I have 4 kids. When my sons were younger, i packed us lunches. 10 years later with my daughter play AAU soccer and basketball, I still pack us lunches. I now have a snack $$ envelope for her. Every 2 wks I put $25 in it. She can get whatever she wants to eat but once it's gone she done. It has worked out well. After practice she will get a cheeseburger and then when I get home I will cook a simple dinner. Meal planning helps. I love your channel. I love the recipes also so keep them coming.

I like having cooked ground beef or turkey in the freezer. I also try to keep hamburger buns and tortillas and tater tots in the freezer. I keep Taco seasoning and sloppy joes can sauce in the pantry. Then I can easily make tacos, burrito bowl or sloppy joes and have dinner on the table in about 15 mins.

Mindy, love your videos. Instead of a drive thru. Go to an Aldi's or most grocery stores have "to go meals" in the section by the cheeses. Many construction workers pop in and get those for a quick lunch.

I hate even spending $3 on fast food...so I take a drink and lunch with me if I'm going to be out at mealtime. It's so peaceful too to sit in my car and eat minus the rush, the crush and the noise, esp on a pretty day. It is restorative mentally too.

I totally hear you on starting meals earlier in the day. But I just use the slow cook function on my Instant Pot! Less stuff in my small kitchen, and I love having the sauté function if I need to brown meat or something first.

Hello Mindy, i watch your videos for inspiration even though we need to keep low sodium meals in our diet. We still work outside the home and slow cookers( crockpots) are my favorite kitchen helper! I have even went so far as to purchase a 100 watt inverter and plug my crockpot into my hot point cigerette lighter in my vehicle. We make sloppy joes sandwich mix in crockpot and cook it on the way. The small crockpot i have cooks in 2 hours on high. I have various sizes of crock pots also and use them every week! My 7 quart crockpot helps with batch cooking, the 5 quart helps with cooking our meal and having planned overs left over. I use my small ones to set up a baked potatoe bar,taco bar& pancake or waffel bar! These i do when i have plenty of pro active time before hand. Love the ideas you share and inspiration of making these dishes work for us! Daiya vegan cheese is excellent, i also have found chao cheese slices that melt and make wonderful grilled cheese sandwiches!

I always forget to pack food for myself! I get kid’s meals at fast food places. It’s enough food for me, you can ask for the fruit or yogurt side instead of fries. If you get a burger most don’t charge extra for lettuce and tomato. If you say you don’t want the toy they will often knock a little off the price.

We recently went out of town where we rented a house through VRBO. I meal prepped bagel breakfast sandwiches and brought lunch ingredients along with 1 dinner as dinner the other2 nights were covered with wedding events. The only money we spent over the 3.5 days was for gas in the car! My husband said my meals were better than eating out!

Jimmy Dean breakfast sandwiches are my guilty pleasure. But even at $7 for a pack of 4, they're still too expensive in my opinion. I buy them occasionally though to treat myself.

I'm a single Mom that works a very fast paced full time job. Many evenings I want to cook, but lack the energy. I keep a bag of the Aldi Kirkwood chicken breasts on hand for a mock Chick fil A sandwich and fries in the air fryer . It's no fuss, delish, and everyone is satisfied.

I use our leftovers to make homemade TV dinners. Every Thursday night we have leftover night and reheat all of the leftovers from the week and eat buffet style. Everything left after that dinner and all single servings of leftovers that previously I threw away because it was not enough leftover to fool with reheating get turned into TV dinners. I use 2 9 inch styrofoam plates for stability and I slide the plate in a gallon size freezer bag. I put a meat, starch and 1 or 2 vegetables or a meat and 2 or 3 vegetables or a casserole type meal and a vegetable on each plate. I start the dinner with whatever I have left and keep adding to the plate until I get a full meal. These plates stack well in the freezer and take up less space than containers from Amazon I bought . To reheat the food We transfer the food to regular dinnerware. I make enough of these dinners per month than we actually share 6 to 8 meals with our elderly neighbor every couple of weeks to ensure he has healthy home-cooked food. Mr B can no longer cook for himself every day. His daughter lives out of town and comes every couple of months and does some cooking but in between he was eating canned soups, frozen meals from the grocery or very little and I noticed he was losing tons of weight. As a retired nurse I thought maybe he was ill but after talking to him several times I figured out he was not eating enough. By using leftovers and foods I previously threw away we are able to help him with meals without it being a big hardship financially for us. We save sour cream and cottage cheese containers for soups, chilis, stews and cooked beans. The only thing extra that I ever cook for him is a dessert . I buy cake mixes and bake the mix in 2 8 inch foil pans. One I frost and it lasts him all week. The 2nd layer I either freeze for him for another time or Mark and I have it for dessert for us that week. We use the TV dinners that we keep for our use when life gets busy and I cannot cook for some reason. This keeps us out of the drive thru line or from ordering pizza. We still do those things occasionally but do it when we can enjoy it and not out of necessity. Previously we ate out about once per week. In the last 3 or 4 months we have scaled that back to once or twice a month.

