As some of you might know, I'm not the best cook. It's something James May makes fun of me for fairly often. But I am trying to improve, and to do that I've been working my way through James' cookbook. Today's recipe, stir-fried chilli beef.

my wife got me this cook book for our anniversary, and i made the cottage pie for mother's day and my wife and kids LOVED it!! great stuff! so glad to see you cooking again! you and james are a treat!

Very chill, actually exactly why I like videos with James. Just to the point, calm, no need for noisy hard cuts or shouting how amazing it is - just you being you. I really enjoyed this! Maybe after more experience we could see the most relaxed cookoff on the internet, we would all be winners.

We requested quarterly or twice yearly cooking vids. This is exactly what we were talking about. The video was great! The salt came from the soy sauce, so you didn't need any extra. Crushing garlic does make it easier to chop, but it also breaks the cell walls, releasing some enzymes (I think?) that contain the garlic flavor. Again, thanks for the very enjoyable video! :)

Much though this was an informative cooking video, I really miss you travelling around. Now that you don't work for Drivetribe, you could travel again, just without having to cram everything into a day or having to ask strangers to film you and without being unprepared (clothing-wise) for the destination. You could go on a slightly more reasonable budget, rather than a rock-bottom budget. All trips using a smaller suitcase/larger travel bag - no squashing everything into a rucksack! People would trust your opinion and we'd all enjoy watching you discover new locations. I really enjoyed your other trips.

I gave up on stir fry years ago because,like she said, it was tasteless. Having recently purchased a wok I decided to try this recipe. It came out pretty darn good. I’m proud of myself and grateful that James May did this cookbook and that Lucy Brown did this video. I did change the recipe slightly but it’s really good and pretty simple to make.

For ginger I keep it whole in the freezer, then just grate as needed. No need to peel, chop, crush or have ginger go off.

Honestly like to see you cook, because you know what you like, and you know but push your limitations. I've mainly seen you on Jameses vids, but always enjoyed you challenging what he was so sure is great. It amazing :-)

I think soy sauce is plenty salty and ginger is giving heat similar to black pepper would. Love the bacon and egg shirt.

Hi Lucy! You did well enough to make me hungry. I make that exact same marinade also adding some honey. Slice the meat thin and grill on a skewer. Works great with chicken too! Super quick to make and yummy! Cheers!

Great vid. I've been making a very similar dish for a few years (works well with chicken too). A few well-meant suggestions though: the marinade for the meat could include a teaspoon of cornflour with a couple of tablespoons of water (the difference is significant). You definitely did not use too much oil initially. The more you cook, the more you will come to know what your own tastes are (for example, your taste for ginger and chilli might not be the same as mine, but you'll only know that from experience - and definitely keep your fingers away from your eyes when dealing with chilllies - I learned that the very painful way). Keep the pan on the heat when tossing the mix. But most importantly, a good meal is one you like and will make again, no matter what anyone else says. Have confidence in what you do, and always blame James if something goes wrong. Good luck and I am looking forward to more of the same. Bon appetit.

I was already super excited when it said you had a new video, but super stoked that it was a cooking video!!! I do have the cookbook, so it is extra fun to see you walk us through a recipe. Maybe you can do one James had in the show and it'll be another "Who did it better" segment 😂

Well done, I will season with salt and pepper on the end of cooking, right before the end, but that’s my taste. I bet tasted great, so great try Lucy for some one who is not experienced in cooking, keep on good work ✌️👍

I need to practice more mise en place, because I always end up running around in a panic and sometimes forgetting something. :D Excellent video, definitely encourage more! As for suggestions, I always struggle with getting a fluffy omelet right...

Nicely done! In this case, the soy sauce is _quite_ salty, so that took care of the salt needed to help accent the flavours of the veggies, as well as tenderise the meat. Sesame seed oil also has a pretty strong flavour, as do peppers, that add to the seasoning. I really like that concept of a Wok Clock; that's a good way to remember cooking times.

The veggies are where the flavor comes from, i think. I used some stir fry veges in a soup, and was blown away by the flavor that it had. I didn't need to season at all. Normally i just use cabbage and onion in soups. But now i think it's worth using more flavorful veggies.

If you add a little Baking soda it will help tenderise the beef aka 'velveting beef'. especially top side beef. A little crusted garlic would have been nice also. Great video. End result looked delicious.

Good effort Lucy Brown, as you said at the end about seasoning, just add a bit of salt to each thing you are cooking to really bring out the flavours (maybe a little msg as well) 😁. I'd quite like to see you cook a jalfrezi curry (dealers choice of meat).

Lucy very good have a tip from me,get yourself a small greater and do your ginger with that also works well with garlic especially when used in the marinade the finer pieces allow more of the flavours to be released good luck.

The soy sauce and sesame oil carry the seasoning for the meat, so additional seasoning would likely make it too salty. Soy sauce has glutamates as well as sodium, so hits salty and umami flavorings. Looks like a really nice dish, and you did a great job!

Great video! The fact you adapted the recipe to what you wanted is how I always cook. The recipe is the idea, the meal is your decision. The seasoning should have come from the marinade, with the soy sauce providing salt / umami flavour. Looking forward to your next endeavour

Nice video! The reason you don't have to season it is in the marinade. Soy sauce is salt and also has umami, where the ginger and chili replace the peper-like sharp taste

Watch the video titled: Cooking from James May's cookbook | Ft. School of Wok on the old FoodTribe channel. It will show you why Lucy had so much trouble smashing the ginger -- she should have hit the ginger with the cleaver, rather that hitting the cleaver with her hand. It's much easier to generate the required force that way. I'm sure the "hit-with-hand" technique could work, but you'd need to hit it much harder than Lucy did in this video.

1:25 use a garlic press (wash the ginger, no need to skin, cut into small enough chunks, be ready to catch extra juice)

10:22 There is actually a fair amount of seasoning in the recipe if you think about it. Sesame oil, dark soy sauce (salt), chilli's, ginger and peppers

Liked this video, Lucy! 😂 would be nice to get a bit more description about the flavour when reviewing the food but otherwise, looking forward to more. Cook something relatable but something people might think is slightly out of their reach. For me, that would be something like lasagna.
