This guy is an absolute legend, I've been brewing coffee at home since 2017, at first when I started I thought it was gonna be a simple process, Just grind some beans and pour some water right? wrong! it was way way way more complicated than I thought, Back then it was way harder to find good information on the internet, it was even hard to find a reccomendation for a grinder or wich brewer to use. Right now there's way more information available online, but the thing is, most of the advises contradict each other.. I've made some really good coffee before trying this method, but I found this channel by searching something like, contradicting coffee tips, or whatever, because I was really confused by people swearing by stirring the bloom, or swirling the bloom, or don't touch the bloom at all, bloom for 30 seconds, No 45, single pour, pulse pour, melodrip, chemex, v60, kalita. high tempature is always the best! no low tempature is better. I tried this method, and it has definitely made the best coffee i've ever had in my life! and I don't see my self ever using a bloom again!, my favourite thing recently has been doing a smaller brew, like 14g vs 185. at 88-92celcius

Ahahahah yeah right!! Just make sure when you're wetting the filter you're holding the filter down to the bottom. This makes the prefect set ^.^ Glad this little tip helped!

Thank you for this. Always trying to improve on my technique. Your videos have been great on giving me new things to experiment. Appreciate the time and effort it takes you to make these videos! A lot of people will strictly follow James Hoffmann, Scott Rao and other very popular methods. But using the same technique does get boring in my opinion when you’ve been doing it for a few months. So you’re giving everyone something new to try which is fun, and that’s what making coffee is about too!

Whenever everyone starts doing sort of the same or similar thing in terms of method (which in this case, is pour over brewing technique) i kinda start doubting. This helped. Thanks :D

Wonderfully interesting. I would have liked to have seen the complete pour over process from beginning to end-to see how quickly the water is added and how soon the pour has reached the walls of the filter.

indeed. I have been playing with your recommendations for the last 6 weeks or so and so far I get a much better cup, with much less pfaffing around. I can't do it exactly as you describe in all cases (eg I have a medium roasted peruvian that develops such a thick foamy "head" that I can't get it to spin no matter what I do) but even so, I still get better results than I have with other methods. It's like a revelation!

I think your technic with no bloom works better when you have good water flow control. If you don't have good water flow control, I think it is hard to have a very slow but continuous water flow. I am using the Kelita wave drip kettle, it took me a while to have good water control. Another thing I found out with my pour-over, the water temperature has mattered the flavour. I try to use 80-85c when I want more sweet and fruity flavour and 85-90c when I want to have a more roast, dark, strong flavour. I enjoy having more videos to talk about how to play with the pour-over technic.

Glad it got you thinking about your different brew techniques! Yeah, for the single pour you have a very short amount of time to make sure everything is perfect. So it takes quite a bit of practice/skill to actually get the technique down. It seems simple at first, but it is quite complex. As for the water temperature, are you using medium dark roasts? That maybe why, you can also wait a few minutes after the brew is finished and you'll probably have a sweeter flavour at a lower temperature (of coffee)

@@TALESCOFFEE I think I start to enjoy to practice to control the water flow. For the temperature, I tried with dark roast, medium and light roast as well, I think the at least I feel even with dark roast, if I use 80c, I will get a little more fruity flavor.

@@TingTingStudio with darker coffees you should always use a lower water temperature. For lighter ones you can use higher and if you wait till the coffee is a slightly lower temperature to drink then it'll have that same fruitiness!

All 5 are important setting the filter/grinds or "the theater"and number 4 seem to have the majority influence the other three supporting actors lend repeatability.

The filters on my V60 02 sit well in the brewer, no need to hold them down. Been working on the single pour, almost there!

Hey! Thank you very much! For me, when I don't bloom I definitely use a finer grind. I've been using a medium fine grind, like a little coarser then turkish (that's just like powder) so you want to see like fine grains like .. salt? I guess ahaha

Also, on a V60, the rifling, or ridges, that the paper sits on are curved such that they support a clockwise pouring motion to support the flow rotating clockwise...

Yups for sure! People still are used to pouring clockwise or because they're a lefty they also have that tendency. I think the ridges are for the water to move clockwise, but for comfort reasons I don't say it's the only direction to pour. You can still get a nice flow counter, just it is not as good (agreed) ahaha.

Thanks Vincent for your videos and method - am loving the results but also I’m having more fun brewing and practicing the technique? Would love your thoughts on how you would “dial in” your brew or a new bean. What variables would you consider changing one at a time, or which ones do you think have the biggest impact on a brew? Eg would you start with water/coffee ratio, and what changes would you expect to see in the taste going up or down? Grind size? Pour speed? Final pour in middle or outside? Stir short or long? Could also be a bit of a troubleshoot guide eg if coffees are tasting like x or y, try doing z Thanks for the purposeful technique dude and for being so active on the videos and responses!

