You went to the worst chain shops in Milan, you should go to Florence for schiacciata, in Romagna for piadina and pretty much everywhere in the south for panzerotti.

Italian here All Tourist trap guys . 1 if u want a real schiacciata you need to go in Florence 2 if u want a real piadina you need to go in emilia Romagna ( Rimini , riccione , Bologna , Forlì , Ravenna )

Antico Vinaio has been so spread out over social media that it's not worth the lines of tourists you have to wait to get a sandwich that you can get at other paninotecas/schiacciaterias. You can get the same or better sandwich at other places without having to wait 40 minutes. Same goes for Luini, it's ok, but you can get the same quality panzerotto literally next door to the place.

Piadina is typical of Emilia Romagna region (north-central and eastern part of Italy). The one you can find over there is frankly uncomparable! Panzerotto was born in Naples, it can be both fried or oven baked.

Panzerotto is from Apulia, here in Naples for panzerotto we mean what in other regions is called "crocchè" is like a deep fried potato nugget.

Just for info none of those are typical Milan food: panzerotto is from Puglia region, schiacciata is from Tuscany region and Piadina is from Rimini's town. But it's ok ❤

My favorite is French, and I think our gastronomies, perhaps with Japanese, are the only ones being that diverse, which is especially outstanding for such small countries (vs China, India, etc.)
