Breakfast Recipe:
Eggs: crack eggs in a large bowl and add in a small amount of milk or water (too much will make them soggy!!!) then whisk very well.
cook eggs over medium high heat, add in seasonings, cheese, and scramble. - serve immediately
Notes: I like Kirkland brand fully cooked bacon because I just don't like cooking bacon lol it's super easy to reheat and tastes delish
- I purchase this at Costco.
Lunch:
White bread with sharp cheddar cheese, deli fresh mesquite smoked turkey, and mustard.

Dinner Recipe:
Creamy Shrimp Pasta... it's so gooooooood!
Ingredients:
- pasta of your choice
- 2 tbsp olive oil
-1 lb peeled & deveined shrimp
- kosher salt
- ground black pepper
- 3 tbsp butter
- 3 cloves of minced garlic or 3 tsp pre minced garlic
- 1.5c halved cherry tomatoes
- 1-5 cups of kale, your preference.
- 1/2- 1C milk or heavy cream
- 1/4- 1/2C grated parmesan
- 1/4c thinly sliced basil
- lemon wedges for serving
Boil water and add in a little olive oil and salt.
Cook spaghetti noodles per package directions
- I love using banza pasta as it is a healthier alternative to regular pasta!
add a large skillet over medium high heat. Add olive oil and let heat up.
Add in shrimp and season with salt and pepper. Cook 2 minutes on each side or until golden. - once shrimp is cooked remove from skillet and set aside.
melt butter in skillet and add in garlic, stir until fragrant. Add in cherry tomatoes - season with salt and pepper and cook until tomatoes are about to burst. Add in kale and cook until kale is wilted.
Stir in 1/2C of milk or heavy cream - add more later if sauce is too thick.
Add in parmesan and cook until melted. Then add basil, and noodles.
Stir well and serve with parmesan to add on top of pasta and lemon wedges if desired.
- notes - you can use alternatives to milk if needed, you can also substitute kale for spinach if desired.
