Tuna Fritters - Cheap Meal for Hard Times - Eat for $1 per Person - The Hillbilly Kitchen
Tuna Fritters can be served in a verity of ways to create a complete meal for less than a dollar per person. Tuna Fritters can be used as a patty on an bun, main course with pasta, rice or potatoes with veggie sides or an inexpensive finger food for get together. They got us by when we were kids and they will get us through now. They are easy fast simple comfort food that satisfies empty bellies and picky pallets. It’s time to revisit Granny’s kitchen for some of her super cheap meals.

1 can Tuna
1 Egg
¼ cup Corn Meal Mix, Flour, Cracker Crumbs or Breadcrumbs
Salt & Pepper to Taste
Oil, Butter or Bacon Grease for frying

My mom did this with Salmon, I believe the can was closer to the size we needed for the family of 6. She used crushed saltines for the filler. For reference my mom was brought up on a farm in York County PA, she was born in 1915, was 14 when the depression started in 1929, married 7 years later in 1936. He was deferred from the draft in 1941 but was locked in a critical job with frozen pay, we were nearly destitute by 1945, inflation was rampant. I learned a lot from her and my dad on economizing. BTW, God is good. We were able to buy 5 acres in 1947, build a home, establish a truck farm and by 1950 things were much better. Weeping will endure for a night but joy comes in the morning.

My family is from Altoona and my grandmother used crushed saltines in her salmon patties too. I wonder if that is a regional thing.

My mother used to make Salmon patties with canned salmon when I was younger. Funny thing is, just before she passed I had asked her for the recipe because I love them. We got to talking and she mentioned the only time she made them was when we were having hard times.... I always thought we only had them when we had extra money lol! My oldest child asked me when I made them for the first time where I got the extra money. I laughed so hard I had tears in my eyes.

My grandmother used to make salmon patties with canned salmon (the cheap kind where you have to pick out the bones and skin bits). Loved them but I can never get him to stick together I always end up with a pile of fried salmon mush. I still eat it but it is annoying.

My mother also made salmon patties. They were delicious. We would have them with boiled potatoes, steamed vegetables or a nice salad. They were such a treat.

Look up commodities in York county, it's a program from the government, for people 60 and over, and they give you a good size box of food and cheese and juice

Gail, is there an Aldi's near you. They have fresh produce and dairy and canned goods at reasonable prices. My wife and I are both in out 70's and Aldi's is a godsend. They will deliver to your door.. We start our mornings with honey yogurt and berries that they have all year round. Strawberries, Blackberries, blueberries and often raspberries as well. Good eating for you especially if you are on a special diet. In the winter we substitute plain oatmeal for the yogurt with our berries. No sugar needed, the berries provide the taste. With a cup of coffee and a piece of buttered toast our breakfast is complete.

The best advice I can give the young ones is never throw any food away. You can always add leftovers and any odds and ends to a potluck stew or a curry. We didn't have a fridge when I was a child in the 1950s so my mother, aunts and grandmothers built their next days meal around anything left over. Very often there wasn't anything left over, but if there was, it was used. Never throw away any kind of fat rendered from meat. If it isn't used in the meal you are preparing, keep it to fry your onions for the next meal. Never throw away gravy, add curry to it to make a rich sauce. If you have anything about to go bad, cook it immediately and freeze the cooked items. If you do that with veggies and they are mushy after defrosting, then use them as thickening for your bean soups. When you peel fresh veg, put the peelings in a saucepan and keep a stock pot on the go all the time. Add bones to it as and when you get them. If you keep chickens, keep the stock peelings at the bottom when they are mushy, add bran and feed to your chickens, they will love it. If you live in an area where you can keep a rabbit hutch in the garden, then raise rabbits. You will never go short of meat! Never throw away old clothes. Either use them for cleaning cloths or save the better pieces to make patchwork cushion or comforters. Or use them to cut into strips to make rugs. KZfaq is a blessing full of craftspeople who can show you how to use most anything to avoid waste and thereby avoid wasting money.

