Patra is a Gujarati Dish. It can be made either by steaming it or frying it. The recipe I am sharing is a very old and traditional known as Uchadela Patra. This is the tastiest patra variety. Ingredients:
For Patra Garam Masala:
2 tbsp Coriander Seeds
1 tbsp Black Pepper Corn
1 tbsp White Pepper Corn
5 Star Anise
5 Green Cardamom
3 Small Cinnamon Stick
1 tsp Cloves
1 tsp Sesame Seeds
For Patra Batter:
1/4 Cup Jaggery
1 Cup Hot Water
2 Cup Gram Flour
2 tbsp Sorghum Flour
2 tbsp Rice Flour
1 tbsp Groundnut Powder
1 tsp Sesame Seeds
1/4 tsp Fennel Seeds
1/2 tsp Carom Seeds
1/4 tsp Asafoetida
1/2 tsp Turmeric Powder
1 tsp Coriander Cumin Powder
1 tsp Red Chilly Powder
1 tsp Patra Masala
Salt to Taste
1/8 tsp Baking Soda
1 tsp Ginger Chilly Paste
1 tsp Garlic Paste
1 tbsp Curd
15-20 Smalls Colocasia Leaves
1-1/2 tbsp Tamarind Water
1 tbsp Oil
3-4 tbsp Oil to Cook it
For Tampering:
1 tsp Oil
1/4 tsp Mustard Seeds
1/2 tsp Sesame Seeds
2 Green Chillies
6-8 Curry Leaves
