The curry sauce is gravy with Indian curry powder. The chips are prepared in the chipper from fresh potatoes. All traditional chippers serve homemade chips. The cod was fresh and battered that day. Most early Dublin chippers were ran by Italians, who had very little English. In one establishment, the wife would ask customers ‘Uno di questo, uno di quello?’, meaning ‘one of this and one of the other?’ In doing she helped to coin a Dublin phrase, ‘one and one’, which is still a common way of asking for fish and chips.

When I was a kid (a while back) Burdocks' stove was turf fuelled, and the fish and chips were served in newspaper. The slightly smoked flavour from the stove was incredible. The original shop burned down and newspaper ink was found to be carcinogenic, so now it's a standard fryer with generic food-safe paper. Because it's so busy, serving hundreds of portions a day, the food is always fresh. It's still the best fish and chips in Dublin.

In the late 60s and early 70s, when i was in my late teens the pan was coal fired. every time you went in Brian Burdock was using his apron to wipe the perspiration from his eyes and then he'd take a swig from a pint of Guinness from next door. It was warm in there. The fish and chips were incredible. Never tasted the likes anywhere else. I moved to Australia over 30 years ago and every time I came back for a holiday I'd visit Burdocks. I live in Kerry now so a bit closer. Will visit soon.