One can also get a Hot Logic and keep things like burritos warm or warm them while driving. They make both 12V cigarette lighter and household voltage ones. Great for lunch at work also.

Mindy, have you ever thought about making a video showing the difference between store bought, partial homemade and 100% homemade stuff? Example: A ready made cake from bakery may cost say 20.00 (store bakery department) A box cake mix, and the ingredients needed to make it might cost say: 1.00 cake mix, .25 for each egg needed, .30 cents for 1/3 cup oil etc costing XYZ... Or 100% scratch would be the cost of flour, sugar, cocoa powder and all the other stuff including the frosting.... I think that type of video would be great. Another example might be: The difference between, ordering an Italian meal from a restaurant, verses a frozen lasagna and cooked at home, verses the make it from scratch yourself. I'd love to see you do that kind of video.

I calculated the cost of making lasagna at home a few weeks ago. It did yield three very large pans. My break down was... Ground meat 1lb for 3.50 Italian turkey sausage 1lb 1.74 Italian pork sausage 1lb 2.45 Frozen mixed peppers and onions 1.09 Lasagna noodles 3 packs 3.45 Ricotta 2 packs 4.70 Mozzarella cheese 4lbs 5.09 Parmesan cheese 3.00 Pasta sauce and canned tomatoes 6.00 Misc spices 1.00 or so Each pan gave 8 large servings and honestly I'd omit the ricotta 🤷‍♂️ it didn't do much for me.

I’ve started making my own yogurt, granola,salad dressing and Mayo. With sales and coupons or store brand I can’t even come close to the cheapness of homemade! But I still try those coupons apps, mostly I get referral cash back…haha that works for me!

Also, not as cheap as cooking from scratch but look into some of the things your grocery deli might have. Our local grocery store always has fried chicken and sides ready to go that you can just pick up. It's cheaper and often more delicious than takeout

We will even eat at Costco after church for Sunday lunch if I feel like eating out. My family of five can “go out-to-eat” for $10 with a gigantic Costco pizza.

There was a time we were so busy, I would get frazzled. It cost me so much money one month, I swore to get a handle on it. I finally settled for this: Meals in a basket - Chili = 2 cans beans, 2 cans tomatoes with chili spices already added, cornbread mix. My fridge always have eckrich sausages and cheddar cheese - we could have everything ready in about 15-20 mins. Less if you started eating while cornbread finished cooking. Tuna sandwiches cold or hot depending on the weather, pickles/chips/cracker on the side and snack veggies, though steamable are ready at same time sandwiches for 3+ are ready. Spaghetti/pasta sauce/frozen meatballs ready in 15 mins or less. Use microwave to thaw he meatballs.

I don’t know if I had mentioned it on here or not before I know I did somewhere, the library. Your library I guarantee you has tons of cookbooks and anything you want. I used to work at one and that was my favorite section to shelf! Lots of books and had a crockpot, meal prep whatever.

One of my favorite choices when I want something fast foodish but need to stick to a budget is to take a frozen Chimichanga or Burrito out of the freezer and cover it with a mild green salsa and microwave it for 2-3 minutes. Sprinkle with cheese and add sour cream and you have what we call a "quick and dirty enchilada". When I still had kids at home I would put 5 or 6 in a baking dish and cover with the salsa and cheese and bake them. I like the green Herdez brand salsa the best. Thanks Mindy for the great content! I am teaching some classes on food storage and budget cooking in my community and have enjoyed watching your channel to get new ideas.

