Hi Tom! I use this hack for a while, whith an extra trick. After it heated up for steaming, turn off the machine, and let out some steam before turning on. This is doing the same (bring the temp. a bit lower) and it's bypassing the pre-infusion (nothing will came out under the pre-infusion state, just building up the pressure). This type of pre-infusion is most good for pre grounded coffee + pressurized basket.

Dear Tom! Temperature hack is the very best hack ever! It really change my life & my coffes. If you can find a way to tweak temp sensors or anything else to reach 94°C at shower would be nobel prize for you...mean time ur hack it's the fundamental trick I found all over the web. Glad you got around too this! It’s nice to know the actual numbers so you can get a better gauge on what method to use for each roast. I noticed that in darker roasts I preferred to use no extra heat and even sometimes a cold portafilter to remove almost all bitterness

Hey Brad, wow very cool, thanks for that feedback. I will have to keep this in mind with different roasts. I almost always use a darker roast, but not super dark. What bean do you prefer with the Dedica?

Very nice! I'd absolutley love to see a video like this but for the breville thermojet products. (bambino/barista pro) Would be interesting to see which temperature surfing routine results in thr most stable temperature and the best actual average temperature, as there's alot of conflicting information. Preheating with the pressurised portafilter, running a cooling flush, running the stream wand first, cold vs hot portafilter (breville actually recommends cold over hot after kaffeemacher's tests) etc.

Steam hack seems to be quite dangerous because of temperature rise up to 98 degrees that might burn your coffee. If did recently similar measurements, and got a bit Higher temperatures. I guees that different termometers will give you different results. But, anaway, Tom, you are one of the greatest ec685 ambassadors in this world!)

I am always doing the kind of temperatur surfing suggested by the guys from Kaffeemacher. Start and stop pre infusion twice, wait for a minute and then pull the shot

Great Video 👍, Tom. I used to pour in hot water in the machine EC685 for keeping the temperature around 90 °C, I can use your hack method now.

You can also try just turning on steam mode for 3-4 blinks and comparing that method to the method in the video. I am curious to hear your results!

Hi Tom, have recently purchased a Dedica with bottomless portafilter and Sage Smart Grinder Pro combo after watching all of your videos. Found something that might be of interest for a future video in terms of temperature surfing. If you press the steam wand button then wait till solidly lit, as if you were going to steam, then switch the machine off at the wall and back on, it will no longer do a flashing cool down if you ask it to pull a shot. Instead it will pull a full temp shot. Maybe you could do a temperature test to see if it is too hot or good at this temp? Anyway, thanks for the time and effort you put into your videos.

Hey Steve, thanks for sharing! I have tried that, and I feel it's too hot yet. You can visually tell, because it forms a huge cone out of the bottomless PF, indicating too high a flow. But that was just my experience. You gotta do what works best for you. Cheers!

You really know how to make the Dedica shine! The water coming out of my DeLonghi La Specialista seems to be at 191f with no coffee in the PF. The hack does not change this. My manual says at one point that you can set custom temperatures beyond LMH, but does not explain how. Really, all the espresso machine has to do is present water to the PF at a specified temperature and pressure and stop after a predefined amount of water has passed through the PF. The thing that boggles my mind is that many machines have lots of bells and whistles but do not perform this basic function reliably, instead hacking around how the pump alone performs to poorly approximate this with such hacks as a poorly calibrated OPV that dumps hot water back into the water reservoir.

Hey Tom, well 191 Fahrenheit isn't a bad place to start, but ideally you'd want 200 for the extraction. I agree, it would be nice if these machines would provide a stable extraction temperature within the desired range. But I guess that is why people retrofit PIDs on a lot of machines. I do not know how this could be done however, on a thermoblock machine. Thanks for watching, Tom!

@@TomsCoffeeCorner Yes it is annoying that I have to jump through hoops to try to get the temperature higher. The Decent does it by slightly overheating the water and then mixing it with a bit of cold water to get the desired precise temperature. PID is just a fancy name for a computer tied to a bit of process control. It used to be an acronym for Programmable Interrupt Device which was a chip that you would interface to a CPU to generate interrupts. Nowadays it seems to be used as a fancy marketing term in the coffee industry for a cheesy display tied to some sensors and controllers.

@@TomJones-tx7pb Actually, a PID is a proportional integral derivative controller, at least that is how I know it. Based on the values entered or omitted for the proportional, integral, and derivative gain, you get different feedback results (quicker, slower, hysteresis, oscillation).

Built systems to completely automate steel manufacture from ores, upgrade the Belgium power network, upgrade various states in the USA for power generation and distribution, automate monitoring nuclear waste site, etc. The algorithms you mention are not rocket science.

@@TomJones-tx7pb Hey Tom, I have to be honest that we learned more about PIDs in college than what I use on a daily basis. I hadn't heard of the interrupt definition, that's why I mentioned it. You probably had a lot more experience with feedback loops in industrial process control, than I have in drive automation. Cheers!