@@pegsol3834 Rabbits don't need commercial food if you have enough greenery and vegetables to feed them. 80% of a rabbit's diet is grass (and hay if they can get it). There is no difference between the dietary needs of wild rabbits and domesticated rabbits. The habit of feeding pet rabbits with commercial feed grew out of two things....laziness of the owners or a lack of greenery. If you grow veg or use a lot of veg you will not be short of rabbit food. Contrary to the popular view, carrots are not a normal food for rabbits. They rarely eat any root vegetables by choice, and should not be fed it routinely in captivity. Likewise with fruit. Rabbits eat flowers for sweetness, and they are not fussy. They will take your prize roses as well as the dandelions in your lawn! They are also very partial to fresh bark, pine needles, twigs and fibrous stems. In areas with a high population of wild rabbits, they can destroy plantations of young trees within days by stripping the lower trunks of bark. My grandparents kept rabbits for food all their lives, and so I used to feed them when I was a child. They were never given bought commercial food.

@@pegsol3834 Flowers, leafy plants, and grass make up the vast majority of what wild rabbits eat on a daily basis and that is what you are aiming to replicate. Captive rabbits are lucky because they get fruit and surface-growing veg scraps without having to forage. I found this list online which may help. We had very well-grown garden and veg plots when we had them so there was always something for them to eat. You may need to plant some different plants in spare corners of your garden, but you will get the benefit of the meat as well as the beauty of the plants! Grasses: wheatgrass, meadow grass, fescue, bluegrass, ryegrass, Bermuda, orchard, timothy, etc. Typical lawn grass is edible for wild rabbits but is less nutritious than wild grasslands. Weeds: dandelion, clover, crabgrass, ragweed, nettle, chickweed, etc. Bark and twigs: Willow bark and twigs, apple tree sticks, raspberry and blackberry bush twigs, birch, poplar, rose bushes and twigs, maple, cottonwood, etc. Flowers: Roses, daisies, sunflowers, marigold, lavender, chamomile, violets, pansies, etc. Herbs: Cilantro, parsley, basil, mints, oregano, sage, thyme, rosemary, dill, etc

I'm not a Christian,but I believe in helping those less fortunate. You seem like a truly wonderful person. I grew up poor,never knew were,but here's an idea for a $1 meal. Baked beans and hotdogs. That was our weekly Saturday meal. Best memories ever. A bag of dry beans,some maple syrup(I'm from Vermont) or molasses. Onions, mustard and one hotdog per person. Singing together,laughing, loving each other. Baked beans and hotdogs are love...Just saying.

We need to go back in time to what we did during WWWII rationing, Victory Gardens. Lately container gardens have become popular. I'm 88 and gone through a few hard times, was able to feed my family through God's grace. 🙌🕊

My husband passed away at age 29 from leukemia, so I was a young widowed mom and I raised 3 kiddos on hardly nothing, and these tuna patties was one of my families favorite meals. When my children were young, I always had leftover hot dog buns. The next day I would put chicken tenders in them for my children's lunch. You can make these tuna patties like meatballs and use your leftover hotdog buns that way, too. I had to learn the hard way to stretch my groceries when my husband lost his job. God helps us through these hard time.

Our favorite meal as kids growing up was Salmon Patties, fried potatoes and butter beans, then, the next day we would take the leftover salmon patties and made sandwiches for lunch the next day. Ms. Becky thanks for sharing this video, so, many of us grew-upon canned fish and,I still eat it till this day, it never gets old.love good old tuna salad to. God bless you and your family.

My mother was the queen of stretching. She had 10 kids all total 12 people to feed at one time. She had a garden and we raised chickens. She taught me a lot.

I understand my exhusband said he was divorcing me could not handle all the doctor and hospital bills that I would be having. I was diagnosed with MS and Fibromyalgia , and had to go into a wheelchair but come to find out he was having an affair with his first cousin I Made him pay for the divorce. He and first cousin will have to be the ones to account to the Lord not me.

We used to make a tuna loaf!!! Same exact idea but baked it in a meatloaf dish.. I guess those are what 4" by 8" and then sliced it just like a meat loaf and served as as you would a meatloaf.... It was kept in the fridge and snacked on cold!

So glad you're sharing this with the younger generation. I've definitely had times when I had to stretch that food! Back in a big recession in the early 70's, I was a bride. I would cook a roast beef on Sunday then make vegetable soup with the leftover for the next night and the next night...I could get 3 different meals out of one roasted chicken. Tuna was for our lunches, more bread than fish, but we made it. We ate so much bologna that I still will not eat it 50 years later. The recipe you just shared I used for a can of salmon. I would also make a salmon loaf that stretched for another night. Spaghetti is always a cheap meal and can be meatless when zucchini and fresh tomatoes are ready in the garden.

