You will learn this technique and think to yourself... "why haven't I been doing this?!!"..... Just like I did when I first learned how to make this shelf stable tomato paste that requires NO REFRIGERATION!... Once you start using this you'll never want to be without it!!

Many things I all ready been doing and some I have learned from you and I am applying and seeing the results (like the JMS). Is amazing People need this knowledge more than ever so keep going, you are doing a great service. This knowledge is more valuable than gold and there will be a time soon that people will come to see this as truth.

A word of warning on dehydrating in the oven. I dehydrated a bunch of tomatoes one year in the oven, and my electric bill was $300 more than the previous month. I have not used, but heard dehydrators are also very inefficient, and expensive to operate. The best alternative I've seen (haven't built one yet, but plan to) is a solar dehydrator.

Man i wish you could smell my kitchen right now! I smoked 1/4 of the tomatoes for 2 hrs and now have them in my dehydrator, with some puerto rican oregano. It smells absolutely heavenly…with a touch of smoke lingering. I’m hoping that I did enough to get the smoky flavor when its re-hydrated. Thanks for this, this way is more practical for the way I do use tomatoes anyways .

Do NOT put O2 absorbers in these jars of powder. Moisture absorbers are ok, but NOT O2. If you use O2 absorbers the powders have to be 100% dry. Any small moisture along with an anaerobic situation provides the perfect environment for botulism. So, it is best for only moisture absorbers be used for powders, which are generally shorter term storage (1-2 years or less.

What’s your opinion on people who say when a fruit , vegetable etc is harvested it loses a lot of its nutritional value. You’ve just turned Tomatoes into a powder which will keep shelf stable for years and still hold its taste and surely it has retained some nutrients. I don’t mean that you could survive off this alone but maybe the human body can get by on minimal amounts of food and it’s water that is more critical to stay alive.

@gardenlikeaviking
@gardenlikeaviking 3 ай бұрын
the temp doesn't matter too much but for tomatoes I set it as high as it goes because when you use the cherry type tomatoes and place them cut side up it concentrates the flavor but really takes a long time to dehydrate properly.. roughly 150-165f

When I started my fermentation on my tomatoes - a lot of seeds floated to the surface - should I try to remove them... maybe save to replant. I always ferment my seed till they stink - then wash the pulp off and dry... I am going to do a test run of these seeds exposed to salt. Might be wasting my time - but an old guy need to try new tricks... Unlike the old dog... hahahhah.......
