Brooklyn bar and restaurant Hunky Dory is determined to function efficiently. Owner Claire Sprouse, who previously tackled issues like water conservation while managing bars in San Francisco, is crazy about working sustainably and is proud of Hunky Dory’s creative initiatives to lighten its environmental impact. From bamboo straws to solar powered string lights, dehydrating food waste and reimagining ice machines, Claire proves that it’s possible to make eco-friendly changes in the restaurant industry.

I feel that most people commenting bad stuff on her doesn't have a clue of anything and just being trolls. Everything she does is actually legit from biodegradable cup, to pre dilution and even more. The only thing is that to be a sustainable bar, it's take a lot of human power and money. Cheers to you Claire, I hope this pandemic isn't too rough on your business!

@@pressfto no one is blaming small businesses dude. You are making good be the enemy of the perfect. I agree that sustainability is a problem solved best from the federal level but in order for things to take a step forward, the people's mentality needs to change. Every such small act contributes to the thinking. We need every help we can get. I know its small but goes a long way when we have a lot of brains to think about it. Like she found repurposing wasted food. While it might not be a huge difference such ideas can help solve other problems like food shortages when applied in the right place. Nothing to lose by being positive and trying to take the good things in. When people's mentality change they will push for changes at the federal level either through not voting for leadership that neglects environment or through forcing current leadership to act on it.

Sustainablitity should be more than “ Cool” at this point It should be MANDATORY, in fashion, in restaurants, in clothing but mostly in PLASTICS! We should be pumping out that island of plasticsin the ocean andbreaking it down to use for fabric cuz god knows, plastic is in EVERYTHING now anyways.

The more ice you add, the greater thermal density there is, and it keeps your drink colder for longer meaning less melting. This is why every decent bar on earth uses as much ice in a glass as possible.

@@TheBum732 I couldn't agree more. Unless a guest is willing to pay for extra liquor, the measurements in the cocktail ordered won't fill the glass. A potential patron has the right to request less ice in their drink, however, if they want it filled, it would have to be done by using a non-alcoholic ingredient.

Restaurants use a lot of ice not just because it saves money, but trust me, you finish your drink much faster when it has fewer ice, and it tastes worse too. Having the drink extra-cold makes it feel different from a homemade sweet beverage and also makes you drink much, much slower. All those ice makes better drinking experience. -Sincerely, a girl who tried ordering drinks with fewer ice when she had menstrual cramps and tried recreating beverage recipes at home.

It takes nearly 6 gallons of water to produce 1 gallon of liquor. Not to mention, alcohol is a diuretic- making many people consume more water to compensate for their alcohol-induced dehydration. So, if sustainability is REALLY the goal, you should have a dry establishment.

Ah, the old trenchers, excellent idea. Ethiopian cuisine uses the injera flatbread as the plate and utensil. Remember when all soda was in returnable glass bottles? Grocery stores sent them back to the bottlers then they just washed them out and bottled in new soda. Now all the glass is to be smashed, re-melted, shaped and then to the bottler and back into the supply.

I checked their menu and the prices are pretty crazy in my eyes at 15 dollars a cocktail, but that's average if not low in NYC. That being said the watering down is probably a reasonable critique, although your point was severely undercut by your "small batch vagine welders" comment. you know that plastic straws account for only 0.025% of all waste? so pushing for non plastic just makes more uncomfortable and harder for everyone, and pointless.

She talks about nickel and diming, which is a good way to conceptualize the process. Straws is an insignificant portion of waste, but certainly doesn't deserve the vitriol she's getting. It's most harmful if it just allows the person to negate their sense of responsibility, but the straws is one of many things the restaurant is doing. If she is truthful here she's cut her water consumption by 80%. That's an unbelievable saving.
