100% Authentic Bolognese (Officially Certified Recipe)

B is for Bolognese
This is the updated recipe for Bolognese Sauce, submitted by the City of Bologna to the Italian Culinary Academy in 2023.
There ARE some tolerated variations in addition to the most classic recipe that I chose here, so just look up “Accademia Italiana Della Cucina Bolognese” to find the complete list of acceptable variations.
THE RECIPE:
Extra Virgin Olive Oil
150g Pancetta (Sliced)
60g Onion (Finely Diced)
60g Carrot (Finely Diced)
60g Celery (Finely Diced)
400g Ground Beef
120g (1 Glass) White (or Red) Wine
8g Tomato Paste
200g Tomato Puree
240g Vegetable Broth
120g Whole Milk
Salt and Pepper (To taste)
-Melt the Pancetta in a Heavy Non-stick 10in (24-26cm) enamelled cast iron pan.
-Finely chop by hand (no food processors allowed) the onions, carrots, and celery, then let those sweat in the pot on low until soft but not browned.
-Continue stirring with a Wooden Spoon and then add ground beef (a bolognese can have ground pork as well, but it must be at least 51% beef)
-Once browned, pour in wine to deglaze (scrape clean) the pan and cook till completely evaporated
-Add tomato paste and puree and vegetable stock (water can replace the stock, but I find that if you start the stock with the vegetable scraps from you finely diced veggies, it makes a pretty decent stock in the time it takes to cook the meat and veggies anyway)
-Simmer with the lid on for 2 hours, adding the milk halfway through
-Only after fully reduced to a thick meat sauce, add salt and pepper to taste
Enjoy with fresh tagliatelle, or in a tasty lasagna, or however you like your bolognese

I’m amazed at how simple the original recipe is, no herbs, no garlic. I also thought there had to be a ratio of pork, veal and beef mince. It’s actually quite refreshing to see the simplicity of it

Food discourse has been so broken for so long that so many people don't seem to believe that ingredients can actually have plenty of flavour of their own, and while tactical addition of herbs and spices can elevate them, an ingredients-driven cuisine and taste profile is *not* worse than a spices-driven one

It's a common misconception because there's this idea that all Italian food has loads of basil and oregano. But that's not really what bolognese is about. It's not meant to be fresh and springy, it's meant to be rich and savoury. I have to say I've never heard of veal in a bolognese, possibly someone confused cotoletta bolognese with the ragu?

Authenticity in Italian food is often a race to the bottom in terms of how much and many seasonings are used, to the point where with certain dishes and circles there’s intense dispute over wether or not you should even *salt* them.

What is even more interesting about this dish is how one little detail turns it from ok to god class food. In this case it's the soffritto. What all those videos tell nobody is that a soffritto needs at least 20 minutes. Some even cook it much, much longer. If you roast those veggies long enough and let them slowly caramelize a completely new flavor will come out. Its even better if you slowly caramelize the meat, too(in a separate pot). The first thing that happens is that water comes out of the meat. Until that water is out you simply cannot caramelize it properly. Only then the meat starts to get caramelized. The grain of the mince will no longer stick together but become individual and you notice a very specific sizzling. Without this steps it will not taste even remotely similar. You can cook your mince and veggies for hours and it still will not taste anything like the original. And it really shows how a simple dish tastes completely different, with the same ingredients but the right technique.

Yea not 100% sure but considering there's some pancetta in this recipe which is cured pork that it's only necessary to use beef. Such a good simple recipe though I love it

I read some of the comments and I saw that you received a lot of hate from Italians in the others italian food videos. As an Italian I’m very sorry, unfortunately puritans of food here are a plague, even italian food bloggers and internet chefs receive a disgusting amount of hate for proposing slightly different versions of traditional recipes. Even being an Italian person that was born and raised in Italy won’t save you from these a**holes, ignore them and keep doing what you do, your food looks amazing.

People don't understand that Italian heritage recipes were different because every family made things different. My Mom passed down a simple family recipe that I can't find anywhere online, and those nuances are what makes a heritage recipe so good.

I like to think Bolognaise sauce is a guide as well as a solid recipe. I've made it with bacon as well as panchetta and even without and all 3 were fantastic in their own right

I've been making my bolognese similar to this. I had searched far and wide for a few years on how to make authentic bolognese (I'm not Italian, but it's my favorite cuisine). After a lot of trial and errors, I finally got it down. Now when I make bolognese, I make it from scratch! Nothing like it!

Not only does milk add a rich flavour to the bolognese, but it also helps cut through the acidity of the tomatoes and red wine. It also makes the mince meat nice and tender, creating that melt-in-your-mouth deliciousness.

I found a much quicker way to make this dish - I left out the pancetta, the beef, wine, tomato puree, oil, carrots, celery ,onion & vegetable broth. I tried the low carb version, so no pasta. The empty hot pot kept the room warm but I didnt find it very filling or tasty. However ,I did lose a lot of weight !

I am appalled at the mush served, even in restaurants, that purport to be Bolognese ‘sauce’. It’s so easy to cook the authentic version and it tastes sooooo much better. (You won’t like this but you need to use a min of minced beef with a min, minimum, of 10% fat, ideally 15% fat. You can skim it off after cooking but it adds so much flavour.)

Ah, I remember my trip to Florence last October.. Our flight was delayed by one day so we had to stay at a roadside hotel in Bologna. We saw that it had a restaurant and decided to have dinner there. I had the tagliatelle bolognese. Absolutely amazing 🤤

very similar to how we've always made it at home, apart from the strange black pot, 😊 and the obsessively chopped vegetable cubes, (in a good way!😂). very nice and modern video format, can't wait to see the next one!
