Nothing as been as numerous and difficult to fish through as ladyfish. Yes I know they make great chunk bait, but Dan from Sushi Everyday ( / @sushiwithdan ) had me swing by his house to prep up some ladyfish.
They are loaded with bones and extremely slimy but Dan showed me an interesting way to get the most yield and least bones out of this fish. Thanks again for another excellent collaboration that was pretty eyeopening.
Also some speckled trout were caught this day too!

EliasVFishing what other fish you can do is bone fish , hears one for I learned long ago from my friends mom , what do I do with a fish that has so much bones well you scale it gut it now from the tail start to fillet up to 2 to 3 inches up toward head stop don’t cut no more next get a pie roller start up from cut roll towards tail do again but farther up toward head roll towards tail little by little you’re pushing or squeezing the meat out do again till by head an then flip fish do again same thing hope u undastand my funny kind English lol

That was a lot of fun. It’s always interesting to see people’s first response to eating Ladyfish. It’s like their mind is telling them “this is trash” but then they’re utterly shocked by how good it is. If we had more time, there are more ways to make it - Asian fish ball soup (Japanese Oden), deep fried bitesize patties, or even fish burger. Until next time!

Aloha Elias, all the local people here in Hawai'i eat Ladyfish or as we call them here 'Awa'awa (ah-vah-ah-vah) prepared in a similar way. We like to freeze them first and when they are thawed they are nice and soft. We also cut the head off then butterfly them from the back down to belly so you have a nice flat surface with the tail still attached as a handle for when you spoon the meat off. We also prepare Bonefish (O'io) and Milkfish ('Awa) in the same way sometimes mixing the flesh of all 3 species. I also prefer to add some water to the mix about 25% to 30% ratio to the flesh to make the fish cakes softer less rubbery. I'll also break a large egg into the mix. I like to add chopped water chestnuts (canned) for an added crunch. Ladyfish, Bonefish, and Milkfish all considered delicacies in the islands. They are even eaten raw mixed with chopped onions and tomatoes in a dish we call "Lomi Lomi", very delicious. I'm glad you got to try it. Remember to add some water to the mix for a more tender patty.

Hi, wish you all a healthy, delicious, nutritious and peaceful life. I am from India and today i bought Lady Fish for the first time along with some red snappers because they were the most fresh of all in the fish market. Lady Fish was really cheap and i had the doubt it will have many bones. So before cleaning them i wanted to do a study and your video was perfect and wholesome. Fantastic work on the fish, cooking, and the collaboration was great and the video just what it has to be: nothing more nothing less. Thank you guys.

What a great collab. Dan is a pro through and through, notice how light and airy those "fish cakes" turned out...you can't overwork the mixture, and you need a light touch while forming/frying these patties. A lot more finesse required than it appears on camera!

Nothing with that exact texture comes to mind...maybe bunker? haha Elias can tell you about that! I'm thinking about a pike/pickerel quenelle dish...sort of like a fluffy fish dumpling. That you can mince in the food processor tho!

Wow goes to show every fish when treated right is edible. We make ceviche out of carp here on the Texas-Mexico border along the southern half of the Rio grande and I've always heard good things about it.

Funny thing is, most “trash fish” don’t taste trashy at all. Some have a different texture but the flavor profile is usually pretty decent.

I chartered a fishing boat in Ft. Meyers years ago.It was a fussy captain who insisted that Ladyfish would crap in/on his boat when landed...wanted to de-hook them himself over the side of the gunnel...we went along for awhile but he was so annoying & crabby... after a while we started bringing them on board.He ranted at us but we ignored him.He didn't speak to us for the next two hrs.He headed back at 12:00 exactly and received no tip.

Btw these fish are great for fish sauce and seafood stock it's a mild flavor you can spoon it off and make fish patties while boiling the bones for a fish sauce to go over it it tastes amazing

Its exactly as the dude says. first time i caught them i left them two days on the fridge. my dad told me to use the spoon method and came out very very easily.

We cook choupique and gar the same way. Except no carrots. Choupique is what we call a bowfin in Louisiana. Choupique balls and gar patties are a favorite amongst lots of Cajuns

we gets lots of them here too (south east asia) and we generally dont eat them because of the bones. didnt know you could peel the meet off like that...good to know :)

Elias, nice job with the video. Agree with Roger's comments on not over working the mixture to keep it light and airy. It really is amazing when you travel to other areas and see which fish are basically disrespected and considered to be garbage fish.

Anything fresh caught and cooked while still out fishing: We usually cut off fins, remove guts and gills, wash really good and make sure the dark blood is scrubbed out of the inside where the spine is, leave scales on (to protect fish from sticking or burning- we peel off the cooked skin w/scales and throw after). Rub inside and out with spices and salt, maybe stuff with onions and garlic and spices- then throw it on a hot grill. I mean, we dont worry bout if the fish looks like a fish when you eat it lol. Just peel skin and throw it away, the fillet will be in front of you. Peel that off, pull the tail and it'll pull the bones out naturally and expose the other fillet.

Here in Australia we call those Giant Herring and they are top notch bait for catching Mulloway (one of the most elusive and sought-after fish you can catch in Australia), so if you haven't tried already, you should try using them as cut bait to catch some big fish.

I'm fairly sure steamed ladyfish fish balls are a commonplace dimsum item, as every dimsum place I've been to has them. They even sell them in supermarkets as ladyfish paste for a couple dollars per pound.

I've been thinking about canning them like sardines. Pressure canned for like 90 minutes I'd think would soften the bones and make them quite edible. Idk, just a thought.

I'm a little surprised and a little not surprised. I always thought lady fish was a true trash fish but I'm not surprised because there are people out there that will prove you wrong again and again if you say something can't be done and Dan just did it. You ought to try that with herring when you get back home or some other similar fish.

When I last went to Naples FL a few months back, I caught one. I stopped at a Peruvian place for take-out in Ft Myers and gave it to a lady there. It was not till later that I found out it was a BIG trash fish lol. But I guess it's not so trashy. As long as preparation is good, most fish are edible. Proof is right here! Btw, Eli...still living it up in Fl? If so, what's the current fishing spot?

Someone gave me 2 big lady fish take home. I fillet the fish and I try to scoop out the meat. But really hard this time. But why do? Should I wait for the next days so the meat easy to remove?

So Elias, would you suggest Ladyfish to someone that can't stand the smell of fish? I for one am that person, I can't STAND the smell of fish or shellfish, it keeps me from eating it. If something doesn't smell appetizing to me, I sure as hell ain't going to put it closer to my nose/ in my mouth. I think part of it likely comes from fishing on Guam and smelling the squid that sat out on the rocks in the blazing humid sun all day when we used it as bait, and then smelling the fish on the docks in Mississippi... after that I stopped eating fish, other than canned tuna. I will say I did try cedar plank baked salmon last year and it wasn't too bad.. other than my dad bought the plank at the hardware store and it was toxic yellow cedar... Luckily I ate such a small piece it didn't bother me, my parents were sick for days with symptoms akin to food poisoning. Might be interesting to pickle them like herring btw.
