I always do a simple cheese cake recipe... (like your filling for the cookies). It's not good for you, but to me better than the ones that have flour in them. It's just two of those packs of cream cheese (like the one you used), vanilla, a cup of sugar, and 2 eggs. I've never seen anyone say to beat it cold though, so they must have had a hardcore beater! I do the cream cheese and eggs room temp. YOu put it in a premade graham crust and bake for around 45 minutes, easily the best cheesecake ever. Or crush up graham crackers with butter, but most are basically the same thing anyway. Not healthy of course, but I doubt I've seen a healthy cheesecake.
