My name is Cadence Gao (中文:高寒). Some of you might already know me from Bilibili, actually one of my very enthusiastic followers has also been very generously taking and uploading my content from my Bilibili channel to KZfaq every week, so I've decided to take step forward and create my own KZfaq channel!

1.蛋液裡放點油下去煎,會讓那個蛋皮會更蓬鬆一些。 2.用中式炒菜鍋製作那個蛋皮,因為中式鍋有平底鍋沒有的弧度。

我奶奶在我小時候每年過年都會做一次蛋餃,全家族只有她會做. 一整天她坐在一個小電爐前,手上拿著個比影片裡還要平一點的勺子, 一個一個的做蛋餃. RIP Grandma. Love you.

很费工夫 但其实做也好做 蛋液放到汤勺上转一圈之后把肉馅填进去合起来之前边缘涂一些蛋液就好了

打發蛋液時加點油會令口感膨鬆點,選用最小尺寸的中式炒菜鍋款(台灣餐廳常用於一人分的小火鍋)做蛋餃會容易多了

It’s really exciting to be able to use a butane torch to create such a delicate and delicious egg dumplings. In Taiwan I was taught to use a nonstick pan, which is easier to handle, I guess. Simply love your show, your sense of humor, and energy!

我覺得在家做要簡單一點可以用大鍋先弄一些大的蛋皮出來,然後用圓形模具切出來個別餃皮,再像包水餃一樣用蛋液封邊就會快很多了。

我奶奶以前也做这个,她会先做好很多皮然后拿来包,用蛋液当浆糊来封口。然后蒸。我觉得用做pancake的那种盘子或者章鱼烧的那种(大号一点的)可能会很省事。主要是不沾和量大

考中餐的時候做很多....如果皮怎麼翻都會破的,蛋液加點太白粉水,蛋皮會比較不容易破,加多味道有點噁心,蒸的時候中小火慢蒸蓋子露個縫給蒸氣出來,皮就不會皺皺的

They're...not...wrong though, if you're talking LITERAL translation *cackles in glee* 4:11 Thaaat's a good enough reason, yes - "my grandmother said so" is my equivalent for the steps in some of the recipes I picked up from her too. I did ask her why, but she just breezily said, "That's the way we do it!" (meaning probably she didn't know either buuuuut...) 4:40 Bahahahah go Vermouth! (Actually, Hakka women would say much the same, except much louder) 6:39 and 7:18 *splort* THE FEELS. 好累哦 is right...I haven't made these for a long time because of the 好累哦 (and I didn't have a ladle so they were extra-huge egg dumplings done on a small frying pan anyway) 7:56 補蛋皮! I've messed that up as well too come to think of it...then I just said screw it and mashed it all up into scrambled eggs and pork filling 8:17 *SPLORT* They're good, definitely, but they need time and patience and yep sense of humour - they're...well. Nicely folded tiny omelettes lol. But they *are* good, just a lil' time consuming.

我也在上海长大,可以理解高厨的幽默。我一岁的宝宝不喜欢吃肉,只愿意吃非常不明显的肉末和鸡蛋,有一天我突然想到小时候一直吃到的蛋饺也许是perfect让她既吃蛋又吃肉的食谱,可是一次做一只实在太慢了,特别我们不经常做的人,永远做不出弄堂里老奶奶的速度,希望高厨下一次出一期更新的“如何批量制作蛋饺”,用烤箱什么之类的。

Its funny because I definitely as a white westerner make keto alterations to Chinese food. Substituting xanthum gum or psylium husk for starches, husk again or pork grinds for breading, shiratake noodles for any noodle dish, etc. Non-sugar sweeteners etc. And generally I think it works well enough (for me anyways). As for politics, as a westerner I know you're just joking.