When Roast was on sale, I would stock up. I had the butcher/meat counter clerk ground up several roasts for hamburger. Several for a roast. Several I cut up for stew/soup meat. Oh for the days when a Roast was $0.99-1.49lb on sale! Roast beef - roast beef sandwiches or Slow Cooker Roast beef - shred leftover beef and make bbq beef sandwiches, add to chili or tacos.

I'm eating it right now because it sounded great, not because I'm poor. If you want another good "poor" food, check out mackerel soup. I add potatoes, baby corn and some ghost pepper sauce (just a tiny bit) to it, and it's awesome. Guests have been really impressed too. Like this, the core ingredient is a cheap can of fish. I spend more on vegetables for that, but it makes a huge pot that lasts me most of a week.

You asked us to share our recipes to stretch out money. My grandma made this when I was growing up (I'm 50 now) and I've made it quite often for my family because it's economical and nostalgic. You can make it to fit your family size for the night or more for leftovers that can be eaten on for days or frozen for later. Cabbage soup: 1 head of cabbage 1 lb of ground beef or ground turkey 1 big can of whole or diced tomatoes salt & pepper to taste The vegetables are suggestions, if you don't like or have some of them then don't add them: onion, celery, carrots, corn, green beans, fresh garlic, potatoes, squash, zucchini, peas (whatever is on sale) -cook your meat if you're using it, chop your cabbage and vegetables, add it all to a pot along with your can of tomatoes, then add enough water to cover everything. Cook until your vegetables are tender. My grandma and I would also make fried cornbread to eat along with it all.

@@grumpynerd my grandma on the other side used to make stuffed cabbage as well :) I've made it too but now I make it as a soup with ground beef (or ground turkey sometimes), cabbage, rice, 2 large cans of tomatoes, salt & pepper, and smoked paprika. Tastes just like stuffed cabbage without the time put into the prep of that wonderful and nostalgic dish :)

This reminds me of how my late mom always made the best of what we had on hand. She taught us to be frugal but even in doing so, we could eat WELL and be full!!! She made us very similar dishes from canned tuna, spam, vienna sausages, corned beef and lots of other foods that kept us well fed. This is something I'm sure many affluent people have no understanding of. I retired from an annual income of six figures and even now, I still make simple frugal dishes because they remind me of my late mom and dad and how we were taught to respect what we had. Your vids are down home and fun to watch! Thanx very much for your great vids and recipes!!

Hi! I like this recipe because in my country, we have a similar recipe: Cod fritters! Delicious! We add annatto oil, for color, and for added flavor we use "sofrito" (a mixture of minced garlic, onions, red peppers, cilantro), plus reconstituted dried cod fish bits. Mix, fry and enjoy!

I just made tuna “cakes”, mashed potatoes & peas with lemony iced tea for dinner last night. 😋 We use tuna, cubed bread, eggs, Worcestershire sauce, onion powder, chopped fresh parsley then fry it up the patties in EVOO & make a simple dill sauce for on top. It really hits the spot! I love your videos. Your curly hair is looking so pretty too. Thank you & God bless you, dear sister❤️

@@noway5266 I was actually thinking just the opposite, because I had never even heard of the word "fritters" outside of country cooking, and that was several decades ago, when I was a child and first heard it, so I guess it just depends on your own personal point of reference what you think of when you hear a particular word. Whatever word one chooses to use, they are good!

When I was a kid my mother would add a can of tuna to a box of Kraft Mac n Cheese (at the end) just after she stirred in the cheese powder with the butter and milk. It was far more filling. That, and a vegetable and I was a happy camper. It definitely cost next to nothing to make. I also prepared it for myself from time to time in a pinch when I was a little hungry. I used to like to take a slice of bread and butter and put the Kraft/Mac/Tuna/Cheese on the bread and butter fold it up and eat that. Good stuff! Take care. sincerely, Dean O. :-I

I still make these all the time. I think if we practice as if it is hard times we adjust and adapt easier when hard times do hit. Broth toast and milk toast are inexpensive, add a poached egg for protein. Fried rice goes a long way too. I'm 60 and my parents added eggs to many dishes to stretch them. My grandchildren's favorite is sauted veg, add a prepared package of ramen and cover with beaten eggs( I use 1 per person, up to 4/pack of noodles) reduce the heat, cover and cook until your eggs are set. Uses up left overs easily! I'm so glad to see someone doing this and giving good advice rather than fear mongering. Bless you.

