Black rice is often called forbidden rice because, in Ancient China, black rice was reserved for the aristocracy. Its low yield (about 10 percent) means that black rice is still rarer than other types of rice, and the fact that it’s been used for hundreds of years in traditional Chinese medicine makes this rice special, even if it’s no longer for royals only.
Forbidden Black Rice Lager
Recipe specifics:
Style: Black Rice Lager
Batch size: 7.8 l
60min mash @ 66C
60 min boil
OG: 1.050 (I added additional water to get a larger post boil volume, so my OG was 1.040)
FG: 1.010
Bitterness (IBU): 20.5
Color (SRM): 39.3
ABV: 5.0%. (I'll get only 4.0% because I added additional water post boil.
Grain/Sugars:
0.80 kg Gladfield Pilsner, 45.7%
0.50 kg Black Rice, 28.6%
0.20 kg Gladfield Vienna, 11.4%
0.15 kg Black Patent (US), 8.6%
0.05 kg Gladfield Light Crystal, 2.9%
0.05 kg Gladfield Chocolate Light, 2.9%
(use grain % to scale up for a larger batch size)
Hops:
50.00 g Czech Saaz (AA 3.7%, Pellet) 9 min whirlpool/hopstand post boil at 100C to get 20.5 IBU. Then cool to 80C after the 9 mins.
Yeast/Misc:
Irish Moss, 0.5 unit(s), Fining , boil 10 min
Saflager W34/70, 1.0 unit(s), Other
Ferment at 13C rising to 21-22C near the end of fermentation for a diaceytl rest.

Very cool! I made a black rice lager (Czech dark) for Christmas. Even did the decoction with the rice in the mash. Added the dark adjuncts at the end of the mash for 15 mins for color. No acerbic, tart or other acrid flavors! Lagered for 8 weeks. Just clean and sweat. Great video, thank you and cheers.

Brilliant! I'm intrigued by the flavor possibilities of this one. Black rice beers aren't something you see every day. I've definitely never tasted one. Really cool! Cheers mate!🍺🍻

Thanks Skid. I'm only aware of one commercial version in NZ. The black rice definitely has quite a bit more flavour than white rice. A nice sort of nuttiness. Hopefully that comes through in this beer. Only time will tell. Hope all is well with you and your brewing. Cheers mate 🍻

Looking good! I can't resist anything unusual like this. A new Asian supermarket has just opened near me so I may see if they have black rice.

Thanks. I was so taken by the commericlal version I tried last year, that the idea of brewing something similar has been floating around in my head since. I also like any dark beer style, so this is right up my alley. Will definitely do a follow up tasting video. Cheers

Hi Dino. Just ordered up the ingredients for this, going to give it a go at the weekend. Thinking of just doing a 30 minute boil and adding the hops at flame out. Trying to shave some time off the brew-day!

Nice one Dino, should make for a tasty beer. Don't think I've had a beer with black rice in. Great watch as I'm just mashing in myself. A black country mild. Should be around 3.9% if I can get my water volume right for once? Cheers mate 👍🍺

@@tubedinoz The only advice I'd have is that it's better to cook the rice more than if you were going to eat it - over cook it until it starts to go gloopy. I read that somewhere when I was researching how to use rice. It seems to work OK and you get better extraction. You might think that you would get a stuck mash, but I never did. However, I do condition my malt with 2% water before crushing which gives it better drainage capacity, and therefore no stuck mashes.

Looks interesting beer, been wanting to brew a rice lager after visiting Japan and had some good rice lagers. I'm thinking of another experiment with brown rice and green bullet hops and some Wakatu and pressure ferment with Saflager S23. Omega Kviek Lutra might be another option at 30c for 3days, drinking a American IPA with all Centennal hops with Lutra on the hot side of fermentation and that was tasty, will be experimenting with IPA more with this yeast. Lutra makes great lagers as well, ok some would argue Lutra is not a genuine lager stain but to be honest if you want a beer on tap asap Lutra is a good option.

Thanks. Brown rice would be interesting to try too. Probably not too dissimilar in taste to black rice. Great idea using Lutra. Have you tried Lallemand Novalager? I was tempted to give that a try, but it was out of stock. Apparently it gives a clean ferment, but ferments out pretty quickly. Cheers

@@tubedinoz Have read some information around Lallemand Novalager, I think it's a hybrid lager yeast that can ferment at 18c Ale temperature's and good biotransformation and don't need as much yeast to ferment because of the warmer fermenting.

The only way I can describe it is a nutty kind of taste. Definitely a lot more flavour than plain white rice. Cheers
