your mom is so cute and precious😭 in my country the government regulate the prices and certain basic items are subsidised. businesses cannot put a price tag anyhow they like. however, small local grocery stores tends to charge a little more to cover their transportation cost. but if businesses rise the price too much, we can make a complaint to the related government agency and they'll pay a visit to said store to check. if it's true, the store owner will have to pay a penalty and change their price tag.

Purslane being a very delicate plant, I don't recommend chopping the leaves no matter the size, even if cooked as a stew. I would chop the stems but not the leaves. I use it in savory salads like Fattoush with Sumac and Pomegranate molasses with toasted or fried Pita bread. Great video with your parents.