Do you have a fave brand of frozen burrito/chimichanga? I like to nuke them, then in a small skillet with a bit of butter, brown them, then top with the things you mentioned...some of the cheapie ones are not so great.

I try to keep some cooked meat in the freezer, for nights when I don't have a lot of time to cook. Like ground turkey/hamburger or shredded chicken. Even if it's a last minute meal, I know I already have some cooked meat and can make a quick meal for my family. I also keep jarred pasta sauce and pasta on hand for an easy, no fuss meal.

Our two favorite quick meals: ~Bean and cheese burritos and then toasted on each side topped with lettuce, olives, etc. ~Rotisserie chicken and a bagged salad mix with garlic bread or the French bread that’s $1 from Walmart and it doesn’t heat up the kitchen.😉

Whenever I cook on the weekend, I make a point to make more than we need for one meal. Then we have leftovers in the fridge we can use on busy weeknights.

I make deviled eggs to eat for breakfast for the week for me and hubby. We eat two halves and a mandarin plus hubby eats half a bagel to go along with it. I made CP Hawaiian sweet and sour meatballs and then split it in half. I cooked half and froze half to cook another time. We ate it over rice. We liked it. A few weeks later just pulling the second half out of the freezer and dropping it in the CP was so great

The only way hubby & I go out (usually after church on Sun. He gets home close to 2pm in the afternoon b/c he works at church.) I fill out the survey on the back of the receipt, get a bag of chips from Aldi's & have a beverage from home. Usually the surveys are a "Buy 1 burger & get 1 free deal." Our goal is to get 2 burgers or sandwiches for around $6. Beverages & side items are the most expensive usually.

Thank you for sharing. I have relied heavily on my crock pot for many years... especially when I needed to feed in various shifts. Once it's made, I put on warm and everyone could eat when they had time on extremely busy nights.

Hamburger soup!!! Extremely affordable, simple to make, and filling! Look it up! I add cheese for extra flavor and my kids love it!!! Very affordable! Hamburger, onion, garlic, potato, canned corn, canned green beans, tomato soup, and beef broth.

I use canned chicken breast as a very quick option for adding chicken to a casarole, salad or dip etc. It's so much quicker than cooking chicken breasts then shredding it then preparing the dish and so on. There's a ton of recipes on line that have turned out great. These are great ideas, Mindy! Thanks for sharing!

Last summer, when I had an abundance of zucchini, I took the complete pancake mix, added grated zucchini and sliced green onions and made awesome pancakes. I put applesauce on the top, but sour cream would be good too.

My favorite receipes are the ones you can just add everything and put it into the oven to cook. Receipes like Tuna casserole, hamburger casserole, baby potatoes in the oven and pork chops in the air fryer. I also have started following @shesinherapron and have been meal planning and shopping my pantry. It is starting to save me tons of time and some money on groceries as well.

My four children and assorted friends grew up eating crock pot meals.I worked 50 plus hours a week.What a great way to have good meals for my family.Lined up the crockpots on the counter before I left in the morning.They were usually empty when I got home.My girls and their friends fed their families the same way.I remember when the first crock pot hit the stores.Best invention ever.

It is helpful for me to prep a bowl of salad on Sun and then it is ready for a side for a few days and with a protein added can be a lunch/dinner. Also eggs and bacon or sausage can be a quick dinner-breakfast for dinner.

For christmas I used my ibotta rebate on myself to get an Instant pot duo and then purchased a slow cooker lid. Today I slow cooked chicken thighs on the crock pot function, then when I got home after church/afternoon activities I put the thighs in the oven on warm, then used the drippings from the thighs and the pressure cooker function to make rice. (The IP makes awesome rice)

Great video. I'm excited to see biscuits coming back to the stores. There was over a month I couldn't find them anywhere. The biggest thing that has saved my budget is canning meat. Having precooked chicken and hamburger is such a time saver. Precooking your meat and freezing it also helps if you don't can. For some reason cooking meat is my barrier to making dinner when I'm tired. I also cook a massive amounts of pancakes and pop them in the freezer--cook once, eat for a long time! Thanks for this video!

