INGREDIENTS:
Separate 6 eggs
Meringue:
6 egg whites
1 pinch of salt
1/2 tsp cream of tartar
250 g (1 1/3 cups / 9 oz) sugar
25 g cornstarch
32x36 cm / 12x14 inch baking sheet
Bake at 150 °C for 50 minutes
Cream:
2 egg yolks
50 g (3 tbsp / 1.7 oz) sugar
25 g (2 tbsp) cornstarch
Juice of 1 lemon
Heat and stir until thickened
250 g (1 cup / 9 oz) ricotta
50 g (4 tbsp / 1.7 oz) icing sugar
200 ml (2 cups / 7 fl oz) cream
Mix everything together and spread evenly over the cooled dough. Merengue
Roll up
Let the roll rest in the fridge for 2-3 hours
Icing sugar (optional)

Ingredients
Chocolate pastry:
100 ml (1/2 cup / 3.5 fl oz) water
100 ml (1/2 cup / 3.5 fl oz) milk
a pinch of salt
80 g (2/3 stick) butter
Heat and melt the butter
130 g (1 cup / 4.4 oz) flour
Heat, fold and let the liquid evaporate
Spread the dough in the bowl and let it cool
3 eggs, one by one
Fold gently but intensely
Baking tray 32X36 cm / 12X14 inches
Bake in a preheated oven at 180 °C / 350 °F for 30 minutes
Let the dough cool to room temperature before making the cake assemble
Custard cream:
2 eggs
50 g (4 tbsp / 1.7 oz) cornstarch
150 g (3/4 cup / 5 oz) sugar
1 tsp vanilla
400 ml (2 cups / 14 fl oz) milk
Heat and stir until it thickens
Let the cream cool before mixing
Whipped cream:
200 ml (1 cup / 7 oz) sweetened fat cream (30%)
Whip until firm peaks form (4-5 minutes)
Gradually add the custard to the whipped cream
Roll up the cake as in the video
Put the cake in the fridge for at least 2 hours

Ingredients
Dough:
4 egg whites
a pinch of salt.
100 grams of sugar.
4 egg yolks.
Lemon zest.
Juice of 1/2 lemon.
30 g vegetable oil.
100 grams of flour
5g (1/2 tsp) baking powder
1 tsp vanillin.
Bake for 10 minutes at 180 C.
Cream:
250 g cream cheese,
100 g condensed milk.
200 g cold cream for whipping.
Roll up and refrigerate for at least 1 hour.
I garnished with white chocolate.
