It not because of the strawberry, you can chill pure water below its freezing point and once disturbed, it will instantly change state to ice, crystallizing. It didnt work in your video because your water was not cold enough and even if it was, you spent far too much time plugging yourself, letting the cold water heat up. You can see this happen in those instant slushie videos, where folks can pour supercooled water or coke into a glass and it turns into a slush.

It can work, but it can be tricky to get right. You need to have water that is "supercooled", or cooled below the freezing temperature without it actually freezing. Easiest way to do this is to stick a bottled water in the freezer for an hour or two, but the problem there is that it will often start turning to slush as soon as you pour it into the glass or even open it. Sticking an already filled glass into the freezer usually won't work, because of the way water freezes when it has a large surface area exposed to the air.

@Dilmi.AOUKLI It has nothing to do with the temperature of the strawberry. It works only if the WATER is cooled to the point of freezing. You can try this yourself. Put a plastic cup of water in the freezer, say...40 minutes for 1 cup of water. It's gotta be super cool. Then, try to knock the cup around and disturb the surface tension of the water. At the right temperature, it will flash freeze into crystals right before your eyes.

You need supercooled water for this to work. The reason it works in the video is because the water is below freezing temp but still liquid. Adding a frozen strawberry with ice allows the water to freeze.
