipe it dry. After that, I roll it up and store it away. I hope that helps. I had a time trying to get it clean in the sink so now I just clean it while it's spread out.

Question: is it necessary to roll it that tightly? I’ve also seen you just barely torn the bread and put it in the pan. So I’m not sure which technique is best.

I find the most important part is to pull it against the counter to seal it and also to drop it on the counter. I am more diligent with shaping yeasted breads than with sourdough. Yeasted breads tend to have problems with holes on the inside if not shaped well whereas sourdough doesn't so much.

I've tried this recipe three times in the last 2 weeks and I've had zero success. I cannot figure out what I'm doing wrong. Even threw out my brand new yeast and bought another container but that didn't seem to make a difference. So when I mean it didn't turn out, it's deflating when baking. I googled what could be the problem but there were so many reasons I didn't know where to start. I gotta figure this out one way or another because my husband bought me the mixer. And the bread tasted good it's just flat. The one batch I made today by the time it was done baking the bread was only about 3 inches high.

2 things to try. Knead it longer than you have been and catch it before it gets too risen in the bread pan. I think those 2 things will help you a lot. Let me know.