@@michaelshadwick3487 That was sweet milk toast then my mom did a savory version with cream cheese and onion or cheddar cheese on the toast and the milk warmed. She loved soft boiled egg on hers I liked it without, as a child I was not an egg eater. I changed it to poached eggs when I became a mom. I tried broth with the savory version once when I was out of milk and that became a requested meal.

Hi Becky....years ago on a trip to Scandinavia I encountered tuna with CORN.......I was shocked at how delicious the combination is. As a result I've added both corn and finely chopped celery (stems and leaves) when I make tuna patties.This is fresh tasting and stretches your protein even further.

These are the things I grew up with but as a young man I was typically not encouraged to spend time in the kitchen. I found my love for cooking later in life and hard times pushed me back to these old recipes. Finding your channel has been a blessing.

I loved Clatas recipes. Many dont realize we are heading ing another great depression. My always said if you keep potatoes onion celery and carrots in your fridge you can make a wholesome filling meal or soup. When meat get scarce I chicken breast would make a good soup as well as any other meat. Small amounts of ground beef will make s good meal with some veggies. I made a soup when my kids were little (we didnt have a lot of money) with 1 lb ground beef onion celery carrots shredded and cabbage with a can of crushed tomatoes. Sometime I would add potatoes. I'd put a beef bullion cube in for added flavor.

I’ll be 40 in a few weeks, we’ve made these weekly in my home for 21 years. I say 21 years because that’s how old my oldest is. I’ve always saved money where I can, only shop sales. Every time ham and Boston butts are on sale I get two of each break them up and food save them. You cant beat 6 bucks for a 6 pounds of meat. Clara’s Kitchen is so lovely to watch.

I remember my grandma telling me they ate salmon pattes a lot during the depression because salmon USED to be cheap food.... I was so jealous I wasn't alive then...🤣🤣🤣

I remember when I lost my job, I had to go to the community food bank and the most common food item I would see was spaghetti 🍝 and spaghetti sauce. It really helped me because if you're wasting away from not eating it would at least give you some calories and make you look less skinny and it would last for a very long time. I imagine this food item is similar.

At my apartment building we get a food box every month and they usually give out rice, so that sounds really good to use with this! I live alone with just myself and my senior rescue girl cat Lucky. I'm pretty good at making things stretch and food lasting. I also know cooking like the back of my hand so it's easy for me to make something out of not that many ingredients! I also love your inspirational advice and how you put God into your cooking channel. I got saved in 1975 in the basement of my junior college dormitory and shortly after that I was baptized in a lake. I've had some struggles along the way and at that time I was in my twenties and now I'm in my upper 60s. I will be 67 this November. I believe that Jesus Christ is my personal Savior and that's what it's all about!

Please continue your recipes. One thing I am blessed with is finding old cookbooks at a thrift store especially the ones from town or school recipes. They are inexpensive. Also there are senior citizens group that love to share their recipes.

Start a vegetable garden. Kale comes in many varieties and grows year round. It's a supper food. Save and dry seeds from your plants for the next season. Tip...if it fruits above the ground, plant as the moon begins to grow into a full moon. If it grows underground like carrots, beets, etc plant as the full moon wanes. Get a Farmer's Almanac and learn how to survive. 💞

My great grandfather McCormick always planted by the moon. I remember mom telling stories about him when she was a little girl. He lived with them and he always did the garden, there were 11 of them so they had a big garden and grandma canned everything. I remember her sending me down to the coal cellar to get a jar of something for her. It was always full.

I agree. Kale is so nutritious. I have 3 plants that are 3 years old. They stay green all winter here in SC. The leaves are great in smoothies with blueberries, stevia, cinnamon, nutmeg and lemon juice and flax seed if you have it. I also add protein powder to make a quick meal for one.

