Torai / Nenua / Sponge Gourd ki Sabzi
Main Ingredients

Torai - 1 kg
Soaked Chana Daal - 1 tablespoon
Cumin Seeds - 1/2 teaspoon
Dry Red Chilli - 2 nos
Turmeric Powder - 1 teaspoon
Chopped Onion - 2 nos
Rock Salt - as per taste
Mustard Oil - 2 tablespoons

Wash and peel the nenua (sponge gourd). Cut them into small pieces. Chop the onion into small pieces. Heat oil in a pan on medium heat. Add cumin seeds and dry red chilli and let them splutter. Add the chopped onions and sauté until they turn golden brown. Now, add soaked chana daal and saute for 5 mins. Add the chopped nenua pieces. Add turmeric powder and salt. Mix well and cook for 2-3 minutes. Cover the pan and cook on low to medium heat for about 10-15 minutes or until the nenua becomes soft. Stir occasionally to avoid sticking to the bottom. Serve hot with roti, paratha, or rice.