So for me when I dial in I have a set brew method that I have as my base. After that I decide based on what the gases are telling me I change the pour speed and water temperature. I never change grind size, it’s all in the pouring technique!

@@TALESCOFFEE any ideas on solving a smoky / strong taste? It’s definitely something in my method but I’ll bow to the master! Got the technique nicely on the window, still getting my grind dialled in to your recommendation but think I’m close - maybe increase water weight? So close!! Made an insanely good decaf v60 the other night that literally tasted of sweet hazelnuts! Nailed the tasting notes.... but can’t recreate it so tells me I need more technique practice or maybe it was water temp!!! Argh 🤣

Oof! If you’re having issues in the smokiness then I would definitely suggest dropping the water temperature!

Also had my first super gassy bean v60 this morning - totally see the difference and can match what you’re talking about in your technique videos better! Excited for next video 😅

Great great video! You said you brew most of the time with not more than 91°C. In which cases do you go higher than that? And how do I know if a coffee is usable for a certain brew method?

If I am able to pour really really slowly, for example when I use my timemore kettle I get this amazing pour control and the the pour is very thin so it doesn't cause any agitation at all.

That coffee though comes out extremely heavy and rich, so you would want a 1:15 or 16 with it.

Thanks for your sharing. I tried your technique and started pouring slowly at the center, the grinds always swell like a cake (swell more for newer beans) at the center then slowly gets bigger and extend into wider diameter ( however in ur video the bed didn’t swell much) then I started pouring in bigger circle to push the outer grinds down. Is it normal or I should use lower water temperature so the bed will not swell that much? Thanks~ (I am using 88C water)

what tempature are you using? and maybe the beans are "too new" or maybe the beans are naturally processed?

Oof, you might be using darker beans or like super new beans so you might have a bigger mound. If you pour without letting droplets his the coffee as well you're less likely to get a very big mound. You can always send me a short video of your pouring via DM to our Instagram - @tales.coffee

@@gunnarbjarkiii it could be his pouring technique, if he's dripping his water in there as well it can cause a lot of agitation to cause a lot of swelling as well. Will probably have to see a video of it to really figure this one out :X

I was actually surprised to hear that the paper filters with the V60 dont fit the cone because i have never encountered that with mine. I have tried various filters from the original factory in japan as well as the ones from europe and they all fit perfectly.

Oh really! Ours is from Japan and so are our filters 😂 like they fit alright if I don’t fold perfectly but if I fold down the edge it just never seems to fit quite as nicely >.

I've been noticing you go back to pouring in the centre recently. Is rule 4 still valid?

Ahhhhh this is a great comment. Ok so the rule has kinda changed now because I noticed the first 30 seconds of a pour don’t cause much agitation, I guess you can go back to the middle once as long as it’s before that time. . The thought where the agitation is high from moving in and out a lot is still true though. Generally I do back to the middle if it’s fast enough, I just hit the sides to get everything wet first but going back to the middle just to lift all the floating grinds. But once it floats I move to the edges and sink the rest and never go back to the middle because I aim to sink everything by the time I’m done pouring. . Where as in this video I pour down the side to hit my desired amount, it’s a bit dated I’m timing the outside pour movement to match the sinking of all grounds now!

You’re probably using darker coffees, which is fine don’t worry about it! We have a decent amount of those here ourselves. I personally enjoy a very deep but just under bitter flavours myself!

The method works for kalita as well. If you watch some of the other videos I’m just not a big fan of flat bottoms. It works. But ty

Hey!!! So agitation causes them to sink. It’s not that we say don’t agitate, just we need to know when and how much to agitate!

Hey! From just the pouring alone? You have to lift on the farther away side and press a little lower and faster when you're on your flowing side. This could be complicated but when the spout is against the direction you're moving pull up and speed up that side faster and then push deeper and faster on the flow side

Oh I love the 01! It's teh best for pouring super slowly actually. I use a bit more meovement but it's all about the same really. Just pour closer and you'll get a more gentle pour resulting in a sweeter taste!

@@TALESCOFFEE I have been doing a hybird Osmotic Singlepour with good results. Most of your single pours are in a 02 format and finish under 2 minutes ! Pouring slow not to overwhelm the -01 I am closer to 3 minutes!

I would bet this guy a gazillion dollars in a blind taste test that he couldn't tell if the water was poured clockwise or counter clockwise. Likewise, if the grounds are flat or cone shaped or water poured outside to inside no way on this earth.

Hey man, you're definitely right. I'm just saying that these are techniques that I personally follow. Though pouring clockwise on the v60 does make a difference because of the groove direction. It doesn't necessarily make it taste different but it's just the small things we do that we think make our coffee better.
