All these mods where tested on Minecraft 1.16.5 using Java Edition, and some are for Forge, some for Fabric and some will work for both.

I reccomend checking out AsianHalfSquat's channel then, he has a series called mods you've never heard of, along with generally showcasing a ton of different mods, main for forge

6:25 this mod is highly configurable : loots, size, even blocks that are used to build the castle itself !

There's a weird mod for forge called Drop meat and it makes ALL passive mods drop meat that can be cooked. It makes sense but holding wolf or ocelot or horse meat is not the same feeling than hold some beef or pork chop.

KZfaq added a new sync feature where they automatically sync subtitles to audio, which saves a lot of time!

RPGZ destroys all mob farms, it would be better if it had some sort of harvest minigame that gives you bonus loot when taking apart a mob. sorta like farcry, you can skin a zombie to get more zombie flesh, maybe harvest it's organs to infect villagers or cover yourself in it to hide your scent from them like the walking dead. maybe you could have a surgeon simulator style game where you have to take apart a creeper to scoop out all it's extra gunpowder and if you manage to successfully defuse it's built in TNT block you can harvest it. putting a skeleton together like a puzzle will let you get all dem bones and a free skull, maybe even add a ribcage armor item for early game, or make it so you can add the ribcage to existing armor to make it look super imposing and boost the durability slightly. endermen you gotta do a pacman style maze minigame through it's guts to find all the pearls. the ender dragon can drop it's lungs which you can place as a block to generate dragons breathe, milk a ghast for it's tears, a frogger minigame to steal all a blaze's rods, whack a mole shulkers, ect.