I remember the busy mom days of scouts and ball games or practices- we also had special diet needs which made it challenging. We ate lots of pasta or frozen veggies and rice packages with tuna or a rotisserie chicken. Now with just my husband and me and plenty of time, I enjoy home cooking more, but still struggle with meal planning. Love your videos! Thanks for all the inspiration!

Sport seasons as well as other activities a family is involved in are hard on everyone but pre-planning with EVERYONE helping makes the trips much smoother. My mom taught my brother and I how to operate every appliance, how to cook basic foods in a safe manner, and how to clean up our mess in the kitchen. These trainings helped us when our kids had very activities to attend. Good job, Mindy!

Thanks Mindy! I always try my best to meal plan. That saves us sooo much money and we rarely go through the drive-thru because of it. You definitely have to be strategic and plan out your week as well! Plus I try to keep some quick and easy meal items on hand in case something goes array. 😊

Hi, Mindy! One of my favorite things about the instant pot is that it has a slow cook setting! It can function as a pressure cooker, crock pot, rice cooker, a saute pan... so many things! I'm excited to see you explore with it.

Rotisserie chicken, salsa and cheese make a great quesadilla filling. Little sour cream and guacamole on the side 👌 beats spending almost $10 per person at Taco Cabana or Taco Bell.

Thanks to you and Adalines Kitchen I basically never order out anymore. I have 4 kids and I hate ordering out since it’s not healthy and kills our budget! I freeze as much things as I can do when we are having a day we just eats what’s in there. I do a lot of prep so it makes my life easier in long run!

I have not seen you do much with tinfoil dinners, although you may have in the past and I missed it. I make them all the time and love them. Hamburger patty and cut up veggies ( potato, carrot etc) Cream of mushroom soup and seasonings. then bake. That might be a fun one for a future video. There are tons of recipes out there. Thanks again!!

My latest and quickest meal I've fed the kids is microwaving chicken nuggets, heating up a can of corn and cutting up some strawberries and mixing with blueberries and done. In 10mins it was done and on the table and kids were eating and excited. Mouths were full and happy so I called it a win.

@@SeeMindyMom that they did! And no one complained better than take out or cereal at least. My grocery delivery got delayed by over an hour so the supper I had planned wasn't going to happen. Emergency supper it was!

Fast food definitely isn’t cheap anymore. I miss the $1 menu lol! We don’t eat it often but when we do I always check for deals on the app or see if I have any coupons. Sometimes my husband and I will place 2 separate orders with app deals just to help keep the cost down. Whatever works! 🤑🍔🍟

The breakfast sandwiches in the freezer is a great idea. I decided to recreate those for my husband for work to see if making them was cheaper than buying the frozen ones, and they aren't any cheaper. So back to the frozen ones, we went lol

When our 5 children were growing up, We had to pack a large ice chest for hockey tournaments, gymnastic meets or volleyball travel tournaments. Yes. For 5 years I felt like I was living out of my very large conversion van. There was always food and a change of clothes for everyone. 🙂 We actually slept in our van "1" time. Busy weeknights before practice we ate whatever was in the fridge already prepared or sandwiches. Thankfully God blessed me with children that were not picky eaters,. They literally will still eat ANYTHING. Eating out was saved for birthdays because we did not have time to have parties at our house. I really do miss those days. Thank you so much for all your sharing. I have passed your videos on to my children who now have children. In case anyone is curious, YES, I worked 30 hours a week while my children were at school.

And it never hurt us! Best of times.A brown bag an jar water. Just carry water and flavor packs, jar of peanut butter an some crakers, granola. My kids know on Sunday pack an extra lunch box with some food an leave it in van for week. Also it's hard but limit screen time in car. Teach them read, look for stuff go on adventures.

I'm single and childless but trying to get better at cooking for myself. My favorite quick meals are tuna and white bean salad (1 drained can chunk tuna, 1 drained can white beans, 1 tbsp olive oil, 2 chopped green onions, and either lemon juice/pepper or lemon pepper seasoning - eat with crackers and veggies) and a "charcuterie" plate (rolled up deli meat, cheese slices, nuts, dried fruit/fresh fruit/small salad, crackers). Both of those are from the Budget Bytes site. I also tend to meal prep a lot with lentils because they're cheap!