Yes I've done this many times myself. I'm just afraid that it's too hot for espresso. You can tell it's hot by the steam it produces. It looks like that it's as hot as it should be.

Hey Saeed, I have been trying some temp surfed shots, and enjoying them more, even if just for the hotter espresso. The extraction seems a little better too, but it's hard to quantify that. But, try it for yourself, and see what you think! Cheers! Tom

I would add that one of the most important things for a good extraction is water flow thermal stability on contact with a puck. All prosumer machines maintain a constant temperature of their group head. With Dedica you can do it by preheating its group head ahead of time. How do you do it? I found a hack of keeping dripping water in your portalfilter for 5-7 minutes by placing a puck screen inside an empty portalfilter. If you want to make a video on this one, don't forget to mention me! 😜

@@TomsCoffeeCorner Hey Tom, this is almost what I meant. I suggest that when you pull 2-3 double shots in a row, while having puck screen in your empty portalfilter, it causes most of the third shot water stay inside the portafilter and heat up any piece of metal around it - portafilter, puck screen, metal parts of your group head. I can't say that's a game changer, but it makes the actual double-espresso shot coming after more round and sweet.

Hi Tom good to see you tested the temp hack idea, well done!! I see the temp starting the extraction is quite high, should be around 92 degrees for medium roast coffee. Maybe waiting a number of blinking the steam button and then stop it could control better the desired temp value. I also notice the starting PF temp is higher in the hack test probably due to the previous tests and that could contribute to the high peak starting the extraction. I do not have a probe to insert to the PB so my option is to test based on taste, but for sure are very helpful the graphs in the video!!!

Hey Rincon, I think the starting peak is higher not due to the previous pulls, but because the thermoblock was still heated up from steam mode. And this is going to be most likely somewhat variable, depending on how much steam/water is released upon purging after turning back on. I think it would be more ergonomic to try pulling a shot after going to steam mode just shortly, as checkwhatisleft and you mention. I will experiment with that a little, and post some results soon. Good morning Tom. Interesting video that disproves the generalised statements of "die Kaffeemacher" about temperature surfing. I have also noticed that the settings of the two lower temperature levels are usually very acidic. About the methodology: 1. Did you make at least one empty brew before starting coffeebrewing? The start temperatures are only half as high as those of "die Kaffeemacher"! 2. An additional idea would be to flush the first 2-3 seconds before brewing in order to transport the cooler water out of the pipes. Then the brewing could be more even. Can you perhaps measure this again with empty brewing and flushing? A small constructive criticism: The axis scaling is not so well chosen. But still a great video. 👍

Well, the Kaffeemacher have a special Scace portafilter that they use for their 58mm machines, but I do not know how they measured with this little 51mm machine. www.espressoparts.com/products/scace-2-espresso-machine-thermofilter-temperature-pressure-device That being said, I did do a flush, as I always do before pulling an espresso. My thermometer multimeter is probably not super accurate, and I think it measures about 4-5 degrees low, on the top end. But it at least can show the difference with the hack. Thanks for your input, and maybe I will try this again, when I can find a better method for measuring..

I still cannot get near the 197-205F (90-96C) recommended range even with the hack. My electronic thermometer shows 158 at the highest setting, measuring the water in the cup as it is coming out. I see you got up to 98 before the hack. Something is probably wrong with my machine.

Great video as always Tom, I was really interested in some temp profiling with the Dedica. I will definitely try this and check the improvements of my espresso as I typically use medium/medium-light roasts and it tends to be a little sour, hopefully, the temperature hack will solve the issue.

@@nickostergard47 it kinda worked, but I don't recommend using lighter roasts with the Dedica, the temperature stability is not that good as you can see, the problem is that you can't reach higher temps and be consistent. In the meantime I switched to a Gaggia Classic Pro and it's better with lighter roasts, still using the steam hack as well until I get my hands on a PID.

Well, you don't have to went through the trouble to get higher temperature, press the steam bottom, let it blinks for 3times and cancel it, you should be able to get up to 92c for that.

That sounds like an interesting idea, too! Maybe someone can try it out and report back. I have the feeling that letting it heat up all the way to steam mode and purging a little might maintain the heat curve a little better, but I don’t know.

If you think that the machine warms up to 80ish °C within 60-90", then a few seconds might be enough to raise the temp just a few degrees.

@@TomsCoffeeCorner I don't mind that you mentioned it on ur video or not, but it was effective, however, room temperature plays a role in the actual brew temp, for example that 3blinks doesn't work all the time, if there was room temperature fluctuation.

This can happen to any machine. It depends mainly on how much your dose is. Try 16 grams, and wait 60 seconds before removing.

Well, I have been playing wit the Bambino Plus lately, and it is wonderful to steam on. It has some cool features, too. But it doesn't feel more premium than the Dedica, and it costs 3x more. Cheers!

Hello Tom, really great video! I will definitely try it on my Dedica to see the difference that makes in taste. I have a weird idea that you may find interesting/worthy to try: In a previous video you mentioned that the thermoblock is far away from the group head, thus the temperature instability. If we somehow replace the plastic water tube with a metal one (that retains heat better than plastic) could it improve the stability?

