Tripas and chorizo tacos

Grilled Tripas tacos and chorizo tacos, topped with a fire roasted guacamole salsa. Cook your Tripas (cow intestines) until crispy, flipping every 2-3 min. Add lemon juicy towards the end. The chorizo cook it until 165 internal temperature. Have you ever had Tripas?

3 tomatillos
1 tomato
1 serrano ( add more for more heat)
1/4 onion
1 tbsp apple cider vinegar
Juice of 3 lemons
2 avocados
1/2 bunch cilantro
Salt to taste

I remember my family cleaning tubs of tripas with a hose in the backyard. If you didn’t grow up eating them it’s kind of an acquired taste tho. I know my Asian homies love Tripas and Cabeza tacos

There is 2. A weber grill is good and inexpensive and one that does a lot is Masterbuilt gravity fed smoker. Both are great grills

Yes, but instead of boiled in a broth Mexicans will grill them or fry them. I recommend them fried in a burrito or a taco with your favorite salsa. Some folks just eat them right off of the grill with lemon and salt. Some folks eat them straight out of the fryer just like chicharons.
