Chef Jack Ovens - I tend to resonate with you and your style of cooking. I really appreciate how clean you are it makes watching pleasant. I love Thai and Indian food and whilst there are different recipes for the same dishes, I like your choice of ingredients. It’s what I want in my dishes. I’m in Australia. Are you in the UK? I ask because some of the mushrooms you’ve used are strange to me. Then again I don’t usually shop for mushrooms so I don’t know whats available here. Love your channel.
@ChefJackOvens
@ChefJackOvens 4 жыл бұрын
There’s so many great variations of the same recipes out there. I’m glad you appreciate the way I do things. I am in Adelaide Australia. I shop with suppliers that supply the cafe i work at. I also buy most of my ingredients from fruit and veg shops, Costco, Woolworths, and Coles. Most of the supermarkets should sell the variations of mushrooms if you look around the mushroom section they are usually tucked away as not many people buy them or know what to do with them. You can get some great deals and the “other” mushrooms are so much better than the common button mushroom.
@AbiNomac
@AbiNomac 4 жыл бұрын
Chef Jack Ovens - I would have never guested you are in Australia with that accent. Nice. So if you are using Australian ingredients that makes it even better for me watching your channel because all your ingredients are here. Thanks for the recommendation on the mushrooms because I have only used the button mushrooms and am excited to try the others now.

So first of all... no bean sprouts in Tom Yum soup. Its taste and smell will ruin the soup. Second.. Lime juice should add after you turn off the fire. This is my recommendation for anyone would like to have original recipe and some trick. I’m Thai btw. There are differences between Tom Yum soup and Tom Yum soup for noodle... if the one that is for noodle thai people would like to add bean sprouts. Because the way and ingredient to make Tom Yum soup for noodle will be different.

For the ORIGINAL THAI TOM YUM SOUP you don’t need GARLIC and BEAN SPROUTS !! Cause it is not noodle tom yum soup it’s totally different! For original recipe the sour taste you can use tamarind juice as well or you can use both lime and tamarind but please remember to use LIME you always use at the end after when you turn off your gas, never put lime juice while you cooking the boiling soup cause it would turn to bitter taste !!
@JE-western-rider
@JE-western-rider Жыл бұрын
Also, I'm more into the traditional version - no tomato, no onion, brown sugar!!!! - brown sugar no; just no, and really seriously no beansprouts as they change the flavor. Really like the way you create the basic soup broth as that is the key to this soup.

I'm a Thai person and I've eaten a lot of Tom yum goong, but I so confused that why are you put a onion in the soup? i can accept a tomato in some case and one thing, you shouldn't do is put a sprout in Tom yum goong, it should be in noodle.
@ChefJackOvens
@ChefJackOvens 3 жыл бұрын
I like to put onion in a lot of things. I understand traditionally it may not supposed to be in there but everyone has different interpretations of everything. The sprouts are for a garnish at the end, it’s a nice visual and little touch to finish it off.

Actually tom kha and tom yum are very different. Adding coconut milk has nothing to do with turning tom yum to tom kha tho. The main difference(in many difference) are herbs used in soup. And we don’t put chilli paste in tom kha. You need coconut milk to stand out in this dish. What you did is like hybrid between tom kha and tom yum.

Tom Kha is Tom Kha, and Tom yum is Tom yum, they are two difference dishes. Please do some study before you explain thing. Tom yum has two styles, a creamy soup (with coconut milk) and a clear soup. Put coconut milk in doesn't turn it to Tom Kha though.
@ChefJackOvens
@ChefJackOvens 3 жыл бұрын
Yes Tom Kha is Tom Kha and Tom Yum is Tom Yum. Tom Kha is similar to Tom Yum. It’s a spicy and hot soup; however, it also has coconut milk added, resulting in a creamier texture. In this case I’ve created a blend or hybrid between the two. I know this may not be a traditional way and that’s why i haven’t called it traditional. I can assure you, I’ve done a lot of research and won’t post anything I don’t know.