I like to cook equal amounts of cabbage, potatoes and onions together with salt and pepper for a healthy low budget meal. My mom didn’t have much money so we ate this fairly often and I still make it and love it today. Sometimes I add eggs and have a rustic breakfast that’s cheap and filling. If you grow herbs, Rosemary is wonderful on this dish as well as thyme Cost would be close to a dollar per person in today’s economy.

Do you steam or boil? Sounds yummy. I put up 3 jars of Sauerkraut 2 days ago. I do as I get. Every little bit helps!! I have dandelion tea ready to jelly and plumb juice to make jelly. Just have to get the energy!! Lol.

We call this ‘bubble and squeak’ in the old East End of London, UK, you have it with your cooked ‘full English’ breakfast. It’s old school now- not many places do it anymore, but it was a way to use up yesterday’s left overs. My mum and granny used to do it for us. Nothing was ever wasted. God bless y’all.

We love tuna or salmon patties in our home, in fact I have the ingredients on my counter right now, just smashed my crackers. I personally prefer cornmeal but ran out. I felt proud of myself because your ingredients are the same as mine. We like to make a lot and just sit them in the fridge as a snack. Yummy even cold.

Hillbillies kept these recipes alive. My husbands grandmother never quit making these type meals. She would make spinach and eggs as a side dish with beans grown from her garden, corn bread, tomato, fried potatoes and a wedge of onion. Nothing better.

I just made these a couple of weeks ago. We are a big family and I bought a larger can of tuna and our daughters and I made a lot of them and they lasted a few days. After making patties,, we dipped them in bread crumbs and placed them on the pan.. We also cooked them in the oven so it would cook all at once. 😊 if I remember correctly, I baked them on a cookie sheet covered in tin foil at 400 for about 30 to 45 minutes. I really enjoyed this method and easier clean up 😊 Have enjoyed your channel for a couple of years now. I pray you are doing well and full of joy and peace from our Father. God bless you sister! 💖

I was also going to suggest dipping them in a beat egg and cracker crumbs. Cooked potato mashed up is also a good filler. That's how I make salmon patties. New here so I'll try this.

Not healthy in the least bit but cheap. I would caution anyone watching these recipes- extremely unhealthy - a heart attack on a plate and horrible for diabetes. You can have a tasty cheap meal without harming your health.

@@andrearheintgen8523 The ingredients can easily be altered according to individual health needs and even taste preferences, but this is a very healthy recipe for the average person. Much of what she uses or gave as suggestive options to use for flavor are simply that, options. She is very good at suggesting alternative ingredients for healthier versions whenever possible, just as she did in this video, but she leaves the choices up to the individual to make them. It is not necessary to eliminate EVERY source of fat from the diets of all people, because we do still need them, and the occasional "bad" fat added for flavor when used in an otherwise healthy diet is of no consequence for most.

I very much appreciate all of the variations you suggest with your recipes. In this recipe, I especially like your idea to use pickle juice if we don’t have lemon juice on hand, and I have never thought to use cornbread mix instead of bread crumbs in a recipe. Rice has always been a go to for stretching out the food. Not sure how well it would work for making the fritters, but mixing in some tuna and rice is pretty popular. Adding some corn to the rice and tuna is really tasty as well. In the rice and tuna bowl, creamed corn really smooths out the dish.

I would imagine you could do something equally tasty with tinned sardines which are even cheaper (here in the UK, at least). Tuna and pasta is another good recipe, fry up some chopped garlic until just light golden, add crumbled up tuna, then some stock (chicken or fish) chopped parsley, black pepper, (lemon zest and juice optional) then add you cooked pasta and toss all together and serve. I like to freeze the leftover liquid from pot roast or pots of beans, in quart zipper bags, and when I have two or three, use them for vegetable soup. It's quick, delicious and healthy. I also use canned chicken, and save that liquid in the freezer, and use that in my soup, dried beans, or to cook pasta. Basically I try not to throw anything away, and freeze leftovers before we get tired of them and they're a different dish next time.

I make a tuna cake: 1 can of tuna, undrained, 1 tub crushed saltines, 1 egg and seasoning of choice. Super cheap and easy. My 10 kids love them with Mac and cheese

Stretching groceries is a skill we can all pick up hints for. Learning to be resourceful was definitely a skill I had to learn raising my family.