Hey Theodore, thanks for the kind words! All the machines I have opened up until now transfer the water with some kind of plastic tubing. Maybe because it has to be flexible. Does somebody else have a good idea?

@@TomsCoffeeCorner Maybe wrapping some sort of isolation around the plastic tube would help similarly as tube in car engine rooms sometimes are wrapped? I have just bought a dedica second hand and I can't wait to start tinkering with it getting the most out of it. Love your videos.

@@sjurursteinholm5368 Yes a wrap could work. But there seems to be some discrepancies in the results. Many people say the Dedica is not hot enough, others say it gets too hot at its peak. I would suggest experimenting with different beans, and the temp surfing first, then hacking. Cheers!

@@TomsCoffeeCorner I may easily be wrong about it, but i think the commercial machines have metal tubes, not plastic. Maybe replacing a (large) part of the tube with metal, but i dont know which end, the one on the pump or the group head. As it seems from your experiment with the temp sensor, dedica does not get over-the-limit hot, it just significantly drops some degrees when brewing.

I think so, yes. Neither of them have a steady temp curve, but I prefer the result the ECP offers.

I use this machine too. Unfortunately i dont have better grinder for it so if i use my grinder, and use 15-17 g of bean it pulls sooo fast (like only 10-12 sec without preheating) and i can’t grind any finer. Any suggestion what to do? And i temp it as hard as i can but still i can’t make the flow slower. Because my pull always so acidic, i’m at loss now, i only ever got it right once somehow smh…

I got a Kottea CK150S two weeks ago and so far I've been pulling espressos that taste a bit acid and sour, not on the first sip but in the last 2/3 sips. I suspect that pulling at a too low temperature can be the problem of the bad taste so I tried the hack from this video. By doing this hack I can feel like the water is hotter but I´m still not sure if it´s enough. I mean, I´m able to take sips as soon as I pull the espresso, it´s not that hot that I need to wait before I start to sip. How is it for your machines? Do you need to wait for the espresso to cool a little bit before you take a sip?

Hi Joel. Well the brew water should be at 92 degrees C, but by the time it makes it through the puck and into the cup, it has cooled down quite a bit. I would say you can sip right away, but with a little caution. It should be pleasantly hot. But anyway, cheaper machines have a hard time extracting at high enough temps, and stable temps. Do you warm your espresso glasses ahead of time? That helps a lot for avoiding the cool down of the espresso too quickly. Cheers, Tom

Hi Tom! Seems like brewing temperature stability is not Dedica’s strongest side :-) I wonder how stable is the brewing temperature of the boiler coffee machine. Did you compare it to your Gaggia Classic?

Hi. I have been using this machine for many months and have been getting nothing but sour shots from it, no matter what I do. I don't have the same tools to measure but the hottest temp I could get out was around 75C on the hottest setting. Could the machine just be faulty?

Hi there! Well, it all depends where you are measuring. I measure higher values than that, just above the puck. But by the time it makes it through the puck and out of the portafilter, it has cooled down of course. Admittedly, this machine is lacking a bit of heat. I think the best thing you can do is use dark roast beans, which lend themselves better to lower temperatures. Light roasted beans need high temperatures. Hope that helps! Tom

Ok that makes sense, I would run shots on the lowest temp setting and I would get even dark roast tasting sour.

I always use max, but I don't always use the steam mode hack. I honestly think it's better to completely pre-heat the portafilter (sometimes I dunk it in a cup of hot water). The steam mode hack is good for trying to extract light roast though.

Why not measure the temperature as it fills the shot glass? The thought of that probe wire crushing the seal hurts my head. 🙂

Well the liquid loses temp so fast coming out of the basket. It's also hard to keep the probe aimed properly. Lastly, if you hold it in the glass, it will read different temps at different heights within the glass. The group head is the most accurate place to put the probe, because that is where the extraction is taking place. The group head and gasket are still fine - just the temp probe is starting to look rough. Cheers!

Is it me or what ? - the normal med temp was lower than the normal low temp and the hacked higher temp was lower than the normal high temp - so the results are really crazy here

The temps do waver a bit, but in general the higher temp is still higher on average than the low or med temps. The hacked temp starts higher, and stays higher throughout the extraction. Cheers!

That is not the proper hack. In order to obtain the proper temperature you have to first run a blank shot with the empty portafilter in. After that, immediately press again the double shot button and let it run only for the length of the preinfusion. Then when it pauses stop it. Then repeat the last step and wait about 1 min before brewing. That is how you obtain the perfect temperature. Take a look here for the measurements: kzfaq.info/get/bejne/g9CqqM2Z2su8gXU.html

Thank you, Christi. It looks like we ended up with different results however. I never reached that peak of 104 degrees…more like 88-92 depending on the setting. Check the graphs in my video for reference. It would be interesting to know how they tested the temperature. I know they are Profis, but it would be good to know how we ended up at different results.