How serendipitous. With our busy track season/being on the road constantly, we need quick meals so I am not tempted to hit the drive thru. Bc the prices have gotten so bad at drive thrus, that we can't feed our family for less than 45 bucks. I am not saying we never hit a restaurant, but it's way more infrequently

Leslie, I’m in the same boat. I try to be realistic, I know we’ll still eat out but after those 2 experiences, one in a fast food drive thru and one in a casual restaurant, I know we’ll have to cut back on that moving forward!

A fast meal we had last week was sliced smoked sausage, green beans and halved baby potatoes cooked in the Instant Pot for 5 minutes, you can use water or chicken broth and whatever seasonings you like, I used a little bit of Tony's.

For me I have noticed that the key to freezer prep is to make sure you have stuff in there that doesn't require you to put it in the slow cooker or take it out in advance to defrost, since this defeats the purpose of trying to have something on hand that you can just pull out and eat at the last minute. My personal favourite is to keep cooked chicken drumsticks on hand. Reheated in the airfryer or oven they come out amazing (even better than when they are first cooked) and take almost no time. Homemade freezer pizzas were also a staple in my house before we had a child with dairy allergy.

Mindy, your tips are so valuable and very practical! Have been thinking about my childhood and how my Mom fed us amazing meals on a small budget. Just remembered something Mom did to add fruits into our diet. She used canned fruit drained and added a banana, apple or berries whatever was in season. With the drained canned fruit juice (50 years ago was packed in heavy syrup) Mom would make what she called Fruit juice…..I don’t have the recipe. What I remember was it was the drained canned fruit syrup, fresh lemon juice, water and lots of ice. It was so good and refreshing. I didn’t drink sodas until I went to college. Blessings

That's an awesome idea. You can also extend regular juices by adding water to them. Some of them are just way too sweet, like apple juice.

My best tip is that a meal does not always need to be fancy or complicated. A frozen pizza is fine, toast and scrambled eggs, a baked potato pulled from your freezer with some cheese on top, etc, are all perfectly good meals :) My husband never knows what to make and says he doesn’t have the same talent as me (apparently I can just look at random things and make a delicious cohesive meal lol!) but I remind him that an omelette or whatnot is just as great as what I make. Simple and quick

I completely agree!!! I think sometimes we get bogged down in making every meal this amazing culinary experience. A can of soup or a grilled cheese is fine. And I think as prices are rising, getting used to more simple meals is going to be helpful.

We haven't been out to eat for a few months. Is it seriously about $10 a meal? We have several easy meals, but not always quick. But for our family we have time usually in the evenings, but we might be too tired to cook. But we try to have some easy meals at hand. Last night we grabbed a rotisserie chicken from Sam's Club for $5, and made a side of rice a roni. That was about $6 for an easy meal for our whole family. Some other meals meatballs subs. I can cook the meatballs on a cookie sheet in the oven, and then just heat them with the sauce and seasonings in a pan for a bit. While they are cooking the oven I am able to rest, do dishes, etc. I also like the instant pot to help for easy dinners. I love that I can throw in frozen chicken and some salsa, let it cook while I do other things, and then we can have salsa chicken. Or I can put both chicken and rice in the instant pot, heat up some cream of chicken with milk on the stove top really quickly when the chicken and rice are just about done, and we have hawaiian haystacks. And it actually really doesn't take that long to cook. Another reason we might want to go out to eat is it can feel like a treat, so we also might get something nicer for dinner, but make it ourselves to feel like we are still treating ourselves. One idea we like is at times having a couple of tv dinners on hand, or running to Walmart to pick them up instead of the drive thru. Still so much cheaper overall then fast food (although not any healthier) but it can be a fun treat since it's not our everyday meal.

We have chickens and therefore always have eggs so omelets is an easy default for us. Add any meat or veggies in the fridge. Thanks for sharing your ideas!!

Angelene, we talked about this when we lived in Norman. I think right now in Tulsa, we’re allowed to have up to 6 chickens, but I heard they were thinking about changing the law.

I love all of your crockpot ideas. I wish I could use mine more. My daughter will not eat any casserole dishes, which is what crockpot dishes are a lot like. :( She also doesn't like cooked veggies, only raw. She is so picky.
