I don't know why 'u American's people love sweet meat (you season with sugar) !? I understand from a friend of mine who worked and travel in America, even the bread is sweet, if you want normal bread just with salt is more expensive! I don't understand this thing! Why? I tried your barbeque ketchup wit 40 or 50 grams of sugar in it, but it left me without soul in bad way! Sorry if I offense someone!

Put the brown sugar in the butter, not the rub. Eliminates black bitter bits since sugar burns so fast.

I think the sugar to to neutralize a bit of the burn from the cayenne. I do something similar when I make stew takes the bite out of the initial taste but leaves and after burn

I love compound butter on my steaks and chops. Just one thing I discovered. DON’T USE SALTED BUTTER TO MIX YOUR COMPOUND BUTTER! Just my personal experience, it’s easier to control the saltiness of your meat if you don’t add the extra saltiness from the butter.

@@cam5816 if you dry brine your steaks it will make a difference. I found added salt to the dry brine salt is too much. But if you put your steaks right out of the package on the grill, you probably can adjust the salt amount and make it work just fine.

@@chriskent8698 You can use salted butter, but generally when cooking with steaks and such, it is best to use unsalted. It can be totally fine so long as the end product isn’t too salty w/ your seasoning in mind.

You can eat a less seasoned steak if you want to enjoy the natural flavor, but if the seasonings make the steak taste better, then do what you want; Fajitas are a perfect example of how seasonings can turn a mid cut of meat into something that delicious asf.

Could you please tell me the measurements of everything and what kind of steak you used? Including temperature of the grill and how long you cooked it before and after adding the compound butter. Thank you

Hey, if you still wanna know, that’s probably a sirloin steak. The temp will be around 450°F to 500°F on the grill. How long depends on how you like your steaks done. I’d recommend looking up ‘how to grill a steak’ for more detailed instructions. For compound butter, if you’re doing it over the grill it’ll be just before it’s done with enough time to let the butter melt. If you’re doing it in a pan it’s best to go in a little earlier so you can baste your steak with the melted butter. Hope this helped!

My favorite compound butter is truffles(truffle oil substitute if you can't find or don't want to spend a paycheck), butter, orange & lemon zest, cracked pink peppercorn, sea salt, and chives. Simple, but AMAZING.

@@AdawaShiwani There is no such thing as a "good" well done steak. Those to things are counterproductive. You either have a medium or medium rare steak with amazing flavour or shoe leather that has all the flavor cooked out of it. Doesn't work

Gochujang is really good for this. But try Hontsuyu in addition to everything else. The umami explosion from hontsuyu will add that extra kick to flavors
