My oxtail recipe is green seasoning (onion , green onion, thyme, garlic , allspice) blend it then I buy a oxtail dry seasoning in your local Caribbean market also I use browning and garlic powder and onion powder and a lil paprika an salt or all purpose seasoning (let it marinate for a day if you can if not marinate for a hour) then you brown the meat in the pot rinse the bowl with all the seasoning and add it to the pot and slow cook for three hours then 30 mins to finish add a onion and butter beans and simmer

Tee you have to try to find the smaller pieces of oxtails you get the big pieces which is harder to flavor and just doesn’t taste the same to me. I always make sure I get the smaller oxtail pieces not tiny but not those huge pieces

I usually buy a box of oxtail from the meat market for 80$ have them cut it up and then I have about two large bags and I split it at home to have more bags and I just cook it through out the month
