SATURDAY APPOINTMENT WITH AN IDEA OF RISOTTO FOR DINNER ON CHRISTMAS EVE, RISOTTO WITH SHRIMPS
Today I prepare this risotto which will be one of the first courses for the Christmas Eve dinner, VERY EASY TO DO and light to pair with a second first course
I describe how to proceed:
First, get some fresh shrimp, remove and clean them ...
Then prepare some vegetable broth, simply with water, carrots, celery and onion
Now let's start by putting oil and onion in a pan, and fry and brown on the fire
Then put the rice and toast it lightly, blending after a while with white wine ... as soon as the wine has evaporated, we begin to cook the rice by pouring the broth from time to time (do it every time the rice begins to dry)
Before finishing cooking, try the rice to understand it, add the prawns and mix them with the rice ... then add the salt and black pepper
We are almost ready, let's cook for a little longer to finish cooking
Now turn off the heat and add the parsley and the oil, mix well
The risotto is ready to serve
Take a nice plate, put a pasta bowl in the center and fill it with rice (lightly crushed to make the rice adhere to the sides of the pasta bowl) ... decorated with shrimp, parsley and black pepper
Ready to taste and make a good impression on guests
