You can watch how traditional tahini halva is made in this video.
this is the best halva manufacturing in the city, the sign says 1870
plain tahini halva, cocoa tahini halva and pistachio halva available
In the first stage, tahini, the most important ingredient of tahini halva, is prepared.
Sesame, the raw material of tahini, is roasted and crushed in the machine
Tahini is the crushed form of sesame, that is, sesame oil, it does not contain any other substance.
tahini is added to large and deep pots
adding vanilla and mono and diglyceride fatty acids
It is a substance used to facilitate the formation of emulsions.
cocoa tahini halva will be made by combining both plain and cocoa halva.
adding cocoa into tahini, the cocoa will be mixed until it melts
Granulated sugar, that is, beet sugar, is used for halva,
sugar, lemon salt and glucose are mixed in this cauldron at a certain temperature for half an hour
lemon salt, sugar are transferred to the whisk machine
The juice obtained from soapwort root is added and whisked and foamed here.
This mixture will merge with tahini and mixing will be done with a large wooden spoon.
The prepared hot mixture is added to the other cold mixture in a measured way.
The same mixture is added to the plain tahini
one person mixes with a large wooden spoon, turning the ingredients upside down and mixing them
the cocoa mixture is mixed in the same way, it looks interesting and beautiful
The mixture needs to be mixed for 10 minutes to take the shape of halva.
During the mixing process, measured amounts of tahini are added to the pot.
takes thin and long shapes as they mix, thin threads began to form
The halva with cocoa continues to be mixed and the same way tahini is added
When it reaches a consistency that cannot be mixed with a wooden spoon, it is started to be mixed by hand.
Such a support is added to the bottom of the pot to facilitate mixing.
At this stage, the mixture started to have the consistency of halva.
mixed by hand in a cocoa mixture
It's time to combine cocoa and plain tahini halva
A piece of halva with cocoa is plucked and added to plain halva and turned over
You may have thought for a moment that it would be poured on the ground, this pot was made for this job.
The halva with cocoa is added piece by piece and rolled into one another
After opening a piece of it, cocoa appears and we can say that this process is ok
mixed halva ready to be packaged, checked for the last time
Tahini halvah is added to 5 kilograms of plastics on a scale
A piece of paper is added to the packages to prevent moisture and the halvahs are cooled
Prepared in 1 kilogram or smaller packages
The halva packs are left to cool in this way on a shelf
We thank the employees for sharing the secrets of tahini halva with us.
If you buy tahini halva, remove it whole and cut
We now know how this mottled shape is formed
How to eat tahini halva, of course, this is my choice, just how do you eat it
Slice the halva, spread milk cream on thin filo pastry
Add the tahini halva and add walnuts then wrap the thin bread, bon appetit
Put the halva in its bowl after use, add a piece of paper and close the lid.
the paper will prevent moisture so the tahini halva will stay fresh #tahinihalva #Makingtahinihalva #halvawithcocoa

Any links to a scaled down recipe I could attempt to follow at home? Have tried this with just Honey/Tahaini and ended up with Tahini fudge rather than the crumbly delicious Halva.
@ChefSalimRecipes
@ChefSalimRecipes 2 жыл бұрын
Turkish tahini halva is like this, so it doesn't crumble, Can be made at home with the same ingredients, Can be made at home with the same ingredients, 1 cup of powdered sugar 2 fingers missing tahini from 1 cup 2.5 cups of flour 5 tablespoons of butter Pistachio FABRICATION First, melt the butter in a pan. Then we add flour on it and fry it for 10 minutes, add powdered sugar on it, and fry it for 15-20 minutes on very, very low heat. Of course, in the meantime, we roast the pistachios in another pan, while roasting, we crush the peanuts a little bit. After roasting for 7-8 minutes, we add the peanuts to the flour mixture, then add it to the tahini and mix well. We fry it like this for 7-8 minutes and add a bag and add the mixture to any mold in order to be able to remove it easily later. We leave it to cool outside. After cooling, we add our halva to the refrigerator and after a day you can take it out and serve it by slicing. Bon Appetit.

Hello, nice video! I have question. How to make soapwort root juice? What is name on turkish soapwort root juice? What temparatur need to be when cook socker lemon salt and glucose? Regards and hello from Serbia!
@ChefSalimRecipes
@ChefSalimRecipes Жыл бұрын
What you need to do is to soak 2 soapwort roots in water the night before and boil the water. After boiling the water, add powdered sugar or granulated sugar and whisk with the help of a mixer until it becomes thick. It is sold under the name of Çöwen Water in Turkey. I don't know the temperature exactly, the fire is burning at the bottom, they cook it that way 👍