Wow, this so reminds me of my mom's and mamaws' cooking. I've forgotten how to do so much of this, so thank you! We had tuna patties when I was little, but by the time I was a pre-teen and teen we were able to afford salmon patties. 😀

We called these Salmon Patties LOL. My mom just used tuna in place of the salmon. She used to make bbq with tuna too and we never knew it was tuna. We thought it was bbq. she squished the water out then rinsed it and mixed bbq sauce in it and heated it up and then put it on buns with slaw and all the bbq fixings. kids usually do not know its tuna.

Trying to find a way to use more canned meats and tuna is a nemesis! Working on ways to make it less tuna-y, if that makes sense. I'm gonna try this and see how it goes..... We may have a new recipe! 🙂

Back in the depression some people used to forage for their vegetables like dandelion greens. I remember my grandma cooking Poke Salad. When I was little I wished I had paid more attention. I bought a book on foraging I'm starting with dandelions greens. And they're full of vitamins and minerals. ( if you're on medication talk to your doctor before )

Yellow squash just spoiled with butter salt and pepper is so incredibly delicious, and SO simple to do. That would be a good vegetable to consider planting. Dill is a very good flavor for fish as well. Another thing that I do is I mix up flour with water and maybe a little milk and even a little lemon juice and stevia, you can use sugar if you want and make it thin like a crepe and cook it in olive oil or peanut oil or vegetable oil, and it comes out really really good, and you can sprinkle it with more stevia or sugar or maybe powdered sugar if you want it like a dessert, and it's very inexpensive to make and very filling, and the lemon juice gives it a nice zing. Not much though. . You can use any kind of flavoring in the flour if you want, it doesn't have to be lemon juice it can be just with egg a pinch of salt water and milk and even proportions I. Usually don't measure, I just eyeball the ingredients, but I make the flour mixture very thin like a crepe and if you wanted to make a dessert out of it you can buy a can of that apple pie filler of different flavors and use a little of that. The main thing is just to be creative in the flavorings you want. One of the things that a Chinese restaurant was the scallion pancakes with the dumpling sauce, but I have to see how to get the flour to taste just like that before cooking it. Love this channel! When you mentioned tartar sauce, I remembered that I have made a pretty good one of my own: the brand that has that beginning letters MW, not the regular mayonnaise. Take some dill relish, and stir in to taste. It's pretty close to the real thing.

I found a b.o.g.o. on a store brand of Old Bay style spice. Larger cans & cheaper than the "real stuff".. but I won't go that way again.

I’ve used the last of potato chips or corn chips in my fritters when there wasn’t anything else sour cream and onion potato chips go really well with tuna. Also think about lemon pepper spice. If you really don’t have any spices some places will sell spice by weight so you can buy just the tiniest amount you need to season your food and have it be really inexpensive.

Great idea! I forgot all about the fish counters in grocery stores will often have little containers of mixed spices that accompany fish well and they're typically free. God bless you and yours!

For filler, also consider using bland cereals, such as Corn Flakes or Special K, just coarsely crush them. Minced celery is an excellent add, as is chopped parsley. Throw together a tartar sauce or even cocktail sauce if you have the ingredients on hand. Dill is a good spice to add, fresh or dry.

A lot of fish and meat counters will give you a container of spice. Especially if they sell pre spiced/marinated options.

Mom used to make these, she's add finely chopped celery with the onions. She's make some tartar sauce and these went on toasted hamburger buns, YUM and pickles on the side, sometimes with a little side salad. I'd forgotten just how good these are! Thanks so much Becky!

Thankyou! I just love your channel! I was in a car accident in 1998, medically put on disability in 2001. Husband and I lost out home, we are in an RV now. In 2022, found out I have neck cancer… good lord. We will need to try a few container gardens. (All of our gardens and fruit plants, beautiful apple trees… all gone).

Canned mackerel is a good cheap alternative to use. I've always used my mom's recipe for salmon patties, whatever fish you choose, crackers, egg and seasoning of your choice. Fry them in oil and butter until nice and crisp.

I just made these Tuna Fritters and I have to say... I LOVE IT!! full of flavor filling and I used powdered garlic and onion since I didn't have fresh ones on hand this time.
