All the bosses tend to target the player and ignore the AI. Sephiroth is just faster at switching targets.

If a character’s struggling against a boss, it’s just a matter of diverting the attention away by switching to a character that can tank a few hits while you heal up. As Sephiroth switches targets much faster, it’s almost easier to cheese the AI and save your characters, constantly diverting his attention to whoever can take the hit and attacking in the meantime.

Its almost like he somehow knows about the events of Kingdom Hearts.

FF7R covered the 1st half of the 1st disk of the original game, of which covers the entire Midgar city arc. For context, the Midgar city arc was the 1st 6-8 hours of a MASSIVE EPIC spanning THREE ps1 disks, at the time, just because of the sheer amount of detailed cut scenes and the 1st attempt at a 3D open world game. Remake itself, is HUGE with the level of detailed graphics and content Square added. i do believe that part 2 (Rebirth) finishes the rest of OG disk 1, all of which is open world, over the course of 2 more modern day disks. Holy HELL! Aerith's fate might be decided in Rebirth, we shall see. I dread how big the final game of the remake trilogy will be; a whole world-spanning open world with airships and epic scale conflicts; of which is probably spanning its own set of MODERN discs.
